Time 2h40m

Yield 6 to 8 servings (makes about 56 pieces)

Number Of Ingredients 16

1 1/2 cups Italian-style dried breadcrumbs
1 1/3 cups freshly grated Parmesan
1 teaspoon salt
2 (16-ounce) blocks pasteurized mozzarella cut into 4 by 1/2-inch sticks
4 large eggs, beaten to blend
1 1/2 cups vegetable oil
4 cups Marinara Sauce, recipe follows
1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 (32 ounce) cans crushed tomatoes
2 dried bay leaves

Steps:

  • Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
  • Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

MOZZARELLA STICKS

Serve these moreish mozzarella chips hot with your favourite dip. They make a great side dish or snack at a party and will go down a storm with guests

Provided by Good Food team

Categories     Canapes, Side dish, Snack

Time 35m

Yield Serves 4-6

Number Of Ingredients 8

400g block mozzarella (not in water)
50g flour
2 eggs
150g breadcrumbs
2 tsp smoked paprika
2 tsp dried oregano
vegetable or sunflower oil for frying
dips , to serve

Steps:

  • Cut the mozzarella into 'chips'. Tip the flour into a bowl and season well. Whisk the eggs in a second bowl and tip the breadcrumbs, paprika and oregano into a third. Coat the mozzarella sticks in the flour, then the egg, then the breadcrumbs. Transfer to a parchment-lined tray and freeze for at least 2 hrs.
  • Heat enough oil to come 2-3cm up the side of a saucepan. When hot, drop in a test chip - it should sizzle straight away and brown within a minute or two. The secret is to cook them long enough to crisp up the outside without letting the mozzarella ooze out - it may take you a few practice chips to get it right. Cook the chips in batches and drain on kitchen paper. Serve hot with your favourite dip.

FRIED MOZZARELLA STICKS

Fried Mozzarella Sticks image

Provided by Valerie Bertinelli

Categories     appetizer

Time 1h10m

Yield 4 servings

Number Of Ingredients 15

One 8-ounce block pasteurized part-skim mozzarella
1/2 cup all-purpose flour
2 tablespoons milk
4 large eggs
2 cups Italian breadcrumbs
2 tablespoons finely grated Parmesan
About 1 1/2 cups vegetable oil
1 cup warm Homemade Pizza Sauce, recipe follows
2 tablespoons olive oil
1/2 teaspoon dried oregano
3 cloves garlic, minced
1 pinch crushed red pepper flakes
One 32-ounce can crushed tomatoes
1 sprig fresh basil
Kosher salt

Steps:

  • Cut the mozzarella into approximately 2-1/2-by-1/2-inch sticks (you should have about 16 sticks, depending on the shape of your mozzarella).
  • Put the flour in a small bowl. Beat the milk with the eggs in another bowl. Stir together the breadcrumbs and Parmesan in a third wide, shallow bowl.
  • Working one at a time, coat a mozzarella stick in flour and shake off the excess. Dip the stick in egg, letting the excess drip off, then add it to the breadcrumbs and roll it to coat. Dip the stick in the egg one more time, again letting the excess drip off, and roll it in a final coat of breadcrumbs. You can pat the mozzarella stick gently between your hands to smooth out the coating. Transfer the coated mozzarella stick to a platter. Repeat with the remaining mozzarella sticks. Refrigerate the mozzarella sticks until cold, about 15 minutes.
  • Heat 1/2 inch of vegetable oil in a large skillet over medium-high heat until it reaches 350 degrees F. Have a large brown paper bag ready for the fried sticks (they will stick to paper towels). Add half of the mozzarella sticks and fry, turning once, until golden brown on both sides, about 1 minute total. Transfer to the paper bag to drain. Return the oil to 350 degrees F (this is important, as the cheese will seep out if it is not hot enough) and fry the remaining mozzarella sticks.
  • Serve hot with Homemade Pizza Sauce on the side.
  • Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes. Remove the basil.

HOMEMADE MOZZARELLA STICKS

Homemade Mozzarella Sticks image

Homemade Mozzarella Sticks are deliciously seasoned with breadcrumbs on the outside and hot, gooey melted cheese on the inside. They are absolutely perfect dipped in marinara sauce and served for your next party or game night! Air fryer, oven, and traditional frying method instructions all work and these are great for making ahead and storing in the freezer so you can enjoy mozzarella sticks whenever you want!

