2 whole garlic bulbs
4 teaspoons olive oil, divided
3 tablespoons butter
6 salmon fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
2 to 3 tablespoons lemon juice
1 teaspoon minced fresh parsley
1/4 teaspoon minced fresh rosemary

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs. Brush with 1 teaspoon oil. Wrap each bulb in heavy-duty foil. , Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. , Squeeze softened garlic into a food processor; add butter and remaining oil. Cover and process until blended; set aside. , Place salmon in a greased 15x10x1-in. baking pan. Sprinkle with salt and pepper; drizzle with lemon juice. Spoon 1 tablespoon garlic butter over each fillet. , Bake, uncovered, at 425° for 8-10 minutes or until fish flakes easily with a fork. Sprinkle with parsley and rosemary.

2 pounds salmon filet (skin-on or skinless)
Salt and pepper to taste
4 tablespoons butter
4 garlic cloves, minced
1 lemon, zest and juice (about 1 tablespoon of juice)
2 teaspoons fresh dill, finely chopped plus more for garnishing (garnish is optional)
1 lemon, thinly sliced

Steps:

  • Remove the salmon from the refrigerator and let it come to room temperature while you preheat the oven. Preheat the oven to 400 degrees Fahrenheit.
  • Spray a baking dish with cooking spray or coat the bottom with a little bit of melted butter or oil to prevent the fish from sticking.
  • Place the salmon on the baking dish (skin side down if your fish has skin). Season the salmon on both sides with salt and black pepper.
  • In a small bowl, melt the butter and stir in the garlic, lemon zest, lemon juice and fresh dill. Let the flavored butter cool for about a minute.
  • Pour the lemon herb butter over the salmon. Arrange the lemon slices on top of the fish.
  • Bake uncovered for 12 to 15 minutes (depending on the size and thickness of the fish) or until the salmon is cooked through and flakes easily (see notes). Remove from the oven and serve garnished with extra dill (optional).

about 1.5 to 1.75 pounds skin-on salmon fillet
1 lemon, sliced into thin rounds
1/2 cup unsalted butter, melted
3 tablespoons lemon juice (from about 1 lemon)
2 to 3 tablespoons honey
5 cloves garlic, finely pressed or minced; or to taste
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2 teaspoons finely chopped fresh parsley, optional for garnishing

Steps:

  • Preheat oven to 375F. Place salmon on a sheet of foil (with the longer side parallel with the longer side of the sheet pan) with the skin-side down. Raise the edges of the foil up about 2 inches (or enough so that when you pour the buttery mixture over the top it will be contained in the foil).
  • Nestle lemon slices underneath the salmon, spaced evenly around the fillet; set aside.
  • To a microwave-safe glass measuring cup or bowl, add the butter and heat on high power to melt, about 1 minute.
  • Stir in the lemon juice, honey, and garlic. Pour or spoon about three-quarters of the mixture over the salmon; reserve remainder.
  • Evenly season salmon with salt and pepper.
  • Seal up the foil. Likely you will need to add another sheet of foil on top in order to seal it. Crimp or pinch the top and bottom pieces of foil together; get it as air-tight as possible but it doesn't have to be perfect. If you have time, set aside to marinate for about 10 to 15 minutes (enhanced flavor).
  • Place foil pack on a baking sheet and bake for about 17 minutes.
  • Remove baking sheet from the oven and remove the top piece of foil or open up the packet so salmon is exposed but keep the edges raised to contain the buttery mixture.
  • Set oven to Hi broil.
  • Spoon the reserved buttery mixture over the salmon, if desired. Use your judgment and if there's already lots of juice you don't need to add it because you don't want it to start leaking. If you have extra buttery mixture, it's great served over the finished dish.
  • Broil salmon for about 5 to 10 minutes, or until salmon is as golden as desired.*
  • Optionally garnish salmon with parsley and serve immediately.

½ cup butter, cut into 16 pieces
2 cloves garlic, thinly sliced
2 (1 pound) salmon fillets
½ cup butter, cut into 8 pieces

  • Preheat oven to 450 degrees F (230 degrees C). Combine water and lemon juice in a bowl.

Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. 2 Tbsp fresh lemon juice
3 Tbsp + 1 tsp unsalted butter (, diced into 1 Tbsp pieces)

Steps:

  • Remove salmon fillets from refrigerator and allow to rest at room temperature 10 minutes.
  • Meanwhile, prepare the garlic lemon butter sauce. In a small saucepan, melt 1 tsp butter over medium heat.
  • Add garlic and saute until lightly golden brown, about 1 - 2 minutes. Pour in chicken broth and lemon juice.

4 salmon fillets, skin removed (about 2 lbs. (900g) total)
4 cups halved brussels sprouts*
2 Tablespoons unsalted butter, melted
2 Tablespoons chopped fresh rosemary (or use 1 Tablespoon dried)
2 Tablespoons chopped fresh parsley (or use 1 Tablespoon dried)
1 Tablespoon minced garlic
2 medium lemons, divided
1/2 teaspoon freshly ground black pepper, divided
sea salt, to taste

Steps:

  • Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper or a silicone baking mat. Arrange salmon and brussels sprouts evenly spaced on top.
  • Brush the melted butter on top of each salmon fillet. In a small bowl, stir the rosemary, parsley, garlic, juice of 1 lemon (around 4 Tablespoons), and 1/4 teaspoon pepper together. Four 5- to 6-ounce skinless salmon fillets
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, cut into 4 pieces
1 tablespoon chopped fresh dill and/or parsley

Steps:

  • Position an oven rack in the top of the oven, and preheat to 450 degrees F. Line a rimmed baking sheet with foil, and brush with oil.
  • Place the salmon fillets, evenly spaced, in the middle of the prepared baking sheet. Sprinkle the tops with 3/4 teaspoon salt and a few grinds of pepper. Bake until the outside is opaque and slightly firm to the touch and the inside flakes easily (insert a small paring knife between layers to check; the color will vary from bright pink (rare) to pale pink to orange (well-done)), 8 to 12 minutes, depending on the desired doneness.
  • Remove the fillets from the oven, top each with a piece of butter and let melt over the top and down the sides. Sprinkle with herbs, lemon juice and salt to taste. Transfer the salmon to serving plates with a spatula. Serve hot or at room temperature.
