Mexican Spaghetti is an easy dinner casserole that comes together in just 15 minutes hands on time. This chicken spaghetti dish always a hit at the dinner table.

1 large chicken breast
1 tablespoon olive oil
1 tablespoon taco seasoning
8 ounces angel hair pasta (half box)
1 can rotel (10 ounce)
2 cans cream of chicken soup (10 ounce)
1 cup salsa
2 cups cheese (finely shredded - cheddar, monterey jack or a combination of both)
1 cup sour cream
1 tablespoon taco seasoning
cilantro (to garnish)

Steps:

  • Preheat oven to 425°F. Grease 9x13 baking dish.
  • Brush chicken breast on both sides with olive oil and sprinkle with taco seasoning. Bake 20-25 minutes.
  • Meanwhile, bring a pot of salted water to a boil. Add noodles.
  • Drain pasta and set aside.
  • Cube chicken and reduce oven temperature to 350° F.
  • Combine rotel, cream of chicken, salsa, sour cream, 1 cup cheese and taco seasoning in pot (no heat). Stir.
  • Add spaghetti and chicken to mixture and stir until well combined.
  • Transfer into baking dish and cover with remaining cheese. Loosely cover with aluminum foil. Bake 25 minutes.
  • Optional: garnish with cilantro

This is a twist on an old classic. It's a very versatile recipe and easy to prepare.

1 lb of ground beef
8 ounces of spaghetti noodles
2-3 cups of Mexican shredded cheese
1 can of diced tomatoes (I use Rotels Lime and Cilantro)
1 packet of taco seasoning
4 ounces of cream cheese (softened)
1 4 ounce can of green chilies
1 16 ounce can of refried beans

Steps:

  • Preheat oven to 350. Cook pasta according to package directions. Brown ground beef over medium heat until cooked through. Drain. Add taco seasoning, diced tomatoes, green chilis, cream cheese and refried beans to the ground beef and cook over medium heat until cooked through and warm.
  • Grease a 9X13 baking dish and place half the noodles on the bottom. Spread meat mixture over noodles. Cover with half of the shredded cheese. Repeat. Cover dish with aluminum foil and bake for 30 minutes. Serve with salsa, sour cream, guacamole and tortilla chips.

15 ounces tomato sauce
16 ounces fat-free refried beans
15 ounces delmonte zesty chili style tomatoes
15 ounces diced tomatoes with green chilies, drained
4 ounces diced green chilies, drained
2 tablespoons Splenda sugar substitute
1 cup salsa (mild, medium or hot)
1 lb barilla plus whole grain spaghetti

Steps:

  • Preheat oven to 350 degrees.
  • In a large pot, brown the ground beef. Once the meat is browned, add the remaining ingredients in the order listed (except the spaghetti). Stir to combine and cook until hot. Set aside. Cook the spaghetti according to package directions, drain.
  • Spray a 9 x 13 inch pan with nonstick cooking spray. Place 1 cup of sauce into the pan and coat the bottom evenly. Place half of the spaghetti in the pan and distribute evenly. Place 4 cups of sauce over the spaghetti and spread evenly. Add the remaining spaghetti and top with the remaining 4 cups of sauce. Bake uncovered for 20 to 30 minutes or until hot throughout.

6 slices bacon, cut into 1/2-inch pieces
1 clove garlic, minced
1 medium onion, chopped
1 bell pepper, chopped
Three 14 1/2-ounce cans diced tomatoes with liquid
One 2 1/4-ounce can sliced black olives, drained
1 to 2 tablespoons dried oregano
1 pound ground beef, browned and drained
12 ounces thin spaghetti, cooked and drained
2 cups grated cheddar (5 ounces)
One 10-ounce can cream of mushroom soup
1/4 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with cooking spray.
  • In a large skillet, cook the bacon until slightly crisp. With a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain. Saute the garlic, onion and bell pepper in the bacon drippings until tender. Add the tomatoes, olives, oregano, bacon and the cooked ground beef and simmer, uncovered, for 10 minutes.

1 (1 ounce) package taco seasoning mix
1 lb lean ground beef or 1 lb ground turkey
14 1/2 ounces tomatoes, canned, diced in sauce, undrained
22 ounces whole mexicorn whole kernel corn, undrained (with red and green peppers)
1 (7 ounce) can diced green chilies, undrained
1/2 cup green onion, sliced
1/2 cup Mexican blend cheese, shredded

Steps:

  • Break spaghetti in half and add to simmering water in large pot or Dutch oven. Cook until tender.
  • In large skillet brown ground beef or turkey. Add taco seaoning mix, undrained tomatoes and corn, green chilies, and onions. Over medium heat cook until heated thru, stirring occasionally.

½ teaspoon olive oil, or as needed
salt and ground black pepper to taste
1 tablespoon olive oil
½ sweet yellow onion, chopped
½ yellow bell pepper, chopped
1 clove garlic, minced, or more to taste
nonstick cooking spray
1 (14 ounce) can black beans, rinsed and drained
¾ cup shredded Mexican cheese blend, divided
¼ cup fresh cilantro, chopped
1 teaspoon ground cumin
¼ teaspoon salt
¼ teaspoon ground black pepper
2 Roma tomatoes, chopped
1 avocado, diced, or more to taste
1 (4 ounce) can sliced black olives

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking pan with aluminum foil.
  • Cut squash in 1/2 lengthwise. Remove and discard seeds. Add a few drops of oil to each 1/2 and spread using a pastry brush. Sprinkle lightly with salt and pepper. Place cut-side down in the prepared baking pan.
  • Bake in the preheated oven until tender, about 30 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a skillet over medium heat. Saute onion, bell pepper, and garlic in the hot oil until tender, 5 to 7 minutes. Remove from heat.
  • Remove cooked squash from the oven and reduce oven temperature to 350 degrees F (175 degrees C). Spray a 2-quart casserole dish with nonstick cooking spray.
  • Remove strands from squash using a fork or spoon and place them into a large bowl. Add black beans, sauteed veggies, 1/2 cup Mexican cheese, cilantro, cumin, salt, and pepper; mix well. Spoon mixture into the prepared casserole dish. Sprinkle with remaining 1/4 cup Mexican cheese.
  • Bake in the preheated oven until bubbly, 15 to 20 minutes. Remove from the oven and top with tomatoes, avocado, and olives. Serve immediately.

1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (15 oz) Muir Glen™ organic tomato sauce
2 cups shredded Mexican cheese blend (8 oz)
8 oz Kraft™ Velveeta™ pasteurized prepared cheese product, cut in 1/2-inch cubes

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook spaghetti to al dente as directed on package.
  • In 5-quart Dutch oven, cook beef and onion over medium heat 8 to 9 minutes, stirring occasionally, until brown; drain. Stir in taco seasoning mix, water, chiles and cumin; stir until well blended. Cook 1 to 2 minutes or until slightly thickened.   • Cook spaghetti according to package directions. 2 cloves garlic, minced
1 small yellow onion, diced
3 skinless, boneless chicken breast halves, cut into bite-size pieces, or more to taste
1 (10.75 ounce) can cream of mushroom soup
1 (10 ounce) can diced tomatoes with green chile peppers
½ cup shredded Colby-Monterey Jack cheese

Steps:
