1 large yellow onion, cut into thin slices
¼ cup small dried Mission figs
6 ounces goat cheese, softened
40 crackers

Steps:

  • Heat a skillet over medium heat; add oil. Add onion; cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and cool.
  • While the onion is cooling, cut the figs lengthwise into 1/4-inch rounds.
  • Layer 1/4 teaspoon goat cheese, 1/4 teaspoon caramelized onions, and 1 or 2 fig slices on each cracker.

1 8-ounce goat cheese log
4 fresh fig leaves, optional
10 ripe figs, stems on, halved lengthwise
Salt and pepper
1 teaspoon chopped fresh thyme or rosemary
3 tablespoons olive oil

Steps:

  • Heat oven to 400 degrees. Cut goat cheese into 6 thick slices. Line an 8-by 12-inch earthenware baking dish with fig leaves (if using). Arrange goat cheese in center of dish and surround with fig halves. Season lightly with salt and pepper, then sprinkle with thyme. Drizzle with olive oil.
  • Bake uncovered for 15 minutes, until both cheese and figs are softened. Run under broiler for 1 minute to brown. Let cool slightly before serving.

6 figs
200g soft goat's cheese
1head radicchio
85g walnut pieces
6 tbsp olive oil
3 tbsp balsamic vinegar

Steps:

  • Preheat the oven to fan 160C/conventional 180C/gas 4. Unless the baking sheet is non stick, line it with foil, then brush the foil lightly with oil.
  • Cut the figs into quarters, from the top almost to the base, and arrange on the foil. Slice the goat's cheese and arrange in the centre of the figs. Bake for 10-15 minutes until the cheese is melted and tinged brown.
  • Meanwhile, whisk the dressing ingredients with some seasoning. Put a couple of good radicchio leaves on each serving plate. Remove the figs from the oven and place on the radicchio leaves. Scatter the walnuts on top. Drizzle with the dressing and serve warm or at room temperature.

1/4 pound goat cheese, cut into 1/2-inch pieces
1/4 cup olive oil
1 garlic clove, flattened
1 teaspoon dried basil, crumbled
1 teaspoon dried marjoram, crumbled
1/2 teaspoon dried rosemary, crumbled
Pepper
Sliced Italian bread

Steps:

  • Preheat oven to 400°F. Place radicchio in large shallow baking dish. Arrange goat cheese over. Heat oil in heavy small saucepan over medium heat. Add garlic and sauté until golden, about 1 minute. Discard garlic. Add basil, marjoram and rosemary to oil. Season with pepper. Drizzle over goat cheese and radicchio. Bake until cheese begins to melt, about 15 minutes. Serve with bread slices.

4 stalks fresh rosemary, about 6 inches long
4 large fresh figs, any variety, stems trimmed, halved lengthwise
1/8 cup liquid honey
1 tablespoon lemon juice, freshly squeezed
2 ounces goat cheese, crumbled

Steps:

  • Strip the leaves from the bottom of the rosemary stems, leaving about 1 1/2 inches of leaves at the tip.
  • Place the stems in a bowl and add cold water to cover; soak for at least 30 minutes.
  • Skewer fig halves crosswise on each rosemary stem.
  • Arrange the skewers on a plate with the cut sides of the figs facing up.
  • In a small bowl, mix together honey and lemon juice.
  • Brush the honey/lemon mixture over the cut side of the figs.
  • Preheat the broiler to high.
  • Broil the figs cut side up until they are lightly browned and softened, about 1 to 2 minutes.
  • Top with cheese and place back under broiler for 1 minute.
  • Serve on the skewers while still hot.

  • Reduce heat to medium-low and cook shallots 15 minutes, stirring often. Reduce the heat to low and cook, stirring every 2 to 3 minutes, until completely caramelized (deep golden brown), 15 to 25 minutes. Transfer to a plate to cool.
  • Meanwhile, roll cheese neatly in plastic wrap to create a uniform log shape. Twist ends of the plastic wrap tight and roll log back and forth on a work surface a few times to smooth out surface of cheese and give it an even shape.

  • Stuff the figs with soft goat cheese using a teaspoon. Sprinkle some chopped walnuts and sage over your stuffed figs and drizzle them with honey. Add salt and freshly ground black pepper to taste. I used Le Creuset rectangular baking dish for this recipe and it was just the right size.
  • Broil for about 5 minutes or until they look soft and release juice. Serve them warm or cold with a glass of wine. Enjoy!
