Steps:
- In a small saucepan, cook sugar, water and 2 pandan leaves until sugar dissolves. Discard the pandan leaves, set aside for later use.
- Scrub and clean 400g sweet potatoes under running water before steaming them over high heat until the flesh is tender (about 40 mins). Peel off skin to yield 300g of sweet potato flesh.
- Using an electric blender, finely blend sweet potatoes with the sugar syrup. Mix pureed potato with sifted tapioca flour, coconut milk and salt.
- Pour batter into the a 8 inch square greased pan and steam over boiling water for 30-35 minutes.
- Remove from the steamer and leave to cool for 2-3 hours before slicing into pieces.
- Steam grated white coconut with pinch of salt for 5 minutes. Then toss the sweet potato slices in the coconut and serve immediately. Recipe adapted from HungryGoWhere, originally shared by Tebbie Teoh

- Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.
- Wash and peel the sweet potatoes. Cut them into medium size pieces. Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil. Sprinkle moderately with oregano, and salt and pepper (to taste).
- Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until soft.

- Preheat the oven to 425 degrees F (220 degrees C). Line a glass baking dish with aluminum foil.
- Pierce sweet potatoes multiple times on each side with a fork. Rub with oil and place in the prepared baking dish.
- Bake in the preheated oven for 1 hour, turning once after 30 minutes. Remove from the oven and let rest for 5 minutes.
- Slice sweet potatoes in half. Make small slits in the flesh for brown sugar and butter to sink into. Place 1 tablespoon brown sugar on each half. Place 1 teaspoon butter on each half.

BAKED SWEET POTATOES
Sweet potatoes are in the same family as other potatoes but cooking them requires a different approach to get the fluffy interior and sweet caramelized flavor we all love. After testing several techniques-wrapping in foil, pricking and not pricking, using a roasting pan-we found the following method delivered on all fronts, with minimal effort. Pricking with a fork allows steam to release and the potato flesh to separate from the skin, something that didn't always happen otherwise. Baking the potatoes on a wire rack nested in a baking sheet also helped the potatoes cook more evenly (and made cleaning up much easier). Lastly, allowing the potatoes to rest in the turned-off oven for 30 minutes after baking allowed the flavors to develop even further, though you can skip this step if you are short on time.

- Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil, then set a wire rack inside the baking sheet.
- Prick each of the sweet potatoes 5 times with a fork and place on top of the prepared rack, keeping space between potatoes to allow heat to circulate. Bake the sweet potatoes until a paring knife can easily go through without resistance, about 1 hour. Turn the oven off and let the potatoes rest inside for 30 minutes more. Remove from the oven and cut each potato in half lengthwise. Season with salt and pepper and top with butter if using.

Great as a side for the holidays, or really anytime! A little fact: In 1543 DeSoto's Spanish explorers found SweetPotatoes growing in "Indian gardens" in what became Louisiana. - Cut top off garlic bulb and discard. Place garlic bulb, cut side up, in small baking dish. Drizzle with olive oil. Bake at 400*F. for 30 minutes or until garlic is really soft. Cool, remove garlic cloves. Use oil in baking dish to grease 1 1/2 quart baking dish.
- Cook sweet potatoes and white potatoes in boiling salted water 20 minutes or until potatoes are tender. Drain and combine potatoes with garlic cloves in large bowl. Mash until smooth. Add remaining ingredients, reserving 1/4 cup Parmesan cheese, blend.
- Spoon into prepared baking dish. Sprinkle with remaining 1/4 cup Parmesan cheese.
- Bake at 350*F. for 30 minutes, until golden on top. Enjoy!

BAKED SWEET POTATO
This is the BEST way to eat a sweet potato. We have baked sweet potatoes with our steaks instead of Idaho potatoes. It's a nice complement to chicken and beef - or any other meat that I can think of! This can also be made on the grill or tossed in the coals if you are camping!

Steps:
- Preheat oven to 400°F.
- Bake yams for 45 to 75 minutes (bigger yams take longer to cook).
- When they are done, the outside will have darkened and the inside will be soft.
- You may see liquid from the potato oozing out and charring.
- When the potato is sliced open, the inside of the skin will be charred black from the caramelizing sugar in the potato.
- This is a perfectly cooked potato.
- Mix the sugar and cinnamon together and set aside.
- To serve, slice a potato down the center.
- Add two Tbs of whipped butter, then sprinkle some cinnamon/sugar over the top.
