Time 55m

Yield 6 servings

Number Of Ingredients 5

1/3 cup apple juice
1/3 cup firmly packed dark brown sugar
3 tablespoons unsalted butter
3 firm Bosc pears, peeled, halved, cored (about 1 pound)
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange the pears cut side up in an 8-inch square glass baking dish. Whisk the apple juice and sugar in a small heavy saucepan over medium-high heat until the sugar dissolves. Whisk in the butter. Pour the sauce over the pears. Bake until the pears are crisp-tender and beginning to brown, basting occasionally with the juices, about 35 minutes.
  • Spoon the pears onto plates. Top with ice cream. Drizzle with any juices and serve.
  • The pears can also be served frozen. To do so, cool the pears, then place them in the freezer until frozen solid, about 8 hours.

BAKED PEARS WITH BROWN SUGAR AND BUTTER

Baked Pears with Brown Sugar and Butter image

The easiest baked pears recipe that makes the most delicious pears that you can drizzle with the caramel that's made from pear juices and sugar and serve them with ice cream, yogurt or oatmeal.

Provided by Marina | Let the Baking Begin

Categories     Dessert

Time 1h30m

Number Of Ingredients 8

4 medium or large pears (Bosc, Anjou or any other firmer variety suited for baking)
1/4 cup light brown sugar
1/4 teaspoon cinnamon ((optional))
1/8 teaspoon nutmeg ((optional))
1/2 lemon, juice only
2 teaspoons unsalted butter, (cut into 1/4" cubes)
1/8 teaspoon kosher salt
1/2 teaspoon vanilla extract

Steps:

  • Prep: Preheat oven to 400F. Line a 10"x7" or a 9"x9" baking dish with parchment paper if you prefer easier cleanup, or spray it with nonstick spray. If doubling the recipe use a 9"x13" baking dish or any other rimmed baking dish that will fit pears snugly to each other (see Note 1 at the bottom).
  • Peel & Core: If using a firm pear variety like Bosc, peel them. Remove the core with a melon baller or a small spoon. Leave the stems on for better visual appeal. If you're using softer pears like Anjou, keep the skin on to help them keep the shape as they bake.
  • Add toppings: Set the pears cut side up inside the pan. Drizzle with lemon juice to prevent browning. Sprinkle with brown sugar mixed with nutmeg and cinnamon (if using). Arrange the cubed pieces of butter on top of the pears. Drizzle with vanilla extract.
  • Bake for 30 minutes cut side up. Turn the pears cut side down. Spoon the caramel over the tops to prevent browning. Bake for another 20-50 minutes or until the pears are soft, and the caramel is thickened. The pears will shrink consierably if baked until the caramel is very thick.Bosc pears will take the longest to achieve the candied translucent look and caramelized taste. Other more delicate pear varieties will take less time to soften (Note 2 & 3).
  • Serve warm with vanilla ice cream, yogurt, sour cream, or a sprinkle of roasted walnuts or sliced almonds. Spoon the caramel over the pears.

Categories     Dessert

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 10

1/3 cup brandy (or apple cider)
1/2 cup raisins, golden and regular
1/4 cup crystallized ginger
1 tablespoon lemon juice
1/2 cup water
3/4 cup light brown sugar
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter
6 bosc pears, peeled, cut in half and cored

Steps:

  • Place first five ingredients in a small saucepot. Heat until warmed through, swirl the pan to coat the dried fruit, and set aside to soak.
  • Combine the brown sugar, cinnamon and nutmeg in a medium bowl. Using your fingers, crumble the butter into the mixture until it forms a slightly moist crumb topping.
  • Fill each pear with some of the mixture.
  • Place the pears in a 9-by-13-inch baking dish; pour the brandy mixture evenly over the pears. Cover with foil and bake for 30 minutes at 375°F
  • Uncover, gently flip the pears upside down-it's fine if some of the mixture falls out of the center. Bake for an additional 30 minutes. Transfer the pears to serving bowls; spoon the juices and fruit over.
  • For added flair, serve each pear with a scoop of vanilla frozen yogurt or sprinkle with lime zest!

