BAKED POTATO CHIPS CHICKEN

Baked Potato Chips Chicken image

This recipe is one of my favorite recipes. What makes this recipe so yummy is the chips. This is a great recipe for gatherings with friends and family.

Provided by CountryBelle

Categories     Appetizers and Snacks     Meat and Poultry     Chicken

Time 50m

Yield 8

Number Of Ingredients 9

1 teaspoon butter
1 cup self-rising flour
1 tablespoon garlic powder
2 tablespoons meat tenderizer
1 tablespoon salt
1 tablespoon ground black pepper
3 cups crushed potato chips (such as Lay's®)
½ cup olive oil
8 chicken tenders

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish with butter.
  • In a bowl, stir together the self-rising flour, garlic powder, meat tenderizer, salt, and pepper. In a separate bowl, place the crushed potato chips. Pour the olive oil into a third bowl.
  • Rinse the chicken tenders under cold water. Working one at a time, dip a chicken tender into olive oil, then into the seasoned flour mixture, then back into the olive oil, then into the crushed potato chips. Lay the coated chicken tender into the prepared baking dish. Repeat with all the other pieces of chicken. Sprinkle about 1 tablespoon of the seasoned flour onto the chicken pieces, then sprinkle the chicken with remaining potato chips.
  • Place the baking dish onto the middle rack of preheated oven, and bake until the chicken is no longer pink inside, the juices run clear, and the coating is golden brown, about 30 minutes.

POTATO CHIPS

Make your own potato chips using your microwave. A tasty and easy alternative to store-bought potato chips (not to mention economical)! A mandoline would make slicing the potato into paper thin slices a breeze.

Provided by Jessica

Categories     Appetizers and Snacks     Snacks     Snack Chip Recipes     Potato Chip Recipes

Time 35m

Yield 4

Number Of Ingredients 3

1 tablespoon vegetable oil
1 potato, sliced paper thin (peel optional)
½ teaspoon salt, or to taste

Steps:

  • Pour the vegetable oil into a plastic bag (a produce bag works well). Add the potato slices, and shake to coat.
  • Coat a large dinner plate lightly with oil or cooking spray. Arrange potato slices in a single layer on the dish.
  • Cook in the microwave for 3 to 5 minutes, or until lightly browned (if not browned, they will not become crisp). Times will vary depending on the power of your microwave. Remove chips from plate, and toss with salt (or other seasonings). Let cool. Repeat process with the remaining potato slices. You will not need to keep oiling the plate.

OVEN-ROASTED CHIPS

Oven-roasted chips image

Try these oven-roasted chips, far less fatty than their fried cousins

Provided by Jo Pratt

Categories     Dinner, Lunch, Supper, Vegetable

Time 1h

Number Of Ingredients 4

6 large floury potatoes, such as Maris Piper, King Edward, Desirée (about 1.6kg)
2 tbsp olive oil
1 tsp celery salt
sea salt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
  • Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
  • Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

HOMEMADE POTATO CHIPS

Homemade Potato Chips image

Making homemade potato chips is healthy and easy, especially when they're baked in the oven! You'll need potatoes, oil, and salt, plus any other seasoning you want.

Provided by Elizabeth Lindemann

Categories     Snacks

Time 25m

Number Of Ingredients 4

2 cups thinly sliced potatoes (any kind will work (about 2 medium sized potatoes))
1 tablespoon extra-virgin olive oil (or other oil)
1 teaspoon kosher salt
other spices, such as black pepper, paprika, garlic powder, chili powder, etc. (optional)

Steps:

  • Preheat your GAS oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • In a large bowl, mix together the potato slices (2 cups) and olive oil (1 tablespoon). Mix well so every surface of every slice of potato is covered evenly- you may want to use your hands for this, since the sliced potatoes may stick together.
  • Place the sliced potatoes on the prepared baking sheet, making sure they don't overlap (but they can touch a little on the edges). Sprinkle them evenly with the kosher salt (1 teaspoon) and any other spices you want to use. Bake in the top half of the oven for 15-20 minutes, until golden brown. Turn OFF the oven and allow to sit in oven while it cools off 15-30 minutes (ONLY do this with a gas oven. See notes for electric. This is optional if you're in a hurry, but highly recommended, as it will make the potatoes crispier. Keep an eye on them though- the residual heat can quickly burn them if you aren't careful!).
  • Serve potato chips plain or with your favorite dipping sauce.

  • Preheat the oven to 350°F (180°C). Adjust the oven racks to the centermost positions. Line 2 baking sheets with parchment paper.
  • Thinly slice the potatoes as evenly as possible using a mandoline or handheld slicer. You want the slices to be between 1/8 and 1/16 inch thick. Thoroughly rinse the potato slices under cold running water and pat them completely dry. (Rinsing the potato slices gets rid of any excess starch and makes the chips crisper.)
  • In a large bowl, toss the potato slices with the rosemary, olive oil, and salt. Arrange the potato slices in a single layer on the prepared baking sheets, carefully spacing them so they don’t overlap.
  • Bake the potato slices on the centermost oven racks, switching the baking sheets once, until the slices turn crisp and golden. This should take 30 to 45 minutes, depending on the exact thickness of your potato slices. You’ll need to keep a careful eye on the chips during the final minutes as they tend to go from not done yet to brown and crisp in seconds. The chips may not bake at the exact same rate, so transfer any chips that are ready to a serving bowl, and bake the ones that are not yet crisp for another couple minutes more. (Kindly note, for an evenly crisp potato chip, the entire slice has to brown; any area that is still lighter in color will be slightly soft when warm and became chewy when cooled.)