Provided by Amy Nash

Categories     Appetizer

Time 1h17m

Number Of Ingredients 8

1 pound mozzarella
3 eggs
3 Tablespoons milk
1 1/2 cups Italian breadcrumbs
1/2 cup freshly grated parmesan cheese
1/2 teaspoon salt
Vegetable oil (for frying)
Marinara sauce (for dipping)

Steps:

  • Slice the brick of mozzarella cheese into 16 sticks that are each about 3 1/2" long.
  • In a shallow bowl, whisk together the eggs and milk. In a separate shallow dish like a pie plate, stir together the breadcrumbs, Parmesan cheese, and salt.
  • Working one at a time, dip each mozzarella stick into the egg wash, let the excess drip off, then roll in the breadcrumbs. Repeat the process for each mozzarella stick for a double coating of bread crumbs by dipping again in the egg wash and breadcrumbs before transferring to a sheet pan. Continue until all of the cheese is coated and the breadcrumbs have been used up.
  • Transfer the mozzarella sticks to the freezer and freeze for at least 1 hour.
  • Fill a large skillet at least 1"-2" deep with vegetable oil, or use a deep fryer if you have one. Heat the oil to between 350 and 365 degrees F over medium-high heat. The temperature will drop when the frozen mozzarella sticks are added, so use a thermometer to monitor the oil temp and keep it in range.
  • Working in batches, fry 5-6 mozzarella sticks at a time for 1-2 minutes, carefully turning with tongs halfway through, until crispy and golden brown on the outside. Remove the fried mozzarella sticks to a plate lined with paper towel to soak up any excess oil.
  • Continue to fry the remaining mozzarella sticks, then serve hot with marinara sauce for dipping.

Provided by Sue Huhn

Categories     Cheese Appetizers

Time 20m

Number Of Ingredients 6

12 mozzarella sticks
1 egg
2 Tbsp flour
5 Tbsp bread crumbs
2 Tbsp parmesan cheese
a dollop of olive oil, or cooking spray

Steps:

  • 1. Cut the cheese sticks in half, making 24 slices, then put the slices in the freezer until completely frozen
  • 2. Beat the egg in a small bowl. Use a separate bowl to combine the bread crumbs and parmesan cheese
  • 3. To bread the cheese sticks: First dip the frozen cheese stick into the flour, then into the egg, then into the bread crumb mixture
  • 4. Once all of the 24 sticks are coated, place them on a baking sheet covered with aluminum foil coated with a few drops of olive oil or sprayed with cooking spray (this will keep cleanup to a minimum, and keep the sticks from sticking!)
  • 5. Bake in the oven at 400 degrees for about 4 minutes, or until crisp. They need to be watched closely so they don't melt completely!

  • Slice each piece of cheese in half cross-wise so that you have 24 shorter pieces. Arrange the cheese in a single layer on a parchment-lined baking sheet or plate, then freeze until completely solid, about 1 hour.
  • When ready to bake, place the flour in a shallow bowl (a pie dish works well). In a separate shallow bowl, whisk the egg, egg white, and 1 tablespoon water until well combined. In a third shallow bowl, combine the whole wheat bread crumbs, panko, Italian seasoning, and garlic powder. Arrange the plates in line (flour, eggs, breadcrumbs). Line a large, rimmed baking sheet with parchment paper.
  • Working no more than 2 to 3 cheese sticks at a time, dip the frozen cheese sticks in the flour, shaking off excess, then into the egg, then place in the bowl with the crumbs and lightly pat to coat (if you tackle too many cheese sticks at a time, the egg will freeze right onto the cheese and no longer be sticky enough for the crumbs to adhere). Place the breaded cheese sticks on the prepared baking sheet. Repeat the process with the remaining cheese sticks. Place cheese back into the freezer for at least 2 hours or overnight (this is a MUST or the cheese will melt before the crumbs turn golden).
  • When ready to bake, preheat oven to 400 degrees F and place an oven rack in the lower third of the oven. Line a large baking sheet with aluminum foil and coat with the olive oil spray. Arrange the frozen cheese sticks on the sheet, leaving about 3/4 inch between each. Lightly coat the tops of the sticks with the oil.

  • In a small bowl, combine the breadcrumbs, panko breadcrumbs, Parmesan cheese, parsley, basil, oregano, and garlic powder. In a separate small bowl, add the flour. In a third small bowl, add the egg and whisk well.
  • Spray a large baking sheet with nonstick cooking spray. Dip frozen cheese sticks into the flour, shaking off any excess flour. Next, dip into the egg and then coat with the breadcrumbs mixture. Make sure you coat the cheese sticks well, including the ends. Place sticks on prepared baking sheet. When all of the sticks are coated, freeze on the sheet for at least 15 minutes, or until ready to bake. Don't skip this step! You need to freeze them before baking so they don't ooze out in the oven.
  • When ready to bake, preheat oven to 400 degrees F. Place the cheese sticks in the oven and bake for 4-5 minutes, turn sticks over and bake for an additional 4-5 minutes, or until sticks are golden brown and soft. You don't want the cheese to ooze out. Serve warm with marinara sauce.
