Yield 8 Servings

Number Of Ingredients 24

Salmon:
1 5-6 pound head-and tail-on salmon or arctic char, cleaned
10 cups kosher salt (from about one 48-ounce box), plus more
1 grapefruit, thinly sliced
2 lemons, thinly sliced
1/2 bunch dill
1/2 bunch tarragon
Beurre Blanc and assembly:
1 small shallot, finely chopped
1/2 cup dry white wine
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into pieces
2 tablespoons crème fraîche
1 teaspoon finely grated grapefruit zest
1 teaspoon fresh grapefruit juice
1 teaspoon finely grated lemon zest
3 teaspoons fresh lemon juice, divided
Kosher salt
1 cup fresh parsley leaves with tender stems
1/3 cup fresh dill leaves
1/3 cup fresh tarragon leaves
2 tablespoons chopped capers
2 teaspoons caraway seeds
Sourcing info:
Salmon will be closer to 5 pounds; arctic char closer to 6 pounds. Not all shops will have whole fish this large on hand; call ahead so they can order it.

Steps:

  • Salmon:
  • Place a rack in the center of oven and preheat to 400°. Season inside of salmon with salt. Stuff with one-third of grapefruit slices, lemon slices, dill sprigs, and tarragon sprigs.
  • Mix 10 cups salt and 1 1/2 cups water in a large bowl, adding more water as needed, until mixture is the texture of wet sand. Spread a thin layer of salt mixture on a rimmed baking sheet roughly the same shape and size as fish.
  • Top salt mixture with another third of grapefruit and lemon slices and dill and tarragon sprigs; set salmon on salt bed and top with remaining citrus and herbs. Pack remaining salt mixture over fish, leaving head and tail peeking out.
  • Roast salmon until just cooked through (poke a paring knife or metal skewer though the salt and into the flesh; it should feel warm to the touch when removed), 40-50 minutes.
  • Beurre Blanc and assembly:
  • While salmon is cooking, simmer shallot and wine in a small saucepan until only 2 tablespoons liquid remains, 8-10 minutes. Whisking constantly, add butter a piece at a time, incorporating completely before adding the next piece, to make a glossy, emulsified sauce.
  • Whisk crème fraîche, grapefruit zest, grapefruit juice, lemon zest, and 1 teaspoon lemon juice into sauce; season with salt. Reduce heat to low and keep sauce warm while you finish the dish.
  • Remove salmon from oven and using a knife or the edge of a fish spatula, crack salt crust and remove (it should come off in large pieces); let salmon sit 5 minutes before serving.
  • Meanwhile, toss parsley, dill, tarragon, capers, caraway seeds, and remaining 2 teaspoons lemon juice in a medium bowl; season herb salad with salt. Serve salmon with beurre blanc and herb salad.

SALMON BAKED WITH HERBS & CARAMELISED LEMONS

Salmon baked with herbs & caramelised lemons image

Create a refreshingly aromatic centrepiece with Gordon Ramsay's easy way of cooking salmon

Provided by Gordon Ramsay

Categories     Dinner

Time 1h

Number Of Ingredients 9

whole salmon (about 2kg), scaled, gutted and washed
3small lemons , thickly sliced
100ml olive oil
4-6 fresh bay leaves
few sprigs each fresh rosemary , thyme, basil, sage and parsley
2-3 lemongrass stalks, cut into large pieces
1head garlic , halved horizontally
1 tsp peppercorns , mixed or black
5-6 whole star anise

Steps:

  • Trim salmon tail and cut off the fins. Pat dry inside and out with kitchen paper. Score the skin of the fish on both sides with a sharp knife, at 2-3cm intervals. Rub all over with olive oil, salt and pepper. Lay three large pieces of foil over a large baking tray, overlapping the long edges. Heat oven to 190C/fan 170C/gas 5.
  • Heat a little oil in a non-stick frying pan, then fry lemon slices over a high heat for 2-3 mins until golden. Season; allow to cool slightly. Scatter a handful of herbs and lemongrass over foil, then sit salmon on top. Tuck caramelised lemon, herbs and garlic around and inside fish, splash over a little oil and scatter over salt, peppercorns and star anise.
  • Fold the foil around the fish to make a shallow tent, scrunching the edges well to seal. Cook in the centre of the oven for 30-35 mins, depending on the thickness of the salmon. Remove from the oven and rest the fish for at least 10 mins, still wrapped in foil.
  • Unwrap the fish and gently peel away the skin using a cutlery knife and discard. Use the handle of a spoon to scrape off any brown flesh on top of the pink flesh, then push the spoon head into the groove that runs along the length of the fillet, easing the flesh into two long strips. Push the spoon into the flesh where it joins the backbone, lifting it off the bone. Break the fish on the first side into 4 portions and lift onto serving plates. When the top half is served, pull off the backbone and head and serve the rest. Drain the juices into a small jug. Serve with caramelised lemons and a drizzle of the juices.

