Steps:
- Preheat oven to 375 degrees.
- In small bowl, gently stir blue cheese crumbles into mashed potatoes. Fill each pepper half with potato mixture.
- Wrap each with a slice of cooked bacon and place onto a parchment paper-lined baking sheet.
- Pop into oven and bake for 5-8 minutes until bacon crisps. Watch so that the filling doesn't ooze out.
- Remove to appetizers plates and serve with sriracha sauce for dipping.

- Heat oven to 450 degrees. Line a baking sheet with foil and place a metal rack on top.
- In medium bowl mix potatoes and cheese together. Halve jalapenos lengthwise and remove seeds and membrane. Fill jalapenos with potato mixture and wrap with one half bacon slice.
- Place peppers on rack and bake 20 minutes or until bacon is crispy.

- Set out sour cream to reach room temperature.
- Butter rectangular glass casserole dish.
- Melt butter and cheese together in microwave.
- chop 2 bunches of green onions.
- put Simply Shredded hash brown potatoes in glass casserole dish.
- combine room temp sour cream with melted butter and cheese and pour over potatoes.
- add chopped green onions, salt and pepper to taste.
- Toss potatoes and added ingredients with a fork until coated, leaving a rustic, not whipped look.
- bake in 350 degree oven for 30 minutes or until golden on top.
- if you are lucky enough for leftovers, makes great potato pancakes for breakfast.

Official Contest Entry: Simply Potatoes 5Fix. Appetizer but could be a side dish as well. At Thanksgiving we had our neighbors over to watch Cowboys game. Needed to come up with a last minute appetizer and had an extra bag of Simply Mashed Potatoes and some fresh ranch dressing on hand and simply improvised. They were all gone within 15 minutes. Can insert with fancy toothpicks for added presentation and ease of dipping and eating.

- Fold potatoes, goat cheese, green onions and basil together until nicely combined. Roll into balls about the size of a quarter. Roll the potato balls in the crushed Rice Krispy cereal until well coated. Place on baking sheet and spray with cooking oil spray nicely coating.
- Bake at 375 for 20 minutes.
- Can serve with a nice fresh ranch dressing as a dipping sauce.

- Place Simply Potatoes mashed potatoes in bowl. Add eggs and bread crumbs and mix together. Heat oil for frying. When oil is heated, take a heaping tablespoon of potatoes, shape into a ball and drop into oil. Fry until golden brown. Continue until all potato balls are made. With just a handful of ingredients and no messy stovetop frying, get ready to enjoy these crispy, caramelized potato pancake poppers. - Preheat the oven to 450 degrees F (230 degrees C). Very generously brush melted butter into the bottom and sides of 24 mini muffin cups. Place the tin(s) on a baking sheet and set aside until needed.
- Add cold water to a large bowl until 1/3 full. Grate potatoes into the cold water, then fill the bowl almost to the top with more cold water. Swish the potatoes around with your hands to rinse off the starch, then pour off most of the water and refill with more cold water. Continue this process until the water runs almost clear. Pour potatoes into a colander and let drain for a few minutes.
- Transfer grated potatoes to a clean kitchen towel. Wrap potatoes in the towel and squeeze over a bowl until no more liquid comes out.
- Transfer potatoes to a clean bowl and add garlic powder, salt, pepper, cayenne, and olive oil. Sprinkle flour over top, then add Parmigiano-Reggiano. Mix and toss gently with your hands until thoroughly combined and mixture feels damp.
- Grab potato mixture from the bottom of the bowl to get as much moisture as possible, and fill the prepared muffin cups. It's okay if the mixture comes up above the pan by 1/2 to 1 inch.
- Bake in the center of the preheated oven until golden brown on top, caramelized on the bottom, and crispy all over, 40 to 45 minutes.
- Remove from the oven and let sit in the pan for 5 minutes before flipping them over onto the baking sheet.

- In a large bowl, combine mashed sweet potatoes and pepper jack cheese. Mix well.
- Using wet hands, form into popper shape, like small footballs about 1.5 inches long. Wet hands often to reduce sticking.
- Dip poppers into beaten eggs, then roll in panko bread crumbs to coat. Place coated poppers on a large plate.
- Place poppers into the fridge to chill for 30 minutes.
- Heat oil in a deep, heavy pot over medium-high heat to 350 degrees F. Carefully drop poppers into the hot oil. Fry in batches until golden brown, about 3 to 4 minutes.

- Preheat the oven to 425 degrees, with a rack in the middle position. Put a rimmed baking sheet in the oven to preheat. Peel and grate the potatoes, and transfer to a large bowl. Cover with boiling water by two inches. Let stand for 10 minutes.
- Drain the potatoes in a colander and rinse thoroughly with cold water. Squeeze the potatoes to remove excess moisture, and transfer back to the large bowl. Add the flour, cornstarch, salt, pepper, and egg yolk and fold into the potatoes.
- Spread the panko on another rimmed baking sheet. With wet hands, pinch off tablespoons of the potato mixture, form into balls, and coat with the panko crumbs.
- Carefully remove the hot baking sheet from the oven and coat with 2 tablespoons of the olive oil. Quickly transfer the poppers to the baking sheet and drizzle with the remaining 2 tablespoons olive oil. Bake for about 30 minutes, flipping once, until golden brown and crispy. Serve with ketchup.
