4 ounces cream cheese, room temperature
1/2 cup grated sharp cheddar
6 large jalapenos, halved and seeded
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. In a small bowl, mix together cream cheese and cheddar. Season with salt and pepper. With a small spoon, fill each jalapeno half with about 1 tablespoon cheese mixture. Place peppers on a parchment-lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet halfway through.

1/4 teaspoon ground cumin
2/3 cup shredded Monterey Jack cheese
1 teaspoon minced fresh cilantro
8 jalapeno peppers, halved lengthwise and seeded
1 large egg, lightly beaten
3/4 cup cornflake crumbs

Steps:

  • In a small bowl, beat cream cheese and cumin until smooth. Beat in Monterey Jack cheese and cilantro. Spoon into jalapeno halves. , Place egg and cornflake crumbs in separate shallow bowls. Dip filling side of jalapenos in egg, then coat with crumbs. , Place on a greased baking sheet with crumb side up. Bake at 350° for 25-30 minutes or until top is golden brown. Serve immediately.

24 medium fresh jalapeno peppers
1 package (8 ounces) cream cheese, softened
3 cups finely shredded cheddar cheese
1-1/2 teaspoons Worcestershire sauce
4 bacon strips, cooked and crumbled

Steps:

  • Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.

12 fresh green jalapeno peppers (2-1/2 to 3inches long) or 12 red jalapeno chiles (2-1/2 to 3-inches long)
4 ounces shredded cheddar cheese
1 (3 ounce) package cream cheese, softened
1/2 teaspoon dried Italian seasoning, crushed
2 teaspoons fresh minced garlic (optional)
2 eggs
1 tablespoon milk or 1 tablespoon half-and-half
2/3 cup fine dry breadcrumb
guacamole or sour cream, for garnish

Steps:

  • Cover a large baking sheet with foil; set aside.
  • Cut each pepper in half lengthwise; remove the seeds and membranes (I always were plastic gloves for this, as the seeds are VERY hot, do not touch your eyes!).
  • Stir together the cheddar cheese, cream cheese and Italian seasoning and fresh garlic in a medium mixing bowl.
  • Spoon some of the cheese mixture into each pepper half.
  • Beat together the eggs and milk in a small mixing bowl.
  • Place the bread crumbs in a shallow bowl.
  • Dip each pepper half into the egg mixture; and then roll in the crumbs to coat all sides.
  • Place pepper halves (filled side up), on a prepared baking sheet.
  • Bake at 325°F for 30 minutes, or until tender and heated through.
  • Serve with guacamole or sour cream.

1 pound pork sausage, hot

  • Roll out sausage with rolling pin, between two layers of plastic wrap. Remove plastic from sausage, and wrap a thin coating of sausage around each jalapeno.

10 large jalapeno peppers, with stems
1 (8 ounce) package Philadelphia Cream Cheese
3/4 cup shredded cheddar cheese
1 ounce hidden valley ranch dressing mix
1 (12 ounce) package bacon

Steps:

  • cut a slit in each jalapeno pepper so that you can open it up. Remove the entire contents of the inside of the pepper. Leaving some of the placenta and seeds will result in a hotter pepper, so how much you clean on the inside is totally up to your taste. I recommend using disposable latex gloves while doing this, because failure to do so may result in unintended pains later -- particularly if you are a male :).
  • Preheat oven to 375 degrees.
  • Soften the cream cheese in the microwave for about 20 seconds.
  • Place the cream cheese in a bowl.
  • Add the ranch dressing powder and the grated cheese to the bowl with the cream cheese. MIx well.
  • Fill the jalapenos with the creame/ranch/cheese mixture.
  • Trim any excess fat from the bacon, preferably with kitchen scissors.
  • Wrap all of the peppers with the bacon.
  • Cook at 375 degrees for about 40 minutes. Keep an eye on them, because depending on the fat in the bacon, thickness of the bacon and so on, your time will vary. This can also be put on a grill -- it will take far less time but will demand your constant attention.
  • Enjoy the best stuffed jalapeños you have ever had.

1/2 cup shredded cheddar cheese
1/4 cup light cream cheese, softened
1/4 cup salsa
3/4 cup fresh breadcrumb
2 tablespoons chopped fresh parsley
2 tablespoons melted butter
salt and pepper

Steps:

  • Preheat oven to 375 degrees.
  • Cut Jalapenos in half lengthwise .
  • Scrape out all of the seeds and veins and discard . (This is the HOT part of the pepper).
  • In a medium bowl, blend cheeses,salsa and 1/4 cup breadcrumbs with a fork.
  • Fill Jalapenos evenly . Place on a baking dish.

30 medium jalapeno peppers
1 (8 ounce) package cream cheese, softened
1 (6 ounce) can shrimp, drained
1 (6 ounce) can crabmeat, drained
2 teaspoons finely chopped onions
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1 cup buttermilk
1 egg, beaten
1 1/2 cups corn flakes, in crumbs
3/4 cup self-rising cornmeal mix
vegetable oil (for frying)

Steps:

  • Cut peppers in half and seed (use plastic gloves). Blanch peppers by covering with water in large saucepan.
  • Cover and bring to boil,boil 5 minutes.
  • Drain and rinse with cold water.
  • Drain on paper towels.
  • Combine cream cheese, shrimp, crab, onions, Worcestershire sauce, lemon juice and garlic powder in bowl. Beat until blended.
  • Transfer to quart size resealable bag.
  • Cut off 1 corner of bag and pipe mixture into each pepper half.
  • Place on baking sheet lined with wax paper and freeze about 1 hour or until filling is frozen.
  • Combine egg and buttermilk in small bowl.
  • In medium bowl, mix cornflake crumbs and cornmeal mix.
  • Dip each pepper in buttermilk mixture and roll in crumb mixture.
  • Return to baking sheet, cover and freeze 1 hour.
  • Heat oil to 350°F.
  • Deep fry peppers (about 6 at a time) 2 minutes or until golden brown.
  • Drain on paper towels.
  • Best served warm.
