BASIC BAKED FISH -EASY DRESSING
Simple and can be used on any fish fillets or steaks. From a seafood recipe booklet put out by The American Cooking Guild. The recipe doesn't specify how much fish this is for so I guessed and you can adjust depending on the amount of fish you'll cook.

Steps:
- Preheat oven to 475-500 degrees.
- Blend the ingredients, except for the fish and baste the fish with the sauce.
- If the fish is an oily or "stornger" type of fish (Bluefish), season further with any commercial seafood seasoning.
- Bake fish in a single layer in a shallow pan for 6-7 minutes for fish 1/2" thick or for 7-9 minutes for fish 3/4" thick.
- Remove from oven as soon as the fish whiten inside and begins to flake when fork-tested.
- Above all, do not overcook.

BAKED FISH WITH ITALIAN HERBS
Fish baked with zucchini, onion and tomato, topped with a quick home made Italian dressing. I like this with a simple salad and a good, crusty loaf of bread. Recipe is from Gourmet Garden.

- Preheat the oven to 400°F
- Whisk olive oil,Gourmet Garden Garlic and Gourmet Garden Italian herbs in bowl. Toss herbed oil through zucchini, onions, cherry tomatoes and black olives. Place into a baking dish and bake for 10 minutes.
- Remove vegetables from oven and place fish fillets into baking dish. Brush another tablespoon of herbed oil over the fish. Place back into oven and bake for a further 20 minutes until cooked through.
- Whisk together Gourmet Garden Parsley, Gourmet Garden Garlic, Dijon mustard, olive oil and the zest and juice from one lemon. Once cooked, drizzle the fish with the herb dressing and serve with side salad.

Steps:
- Preheat oven to 350 F.
- If you are using Frozen cod defrost and drain all liquid from pouch.
- Marinade cod in zesty Italian dressing set aside for 30 minute.
- Combine all dry ingredients in bowl or ziplock bag.
- Place cod in bowl or ziplock bag to coat.
- Put cod in non greased baking dish
- Bake for 35 minute or until done.
