BAKED WILD TURKEY

This is 1 of the many recipes that I have developed over my lifetime of outdoor life.

Number Of Ingredients 10

1 (8-10 pound) wild turkey
salt and pepper
4 stick butter
2 can(s) (13 3/4 oz.) chicken broth
1 onion, chopped
1 carrots, chopped
3 sprig(s) parsley
1 celery stalk, chopped
1 bay leaf
1 pinch thyme

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Salt and pepper turkey.
  • 3. Melt butter and add the remaining ingredients.
  • 4. Marinate turkey overnight.
  • 5. Cook in marinade in covered roaster.
  • 6. Cook about 20 minutes per pound.

Since we have avid hunters in our family. I will quite often prepare game. Once it's stuffed with apples and topped with a unique combination of sauces, this wild bird requires no basting and cooks up nice and moist.

Number Of Ingredients 15

1 wild turkey (10 to 15 pounds)
2 large apples, quartered
6 to 8 medium red potatoes, quartered
2 pound baby carrots
2 medium onions, sliced
2 cups water
1-1/2 teaspoons seasoned salt
1 teaspoon salt
1 teaspoon pepper
1/2 cup maple syrup
1/4 cup French salad dressing
1/4 cup barbecue sauce
2 tablespoons ketchup
2 tablespoons steak sauce
1 tablespoon lemon juice

Steps:

  • Preheat oven to 325°. Place turkey on a rack in a roasting pan; place apples in turkey cavity. Place potatoes, carrots and onions around turkey. Pour water over vegetables. Combine seasoned salt, salt and pepper; rub over turkey. Combine remaining ingredients; spoon over the turkey. , Cover and bake until a thermometer reads 170°, 3-1/2 hours, basting occasionally if desired. Turkey may be uncovered for the last 30 minutes for additional browning if desired.

An easy way to cook that wild turkey your mighty hunter brings home. From Texas Highways magazine posted in response to a recipe request. Cooking time is approximate.

2 eggs
salt and pepper
1 wild turkey breast
1 1/2 cups flour
oil (for deep frying)

Steps:

  • In a shallow bowl beat eggs, then add salt and pepper.
  • Tear strips of turkey off breastbone.
  • Dip turkey in eggs, then flour.
  • Bring oil to 375 degrees in a Dutch oven or large stock pot, making allowance for the volume of the turkey, and fry turkey on medium-high until browned.
  • Cover Dutch oven while frying to prevent splattering.

My husband, FIL, and son go wild turkey hunting. I never have liked the taste of it until my FIL gave me this recipe. My girls thought it was pork loin.

1 wild turkey breast half
8 ounces zesty Italian salad dressing
8 ounces white wine
1 small reynolds oven cooking bag
creole seasoning
lemon pepper seasoning
1/2 cup butter
2/3 cup olive oil

Steps:

  • Mix the dressing and wine.
  • Pour into a 1 gallon size zip-lock bag.
  • Add the turkey breast and marinate overnight, turning at least once.
  • Drain off the marinade & discard.
  • Sprinkle turkey breast with the seasonings.
  • Place in oven roasting bag.
  • Melt the butter in the olive oil and add to the turkey breast.
  • Place the roasting bag & turkey breast in a 9"x5" loaf pan.
  • Bake at 350 degrees for 1 1/2 hours.
