Number Of Ingredients 6

4 large russet/Idado potatoes (cut using a fry cutter or cut in half, then quarted and cut into strips)
3 tbsp olive oil (divided )
3 garlic cloves (minced)
3 tbsp freshly shredded or shaved parmesan cheese
2 tbsp minced fresh herbs, basil, parsley, etc.
1 tsp salt

Steps:

  • Preheat oven to 425 degrees. Add half the oil to the pan and place in the oven.
  • While pan heats up, cut potatoes. Once preheated, add to the sheet pan. Be careful as the pan and oil will be HOT!
  • Salt the potatoes and place in the oven. Do not stir.
  • Cook for 20 minutes. At the 20 minute mark, carefully flip potatoes using a metal spatula. Make sure you do not rip off the crispy skin. Return to the oven and cook an addition 10 minutes.
  • While fries cook, add the remaining oil to a small sauce pan. Add garlic and cook 1 minute, or until fragrant. Set aside until potatoes are done.
  • When fries are done, add to a big serving bowl. Drizzle with garlic oil and then top with herbs and parmesan cheese. Serve immediately.