BROWN SUGAR PEAR BUTTER

Brown Sugar Pear Butter image

Use perfectly ripe golden Bartlett pears for this recipe, not green ones. From Learn To Preserve...here: http://www.learntopreserve.com/recipes/2011/10/16/brown-sugarpear-butter.html

Provided by gailanng

Categories     Sauces

Time 1h45m

Yield 3 1/2 pints

Number Of Ingredients 8

3 lbs ripe bartlett pears (no brown spots or bruises) or 5 large bartlett pears (no brown spots or bruises)
1/4 cup water
1 -2 cup brown sugar (amount depends on cup yield, see step 8)
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1/2 vanilla bean (or 1/2 tsp vanilla extract if you don't have a vanilla bean)

Steps:

  • Note: Prepare canning jars before starting your preserving project.
  • Wash, then quarter and core pears, placing them in a heavy-bottom preserving pan as you work.
  • Add 1/4 cup water. Do not add more liquid, the pears will create liquid as they cook!
  • Bring to a simmer over low heat, then cover tightly with a lid to keep heat and moisture inches.
  • Simmer for approximately 20 minutes or until pears have softened, then remove pan from heat.
  • Mash pears with a potato masher until they are mushy (approximately 15-30 seconds.).
  • Place food mill over a bowl, then scoop pear mush into the food mill. Crank away until all that remains in the food mill is a small amount of pear skins/peels. Discard or compost the skins.
  • Measure the pear puree back into the preserving pan, keeping track of the amount of pear puree you end up with because you'll want to add half that much brown sugar to the pear puree mixture. (For example, for 2 cups of pear puree, you'll add 1 cup of brown sugar.).
  • If using a vanilla bean, add it now, then add the remaining spices into the pear puree mixture. Stir well to combine. (Note: If using vanilla extract instead of a vanilla bean, add it at the end of the cooking process, when you would normally be removing the vanilla bean. If you add the vanilla extract before cooking, much of the vanilla flavor will be diminished.
  • Cook approximately one hour over low heat, simmering constantly. It will be more of a bubble than a simmer, because of the thickening nature of the pear butter.
  • Once desired thickness has been achieved, remove the preserving pan from the heat and, if using the vanilla bean, remove it and split the bean down the middle with a sharp knife. Using the edge of the knife, scrape the tiny seeds back into the pear butter, and stir well. (Note: If using vanilla extract, add at this point.).
  • Using a wide-mouth funnel, spoon pear butter immediately into hot sterilized jars, leaving 1/4" headspace.
  • Look for any air bubbles in the jars and if you see any, use a chopstick or plastic knife to pop them before wiping rims clean.
  • At this point you can either cover jars with tight-fitting lids (and store in the refrigerator for up to 3 months or in the freezer for up to 6 months) or you can process by following these steps:.
  • For Canning Process:.
  • Place a sealing lid on the jar, screw on a band until finger-tight then wipe jar rims spotlessly clean with a dry paper towel.
  • Process for 10 minutes in a Boiling Water Bath. (If needed, add extra hot water to be sure jars are completely submerged before covering Boling Water Bath Canner with the lid.).
  • Remove jars with a jar-lifter and place on a towel on the counter in a draft-free place. Let rest for 24 hours, then check for proper seal before storing.
  • If jars lids seal, store them in a cool, dark place for up to one year.
  • Note: Check lids for a proper seal by pressing the middle of the lid with a finger or thumb. If the lid stays down, it is sealed and will easily keep for up to one year in a cool dark place. If the lid springs up when you release your finger, the lid is unsealed. Place unsealed jars in your refrigerator and eat within 3 months, or within one month after opening.

After picking an abundant crop of pears, I was looking for new ways to enjoy them. A friend suggested warming them with butter and brown sugar. This tasty recipe was the result!
