1/2 pound lean ground beef (90% lean)
1/2 pound Italian turkey sausage links, casings removed
1/2 cup chopped sweet onion
4 cans (8 ounces each) no-salt-added tomato sauce
3 ounces sliced turkey pepperoni
1 tablespoon sugar
2 teaspoons minced fresh parsley or 1/2 teaspoon dried parsley flakes
2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
9 ounces uncooked whole wheat spaghetti
3 tablespoons grated Parmesan cheese

Steps:

  • In a large nonstick skillet, cook and crumble beef and sausage with onion over medium-high heat until no longer pink, 5-7 minutes. Stir in tomato sauce, pepperoni, sugar and herbs; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 20-25 minutes., Meanwhile, in a 6-qt. stockpot, cook spaghetti according to package directions; drain and return to pot. Toss with sauce. Sprinkle with cheese.

1 pound ground beef
½ cup milk
1 egg
1 (26 ounce) jar pasta sauce
1 (16 ounce) can diced Italian-style tomatoes
½ teaspoon garlic powder
½ teaspoon dried oregano
2 ounces sliced pepperoni, divided
1 (8 ounce) package shredded Italian cheese blend
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 12 minutes. Drain water and transfer spaghetti to the prepared baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Whisk milk and egg together in a bowl; pour over spaghetti. Add pasta sauce, diced tomatoes, garlic powder, and oregano to spaghetti and mix well.
  • Spread ground beef over spaghetti mixture and top with 1/2 of the pepperoni. Sprinkle Italian cheese blend over pepperoni and top with the remaining pepperoni and Parmesan cheese.
  • Bake in the preheated oven until cheese is browned and bubbling, about 30 minutes.

1 lb bulk Italian pork sausage
2 jars (14 oz each) pizza sauce
1 package (6 oz) diced pepperoni
1 cup ricotta cheese
1/3 cup shredded Parmesan cheese
2 eggs, beaten
2 cups shredded mozzarella cheese (8 oz)
Fresh basil, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray. In Dutch oven, cook and drain pasta as directed on package, using minimum cook time. Return spaghetti to Dutch oven.
  • Meanwhile, in 10-inch skillet, cook sausage over medium heat until no longer pink; drain. In Dutch oven, toss spaghetti, sausage, pizza sauce and pepperoni.
  • In medium bowl, mix ricotta cheese, Parmesan cheese and eggs. Spoon half of spaghetti mixture into baking dish. Dollop with ricotta mixture; spread evenly over top. Sprinkle with 1 cup of the mozzarella cheese. Top with remaining spaghetti mixture. Sprinkle with remaining 1 cup mozzarella cheese.
  • Bake uncovered 30 to 35 minutes or until bubbly. Garnish with basil.

4 garlic cloves (crushed)
2 tsp dried oregano
400 g (14 oz) tomato puree ((alternatively use chopped tomatoes and a tablespoon of tomato paste) )
handful fresh basil leaves and stalks
pinch of sugar
salt and pepper (to taste )
500 g (1lb) Fussili pasta ((cooked + reserve 1 cup of cooking water) )
100 g (3.5oz) pepperoni/salami
1-2 cups grated/shredded mozzarella cheese
handful fresh basil leaves (chopped)

Steps:

  • Pre-heat the oven to 200ºC/400ºF.
  • To make the sauce, sweat the onions, garlic and oregano in a few tablespoons of olive oil until soft and translucent.
  • Add the tomatoes, basil (I use a medium bunch that I can remove from the sauce once cooked) and seasoning and allow to simmer for 5 minutes until slightly reduced. Adjust seasoning if necessary.
  • Slice 3/4 of the pepperoni/salami (reserving a few slices for presentation).
  • Add the cooked pasta (and stir in some of the reserved pasta cooking water). Add the sliced salami to the pasta with the sliced basil.
  • Transfer half of the pasta to an oven-proof dish, add half of the cheese then the remainder of the pasta and cheese. Top with the rest of the pepperoni/salami and place in the oven to bake for 10 minutes or until the cheese has melted.
  • Remove from the oven, top with more basil and serve.

  • Boil noodles for amount of time specified on package directions. About 3 c of spaghetti sauce, jar or homemade, with or without meat
About 6 oz mozzarella cheese, shredded

  • 1. Preheat oven to 350 degrees F. Lightly mist the inside of a 13 x 9 baking dish with cooking spray. Set aside.
  • 2. Cook pasta as directed on package. Drain.

2 packed cups cooked spaghetti squash (from a 2.2 lb spaghetti squash)
1 large egg
3/4 cup finely shredded part-skim mozzarella cheese
1/4 cup shredded Parmesan cheese (not grated)
1 teaspoon minced garlic
1 teaspoon dried oregano
1/3 cup tomato-basil marinara sauce (or pizza sauce)
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • To quickly cook the spaghetti squash pierce it all over with a knife and microwave 5 minutes. Then continue to cook in 2 minute increments until the skin gives when pressed.
  • Cut it open, remove the seeds and scrape the squash out with a fork.
  • Place the cooked spaghetti squash in a clean cheesecloth or dish cloth and squeeze all the water out REALLY well.
  • Preheat the oven to 375F. Line 2 sheet pans with parchment paper and spray with oil.
  • In a medium bowl, mix the spaghetti squash with the egg, mozzarella, Parmesan, oregano and garlic powder.
  • Make 4 7-inch rounds on the prepared pan patting down so they are very thin, the thinner the crisper they will be.
  • Spray the crust lightly with olive oil spray and bake for 15 minutes, until golden then carefully flip with a spatula. Bake 5 to 7 minutes more, until crisp.

2 small onions, chopped
1 small green bell pepper, chopped
2/3 pound sliced button mushrooms
2 tablespoons olive oil
6 to 8 cloves garlic, chopped or minced
3 tablespoons steak sauce
2 pounds ground beef
3 tablespoons oregano
Freshly ground black pepper
1 teaspoon salt
1 (14 ounce) can tomato sauce
1 (2 1/2 ounce) can tomato paste
2 (14 ounce) cans diced tomatoes (Italian style preferred, not required)
2/3 cup Burgundy wine
1 pinch sugar
1 pound package spaghetti, cooked to al dente
1 pound sharp cheddar, sliced thickly
1 pound mozzarella, thickly sliced
1/2 cup freshly grated Parmesan
1 large stick pepperoni, cut into 1/4-inch slices

Steps:

  • Saute onions, bell peppers and mushrooms in olive oil until tender. Add garlic about halfway through saute. Work the steak sauce through the raw ground beef. Remove vegetables from pan and set aside. Add ground beef to the pan and brown beef with 1/2 tablespoon of oregano, black pepper, and 1/2-teaspoon salt. Drain the fat from the pan. Add the vegetables back to the pan with the beef. Add tomato sauce, tomato paste and 1 1/2 cans diced tomatoes. (These may or may not be needed, the recipe is somewhat imprecise).
  • Gradually add the remaining oregano and the wine, stirring occasionally. Simmer for 25 minutes. Add pinch of sugar. Add cooked spaghetti noodles and mix thoroughly. Pour 1/2 of the spaghetti mixture into a greased baking pan. Top with sliced cheddar cheese. Add remaining spaghetti mixture and top with mozzarella and Parmesan. If the pepperoni is low fat, it can be added on top of the cheese at this time. If not, it should be cooked in the microwave for 2 minutes, on a paper towel, until the grease runs out, then added 5 minutes before the spaghetti is ready to come out of the oven. Bake 20 minutes at 375 degrees F.
