Steps:
- Cut the aubergines into chunky cubes, sprinkle them with some salt and let them sit for 20 minutes. Dry them off with kitchen paper, pressing lightly.
- Saute: Peel the garlic cloves, smash them slightly but leave them whole. Heat the olive oil in a wide non-stick pan and add the garlic cloves. Turn the heat to low and fry the garlic, stirring often, until it starts to sizzle and smell. Don't let it burn.
- Add the aubergines, stir to coat them in oil, and cook on medium heat until translucent and soft.
- Simmer: Add the chopped tomatoes, herbs, and stock. Bring everything to a boil, cover the pan leaving a crack open and let cook for about 20 minutes until the liquid has evaporated and the aubergines are very soft. If there is too much liquid left in the pan by the time the aubergines are soft, just take away the lid and let the sauce bubble for a little while longer.
- Cook pasta: While the sauce is cooking, start cooking the spaghetti.
- Mix: Mash the aubergines with a fork, add the sliced basil leaves, season to taste, and mix with the spaghetti. Serve with some grated Parmesan if desired.

BAKED PASTA WITH AUBERGINES (EGGPLANTS)
Also known as Pasticcio di Maccheroni con le Melanzane, based on Diane Seed's recipe from her book, The Top One Hundred Pasta Sauces. This casserole is a bit of work, but definitely worth it!

Steps:
- Slice off both ends from the aubergines and discard.
- Slice the aubergines thinly.
- Arrange the slices in layers on a cutting board, sprinkling each layer with salt.
- Place the cutting board on a draining board, raised and supported on one side so that any liquid resulting from the purging process will drain into the sink. Then cover the slices of aubergine with a heavy weight (e.g., a large saucepan full of water) and leave for a couple of hours.
- During this time a somewhat bitter liquid will drain from the aubergines -- this is the purging process, as it's referred to in Italy.
- After 2 hours rinse the slices and pat dry. Lightly flour the slices to prevent them from absorbing too much oil when they are fried.
- While the aubergines are 'purging' prepare the tomato sauce.
- Heat the oil in a frypan and gently fry the chopped onion and garlic until softened.
- Add the tomatoes with their liquid, sugar, salt, and freshly ground pepper to taste and cook on high, uncovered, for about 20 minutes, stirring frequently.
- When the sauce is reduced and thick, check the seasoning.
- Using a blender or food processor, puree the sauce.
- Start the water boiling for the pasta in a large pot.
- While the water is heating, fry the aubergine slices in hot olive oil, using plenty of oil and frying only a few slices at a time. Do not let the slices become too crisp. Drain each batch on paper towels and keep warm.
- Add salt and a few drops of oil (helps prevent the pasta from sticking together) to the boiling water and cook the pasta. Cook the pasta for only half the time stated in the directions as it will continue cooking during the baking process.
- Drain the pasta, toss with some butter, and add the tomato sauce, mixing well.
- Butter a deep ovenproof serving dish and spread a thin layer of pasta on the bottom.
- Cover this with a layer of the aubergine slices, and cover these slices with thin slices of mozzarella.
- Repeat these layers until you have used up all the ingredients, ending with a final layer of mozzarella.
- Dot the top with butter and bake at 425 degrees F for 20 minutes until melted and golden brown.

Steps:
- Heat the oil in a large non-stick pan, add the onions, cover and cook for 5 mins. Remove the lid and cook for 5 mins more, stirring frequently until softened. Add the garlic, chilli flakes and paprika, stir briefly, then tip in the tomatoes and a can of water. Stir in the bouillon and aubergine, then bring to a simmer, cover and cook for 20 mins.
- Cook the penne in a pan of boiling water for 12 mins until al dente. Drain, reserving 60ml of the cooking water. Add the cooked penne to the sauce, and toss well with the basil and a little of the reserved water, if needed. Spoon into two shallow bowls, and serve topped with the cheese and some extra basil, if you like.

Steps:
- The day before serving, slice the eggplants lengthwise into 1/4inch slices. Sprinkle with the salt and lay the slices on top of one another in 1 large colander or in 2 small colanders. Place a dish on top and weight it down (a large can of tomatoes works well.) Drain for 20 minutes. Dry the eggplant slices with paper towels.
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper if you're not using a non-stick pan. Brush the paper and eggplant slices with the olive oil and cook in the over for 25 minutes, until lightly brown. Set aside.
- For The Bechamel Sauce:.
- Bring the milk to a soft boil in a large saucepan. In another large saucepan, make a roux by stirring butter and flour over medium heat until they form a thick paste. Add the nutmeg to the boiling milk and then pour it, a little at a time, into the warm roux, whisking vigorously to prevent lumps. When all the milk has been added, continue whisking over medium heat until the sauce thickens, about 3-5 minutes. Set aside.
- For the Filling:.
- Bring the water to a boil and cook the pasta until just tender. Drain well, return to the pot and toss with the 2 tablespoons of olive oil. Set aside.
- To Assemble:.
- Grease a deep 9x17 inch baking dish and coat with the bread crumbs. Line the pan with the cooked eggplant slices, edge-to-edge, and hanging over the sides of the pan. (It's okay if there are spaces showing between the slices.) About 9 slices should be enough to cover the dish.
- Mix the cooked pasta with 3 cups of the ragu sauce, 1 cup of the bechamel sauce and half of each the cheeses. Stir well. Pour half the pasta mixture into the prepared dish. Top with the ham, the remaining cheeses, ragu sauce, bechamel sauce and pasta mixture.
- Fold the eggplant slices over the top and cover with approximately 5 more slices. Cover the dish with plastic wrap and place a baking sheet on top with 3 large cans to weight it down. Place in the refrigerator overnight.
- The day of serving, preheat the oven to 400 degrees F. Remove the plastic wrap, re-cover the dish of pasta with aluminum foil and bake for 1 hours. Remove the foil and bake for another 30 minutes. Remove from the oven and let rest for 15 minutes.
- To serve, invert onto a large serving dish a cut into wedges or thick slices.
- Serves 10-12.
