This is another tried-and-true recipe I found in my grandma's recipe box. I love seeing her handwriting on faded notecards. - Crystal Jo Bruns, Iliff, Colorado

2 cups cubed fully cooked ham
1/2 cup sliced sweet pickles
4 hard-boiled large eggs, finely chopped
3/4 cup finely chopped celery
1/2 cup finely chopped sweet onion
1/4 cup mayonnaise
6 onion rolls, split

Steps:

  • Preheat oven to 350°. Place ham and pickles in a food processor; pulse until almost smooth. Transfer to a small bowl; stir in eggs, celery, onion and mayonnaise. Spread 1/2 cup over each roll bottom; replace tops. Wrap each in foil and place on a baking sheet. Bake until heated through, 10-15 minutes.

100 slices of bread

  • In a several large bowls, combine ham, pickles, Miracle Whip and pimientos. Spoon 1/4 cup onto 50 slices of bread; top with lettuce if desired and remaining bread.

2 cups cooked ham (chopped)
1/2 cup celery (finely diced)
1 teaspoon onion (grated)
1/3 cup mayonnaise (or to taste)
1 teaspoon prepared mustard (scant)
Salt (to taste)
Black pepper (to taste)
12 slices bread
Optional: 1/3 cup butter (or extra mayonnaise for bread)

Steps:

  • Gather the ingredients.
  • Chop the ham finely and put it in a bowl. Add the finely diced celery, grated onion, mayonnaise, and mustard. Mix until well blended. Add more mayonnaise, to moisten, if desired. Taste and add salt and pepper, as needed.
  • Arrange the bread slices-toasted or not-on the work surface.
  • Lightly butter the bread slices or spread with extra mayonnaise, if desired.
  • Spread 6 slices of bread with even portions of ham salad mixture.
  • Top with the remaining 6 slices of bread. Slice diagonally and serve the sandwiches with chips, French fries, salad, or a cup of soup .
  • Enjoy.

1/2 cup mayonnaise, plus more if needed
2 tablespoons whole-grain mustard
1 pound leftover baked ham, cut into 1-inch chunks
1 1/4 cups drained bread-and-butter pickle chips and 1 tablespoon pickle juice, plus more if needed
2 inner ribs celery, finely chopped, plus 2 tablespoons coarsely chopped leaves from the inner ribs
1/2 small red onion, finely chopped

Steps:

  • Whisk the mayonnaise and mustard together in a large bowl. Pulse the ham and pickles in a food processor until finely chopped but not pureed. Add the ham mixture, pickle juice, celery, onions and celery leaves to the mayonnaise mixture, and stir. Taste; if the salad seems dry (it should be spreadable), add more mayonnaise and/or pickling liquid. Serve as is or on sandwiches.

1 teaspoon sliced green onion
1/4 teaspoon salt
Dash pepper
16 slices bread
8 slices mozzarella cheese

Steps:
