1 cup chopped fresh dill
3 tablespoons olive oil
1 lemon, juiced
1 tablespoon honey
2 cloves garlic, finely minced, or more to taste
1 teaspoon ground coriander
salt and ground black pepper to taste
1 (2.5 pound) boneless salmon fillet

Steps:

  • Combine dill, olive oil, lemon juice, honey, garlic, coriander, salt, and pepper in a small bowl.
  • Rinse salmon fillet under running cold water and pat dry with paper towels. Lay salmon skin-side down on a large piece of plastic wrap. Spread dill mixture all over the top of the fish, wrap well with plastic wrap, and refrigerate for 30 minutes.
  • Preheat the oven to 425 degrees F (220 degrees C). Unwrap salmon and place skin-side down in a baking dish.
  • Bake in the preheated oven until salmon flakes easily with a fork, 12 to 15 minutes.

1 salmon filet (about 2 pounds, left whole)
3 cloves garlic (finely minced)
1/4 cup chopped parsley
1/2 cup chopped Parmesan cheese

Steps:

  • Preheat oven to 425º F. Line rimmed baking sheet with parchment paper or aluminum foil for easiest cleanup.
  • Place salmon, skin side down, onto lined baking sheet. Cover salmon with another piece of parchment paper. Bake salmon for 10 minutes. Remove from oven and remove top piece of parchment paper. Top with garlic, Parmesan and parsley mixture. Return to oven uncovered and allow to bake until the cheese has melted, the baked salmon flakes easily with a fork, and the salmon registers 135º F when checked with an internal thermometer probe, about 5 more minutes. The Parmesan cheese should have melted and lightly browned.
  • Allow to rest about 5 minutes and serve.

1.5-2 pound whole wild salmon fillet
1/4 cup plain breadcrumbs
1/4 cup parmesan cheese (grated)
2 cloves garlic, (minced)
1 tablespoon thyme and chives (finely chopped)
2 tablespoons butter (melted)
Salt and pepper

Steps:

  • Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with foil or parchment paper. Place the salmon fillet on the baking sheet.
  • In a small bowl, mix the bread crumbs, Parmesan cheese, garlic, and herbs together. Drizzle the melted butter over the top and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix with your hand to coat the breadcrumbs in butter.
  • Sprinkle the mixture over the top of the salmon fillet. Bake for 10-12 minutes, until the salmon, is cooked through and the crust is golden. If the crust doesn't brown, turn on the broiler for 1 minute, then remove. Serve warm.

50g butter

½ cup breadcrumbs

  • Method: Preheat oven to 220C / 430F. Season both sides of salmon with salt and pepper. Coat with breadcrumbs, lemon zest and 1/3 of chopped parsley. Lightly press the surface. Spray a little oil on top. Bake in the preheated oven for about 15 minutes. Meanwhile, prepare the sauce: Heat a pan and sauté bacon over medium-high heat for 3 minutes. Once bacon releases its oil, add onion. Fry until softened. Saute garlic in the middle of the pan. Pour in wine and cook for 1 minute. Pour in diced tomatoes. Bring it to boil. Stir in baby capers, ketchup and the remaining parsley. Stir to combine. Season with salt and pepper. Serve with yoghurt and your favourite salad.

4 (6- 7 oz each) skinless salmon fillets
3/4 cup panko bread crumbs
3/4 cup finely shredded parmesan
2 1/2 Tbsp chopped fresh parsley
3/4 tsp garlic powder
Salt (and freshly ground black pepper, to taste)
1 Tbsp olive oil
1 large egg
4 lemon slices

Steps:

  • Preheat oven to 425 degrees. Spray an oven safe wire cooling rack with non-stick cooking spray and set over a rimmed 18 by 13-inch baking sheet.
  • In a shallow dish toss together panko, parmesan, parsley, garlic powder, salt and pepper (I use about 3/4 tsp salt and 1/2 tsp pepper). Drizzle in olive oil and toss well to evenly coat mixture.
  • In a separate shallow dish beat the egg until yolk and white are well blended.
  • Working with one piece of salmon at a time dredge each side in egg, then transfer to panko mixture and coat and press both sides of salmon in panko mixture (also sprinkle panko mixture over top and press to help stick).
  • Transfer to prepared wire rack on baking sheet. Repeat process with remaining 3 portions (If you have extra breading sprinkle over fillets and gently press down to and even layer so they brown evenly).
  • Bake in preheated oven until salmon is barely cooked through, about 10 - 15 minutes (bake time will vary based on thickness of salmon).
  • Serve with lemon slices for spritzing over.

2 tbsp sea salt flakes
2 tsp coriander seeds, toasted and crushed
1.5kg side salmon, skin on
1kg new potatoes, large ones halved
150g butter, diced
70g pack brown shrimps
2 lemons, juiced
½ a small bunch flat-leaf parsley, roughly chopped
½ a bunch dill, roughly chopped
1 tbsp English mustard powder
crushed to make ½ tsp black peppercorns
1 lemon, zested
50g capers, drained and rinsed
150g soft white breadcrumns
3 tbsp extra-virgin olive oil

Steps:

  • Mix the sea salt with the coriander seeds and sprinkle all over the flesh of the salmon. Cover and chill for 1 hour, then rinse well under gently running cold water and pat dry with kitchen paper.
  • Put the new potatoes in a large pan of lightly salted cold water and bring to the boil, then simmer for 8-10 minutes or until tender to the point of a knife. Drain well.
  • Heat the oven to 200C/fan 180C/gas 6. Put the parsley, dill, mustard powder, peppercorns, lemon zest and a pinch of salt into a food processor, and whizz until finely chopped. Tip in the capers, breadcrumbs and oil, and pulse until combined.
  • Put the salmon, skin-side down, into a large roasting tin with the new potatoes all around, then pack the herby breadcrumbs all over the top of the fish. Dot the butter all over the potatoes and season, then roast in the oven for 25 minutes. Stir the brown shrimp into the potatoes and butter after 20 minutes, for the final 5 minutes of cooking. Remove from the oven, pour over the lemon juice and serve with roasted carrots and greens tossed in more of the buttery juices, if you like.

1 cup fresh bread crumbs
Kosher salt and freshly cracked black pepper

  • Meanwhile, prepare the garlic fries by cutting the potatoes into fries about 1.5cm thick. Drop them into a bowl of cold water as you cut them. Give them a soak to rinse away any excess starch then drain and pat dry with kitchen paper.