BAKED SALMON WITH HERBED MAYONNAISE

Baked Salmon With Herbed Mayonnaise image

I had baked salmon at a friend's house recently. (She is an Alaskan native and had some salmon she brought back from vacation. Yummy) She spread mayo and some seasonings on the fish then baked it. I had never heard of that before, but it was really good. I came up with my own twist using that idea. I made this last night and it was wonderful. Hope you enjoy!

EASY BAKED SALMON

Easy Baked Salmon image

This easy baked side of salmon gets cooked in a foil packet with lemon garlic butter and tender herbs to create a simple and delicious foolproof weeknight dinner.

Provided by Kalisa Marie Martin

Categories     Entree     Dinner

Time 33m

Yield 6

Number Of Ingredients 8

2 pounds whole salmon fillet, skinned
1 teaspoon salt
1/2 teaspoon pepper
4 tablespoons unsalted butter, melted and cooled
4 cloves garlic, grated or finely minced
1 1/2 teaspoon honey
1 1/2 teaspoon fresh lemon juice
2 tablespoons fresh herbs (basil, chives, or parsley) chopped

Steps:

  • Arrange rack, preheat the oven, and prepare the baking sheet: Place the rack in the middle of the oven. Preheat the oven to 375°F. Line a large-rimmed baking sheet with foil, being sure to leave several inches of overhang on both long ends to make your foil packet.
  • Prepare the salmon: While the oven preheats, remove the salmon from the fridge to come to temperature, 15-20 minutes. Place the salmon on the prepared pan and pat both sides dry with a paper towel. Feel the flesh for any bones and remove them with fish tweezers or your fingers.
  • Season the salmon: Season both sides of the salmon with salt and pepper.
  • Make the butter sauce and pour over salmon: In a small bowl, combine the melted butter, garlic, honey, and lemon juice. Fold up the edges of the foil to contain the liquid and pour the butter mixture evenly over the top of the salmon.
  • Seal the salmon with foil: Bring the two long sides of the foil together and then fold them down a few times to close the top of your packet. Then, tuck each end under to close the sides. If your piece of foil is not large enough, take a second sheet of foil and cover the salmon, pinching the foil to seal the edges.
  • Bake the salmon: If you're cooking farm-raised salmon, it should be done in 18-20 minutes, depending on the thickness. If you're using wild-caught salmon, check for doneness beginning at 10 minutes. If you open the packet and see the fish isn't finished cooking, it should be opaque on top and flake easily with a fork, close the foil packet back up, return it to the oven, and check again in another 2-3 minutes.
  • Broil the salmon: Carefully open the foil package to uncover the salmon completely, pushing the foil down and out of the way. Set the oven to broil on high. If you have an electric stove, return the salmon to the oven, still on the middle rack. Broil the salmon for 2-3 minutes. You'll see it turn just slightly golden with some charred spots but be sure not to burn the garlic. If you have a gas stove, you may want to reduce your broiling time to 1 minute or skip it all together.
  • Serve: Let the salmon rest for about 5 minutes. Garnish with chopped herbs. Transfer to a serving platter or serve directly from the pan!

Provided by Ina Garten Bio & Top Recipes

Time 47m

Yield 6 servings

Number Of Ingredients 9

1 (2- to 2 1/2-pound) skinless salmon fillet
Kosher salt and freshly ground black pepper
1/4 cup good olive oil
2 tablespoons freshly squeezed lemon juice
1/2 cup minced scallions, white and green parts (4 scallions)
1/2 cup minced fresh dill
1/2 cup minced fresh parsley
1/4 cup dry white wine
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • Place the salmon fillet in a glass, ceramic, or stainless-steel roasting dish and season it generously with salt and pepper. Whisk together the olive oil and lemon juice and drizzle the mixture evenly over the salmon. Let it stand at room temperature for 15 minutes.
  • In a small bowl, stir together the scallions, dill, and parsley. Scatter the herb mixture over the salmon fillet, turning it so that both sides are generously coated with the green herbs. Pour the wine around the fish fillet.
  • Roast the salmon for 10 to 12 minutes, until almost cooked in the center at the thickest part. The center will be firm with just a line of uncooked salmon in the very center. Cut the salmon crosswise into serving pieces and serve hot with lemon wedges.

  • In a small bowl, mix together olive oil, garlic, herbs, salt and pepper. Using a spoon or pastry brush, gently spread the herbed mixture on top of salmon. Bake until salmon is fork tender, about 12-15 minutes.
