These are a big favorite in our house. It is a healthy alternative to frying the potatoes. The outside of the potato gets crisp and the inside gets soft. I have used several different types of potatoes and have had great results with all of them although the cooking time will need to be varied with the creamer types.

6 -8 medium yukon gold potatoes
1/4 cup olive oil
1/2-1 teaspoon dried basil
1/2-1 teaspoon thyme
1/2-1 teaspoon oregano
salt & freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees.
  • Slice potatoes into 1" cubes and place on a baking sheet (preferrably with sides to avoid losing any).
  • Drizzle olive oil over the top of the potatoes.
  • Sprinkle salt, pepper, basil, thyme and oregano over the top of the potatoes and oil.
  • Using your hands mix the oil, spices and potatoes together until evenly coated.
  • Make sure that potatoes are in one layer on the pan.
  • Place in the oven and bake for 45 minutes.
  • At this point take a spatula and move them around in the pan.
  • Bake for an additional 15 to 20 minutes.
  • If desired, sprinkle a little more salt on them when they are first out of the oven.

6 small red potatoes
1/4 cup olive oil
1 1/2 teaspoons salt
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon onion powder

Steps:

  • Preheat the oven to 450ºF.
  • Clean and cut the potatoes into 1/2"-1" cubes.
  • In a large bowl, toss the potatoes with the oil and spices.
  • Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
  • Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy. Watch the potatoes closely while they are under the broiler so that they don't burn.
  • Serve immediately.

Fluffy on the inside, crispy on the outside, these baked potatoes are the kind you eat whole. This recipe uses the steam function, along with the probe, to quickly cook multiple potatoes to their optimal texture. After the potatoes are tender, the oven switches to dry heat to crisp the skin.Note: The initial baking time depends on the size of your potatoes. You can expect a medium, 8-ounce potato to take about 45 minutes to cook. A smaller, 5-ounce potato will take around 30 minutes; a larger, 12-ounce potato will take about 1 hour. This recipe uses a perforated pan, which is now available to order through Anova. If you don't have one, placing a wire rack over a sheet pan works as a substitute.

1.5 Tbsp of melted duck fat or olive oil

Steps:

  • In a medium bowl, whisk together the water and salt until the salt is dissolved.
  • Wash the potatoes and trim away any eyes. Use a fork to carefully poke the potatoes on all sides to allow steam to escape.
  • Add each potato, one at a time, to the brine, and roll to coat it in the water. Transfer to a perforated pan (see note).
  • Carefully insert the probe into the center of the largest potato.
  • Transfer to the oven, attach the probe, and cook until the probe reaches its target temperature, 30 minutes to 1 hour, depending on the size of the potatoes.
  • Remove the potatoes from the oven and brush on all sides with the melted duck fat.
  • Return to the oven, placing a second tray on the rack below to catch any drips. Cook until the skin is crisp, about 15 minutes after the stage begins.

  • First, preheat the grill or oven to 450ºF.

  • Peel the potatoes, rinse, pat dry and halve lengthwise. Use a melon baller to cut out a hole in the middle of each potato. Rinse the parsley, chop finely and mix with the softened butter, salt and pepper. Peel and press the garlic into the mixture. Mix well.

  • Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. 1 bunch chives (about 1-ounce)
1/2 cup sour cream
4 tablespoons unsalted butter
2 slices bacon, cooked crispy, and crumbled, optional garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the potatoes in a bowl with the oil, salt, and pepper until completely coated. Place on a baking sheet and bake until fork tender, about 45 minutes.
  • Meanwhile, bring a small pot of water to a boil and salt it generously. Fill a medium bowl with ice water. Put the chives in the boiling water and cook until bright green, about 30 seconds. Immediately, plunge into the ice water to set the color. Squeeze all the water out of the chives and give them a rough chop. Put into a blender with the sour cream. Pulse until you have a smooth green sauce and season with salt and pepper, to taste. Chill until ready to serve. (Or, thinly slice the chives and stir into the sour cream, season with salt and pepper, to taste.)
  • Cut the potatoes lengthwise and then across. Pinch and press the sides to open the potatoes. Divide the butter among the potatoes and serve with the sour cream. Garnish with crumbled bacon if desired.

  • Take 8 potatoes and wash them thoroughly. Boil until cooked, set aside and wait until they cool.
  • Now each potato needs to be pressed down with a spoon. They should crack slightly, but not fall apart.
  • Choose the pan in which you will bake. Pour olive oil into it. Cut the cloves of garlic into slices. They need to be evenly distributed along the bottom.
  • Put the potatoes in the pan with their smashed sides up. They should fit in the pan tightly. Sprinkle the potatoes with rosemary and coarse sea salt.

  • Preheat your oven to either 475 or to 375 degrees fahrenheit (I will explain later!). Place a metal pan in your oven while it preheats. If you have room, a good roasting pan is perfect.
  • Now start with the potatoes you like best. My two choices would be Russets (my go-to for most things because they taste more “potato-y” to me) or Yukon golds.
  • Drain your potatoes well and put them in a bowl. Add 2 tablespoons olive oil (or, if you have access and are feeling decadent, duck fat, goose fat or beef fat… any of these are an indulgence that’s totally worth it), 2 teaspoons of salt, and ½ teaspoon of black pepper.
  • Now, let me explain the two possible oven temps. Both ways work just fine. I like the higher temp for the shorter time. But the lower temp for the longer time works great too.
  • I recommend carefully shaking or gently stirring the potatoes every 10-15 minutes, for even browning. And, if you want to add minced, fresh herbs like sage, thyme, or rosemary, I recommend tossing them into the pan for the last 10 minutes, so you don’t risk burning them.
  • There should be some oil remaining in the pan when you remove it from the oven. Pour it off and discard. Check the potatoes for salt, pepper, and a further showering with fresh herbs (if using).
