BREAKFAST TAQUITOS
Easy Breakfast Taquitos have scrambled eggs, cheese and sausage links rolled and baked inside a corn tortilla. They are quick to make, and fun to eat!

Steps:
- Preheat oven to 425 degrees F.
- Warm sausages: Add sausage links to a large skillet over medium-high heat. Cook, turning occasionally, until warmed through. Remove to a plate, leaving any sausage grease in the pan.
- Scramble eggs: Crack eggs into a bowl and add a splash of water or milk. Whisk well with a fork and then add to the pan. Season with salt and pepper. Cook for a few minutes, tossing and scrambling as they cook. (If using spinach, add it to the pan about 2 minutes before the eggs are done cooking.) Remove from heat.
- Warm tortillas on a hot dry skillet or griddle for a few seconds until they are pliable.
- Assemble: Divide the scrambled eggs among the tortillas and top with shredded cheese. Place a sausage link on top. Roll up and place, seam side down, on a baking sheet lined with foil or parchment paper.
- Bake: Spray lightly with cooking spray and bake for 10-15 minutes or until golden brown. Serve with salsa for dipping.

CRISPY BAKED BREAKFAST TAQUITOS
An easy oven method creates a sheet pan full of wonderfully crispy Baked Breakfast Taquitos filled with eggs, sausage, cheese, and assorted veggies. Reheat them in the morning for a delicious, portable, grab-and-go breakfast.

Steps:
- Preheat oven to 400 degrees F. Generously coat a foil-lined, rimmed baking sheet with nonstick cooking spray.
- Cook the breakfast sausage in a 12-inch nonstick skillet until crumbled and completely cooked through. Transfer it to a double layer of paper towels to drain while you prepare the other ingredients.
- Wipe the skillet clean, coat it with nonstick cooking spray, and place it over MEDIUM heat. Add the bell pepper and cook, stirring for a couple of minutes, or until softened. Add the mushrooms and cook for another minute.
- Lower the heat to MEDIUM-LOW and add the whisked eggs. Cook, moving the eggs around with a wooden spoon until the eggs are just set up. Season to taste with salt and pepper and toss in the cilantro (if using). Remove the pan from the heat and add the cooked, crumbled sausage and 1 cup cheese. Stir to combine and set aside.
- Warm the entire stack of tortillas in the microwave for about 20 seconds just to soften them slightly.
- Lay a tortilla on a cutting board or other work surface and place a couple tablespoons of the egg and sausage filling down the center of the tortilla. Sprinkle with some of the remaining cheese. Roll the tortilla tightly and place seam side down on the prepared baking sheet. Repeat with the remaining tortillas and filling. Coat the tops of the taquitos with additional nonstick cooking spray.
- Bake for 8 minutes. Pull the baking sheet out of the oven and use tongs to flip each taquito over. Return to the oven for an additional 3 minutes or until nicely browned on both sides.

BAKED SAUSAGE AND CHEESE BREAKFAST TAQUITOS
Steps:
- Gather the ingredients.
- Preheat the oven to 425 F.
- Line a baking sheet with aluminum foil or parchment paper .
- Add the olive oil and breakfast sausage to a skillet, brown the sausage until almost completely cooked. Add the red and green bell peppers and onion along with salt. Allow them peppers and onions cook for a few minutes, until they are slightly softened, stirring frequently.
- Beat the eggs in a bowl. Add the taco seasoning and hot sauce to the eggs.
- Gently pour the beaten eggs over the sausage and pepper mixture while the pan is on medium heat. Cook until eggs are soft, stirring occasionally to prevent sticking. Make sure not to overcook them!
- Microwave the corn tortillas for about 30 seconds or until they are soft and pliable. Make sure the tortillas are fresh so they will not crack when you roll them.
- Divide the filling between the tortillas. Sprinkle each with an equal amount of cheese. Roll each tortilla tightly and place seam side down on the baking sheet.
- Spray each tortilla lightly with cooking spray and add a sprinkle of salt.
- Bake for 10 to 15 minutes or until golden brown. Allow them to cool slightly.
- Serve with salsa and sour cream.

BAKED SAUSAGE POTATOES AND CHEESE
Mmm...cheesy goodness. This is especially good on those cold days. I got this recipe from my mom and her best friend a couple of years ago and have been enjoying it ever since.

Steps:
- Preheat oven to 375°F.
- Put oil in skillet and place over medium heat until hot.
- Brown sausage on both sides.
- Place sausage in between layers of paper towels to get out as much of the grease as possible.
- Spray deep baking dish with Crisco and place sausage into it.
- Brown potatoes, (but do not fry until done) in the sausage grease left in skillet.
- You may need to add a bit more oil.
- Follow the same paper towel method as you did in step #3. This time with the potatoes.
- Place potatoes on top of sausage in deep baking dish.
- Bake at 375°F until potatoes are soft (about 45 minutes). Check often, as not to burn.
- Place a layer of sliced cheese over top when potatoes are soft.
- Put back in the oven until cheese is melted (about 5 minutes).
- Serve and enjoy.

These baked tortilla roll-ups tuck all the fixings of a breakfast burrito-eggs, cheddar, sausage, and salsa-into a deliciously crispy, compact, freeze-ahead format. To keep the crunch long after freezing, use the oven and not the microwave to reheat.

- Preheat oven to 425°F. Heat oil and sausage in a medium nonstick skillet over medium-high; cook, breaking up meat into bite-size pieces with the back of a spoon, until cooked through, 5 to 6 minutes.
- Add eggs; season with salt and pepper. Cook, stirring, until soft curds form, 30 seconds. Remove from heat; stir in cheese and salsa. Divide mixture among tortillas (about 1/3 cup each); roll up and place, seam-side down, on a baking sheet.
- Brush taquitos with oil and bake until shells are crisp and cheese is melted, 12 to 14 minutes.
