BAKED MEATBALLS

- Preheat the oven to 400 degrees F.
- In a large mixing bowl, combine the pork, lamb, ground round, spinach, cheese, egg, basil, parsley, garlic powder, salt, red pepper flakes, and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated. Use immediately or place in refrigerator for up to 24 hours.
- Place the remaining 1/4 cup of bread crumbs into a small bowl. Using a scale, weigh meatballs into 1.5-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds, roll in the bread crumbs and place the meatballs in individual, miniature muffin tin cups. Bake for 20 minutes or until golden and cooked through.
EASY BAKED MEATBALLS (ALL BEEF)
These easy baked meatballs are made with all beef, and are perfectly juicy and fluffy every time! Serve with spaghetti, on a sub, and freeze for later.

- Preheat your oven to 375 degrees F.
- In a large bowl, mix together the breadcrumbs (1/2 cup), milk (1/2 cup), eggs (2), grated onion plus the juices, minced garlic (1 clove), dried oregano (2 teaspoons), kosher salt (1 teaspoon), and black pepper (1/2 teaspoon) until everything is uniformly wet.
- Add the ground beef (2 lbs) and mix until everything is just combined. Try not to overwork it. Mixing with your hands is best, but you can use a spoon if you don't like handling raw meat.
- Using a large cookie/ice cream scoop, scoop the meatball mixture onto a rimmed baking sheet (alternatively, you can form the meatballs with your hands).
- Bake the meatballs in the center of the oven at 375 degrees F for 30 minutes, or until internal temperature is at least 160 degrees.
- Serve the meatballs with sauce and grated parmesan cheese on top of pasta, in subs, in a salad, or however you like!

EXCELLENT MEATBALLS

- Coat a large saute pan with olive oil, add the onions and bring to a medium-high heat. Season the onions generously with salt and cook for about 5 to 7 minutes. The onions should be very soft and aromatic but have no color. Add the garlic and the crushed red pepper and saute for another 1 to 2 minutes. Turn off heat and allow to cool.
- In a large bowl combine the meats, eggs, Parmigiano, parsley and bread crumbs. It works well to squish the mixture with your hands. Add the onion mixture and season generously with salt and squish some more. Add the water and do 1 final really good squish. The mixture should be quite wet. Test the seasoning of the mix by making a mini hamburger size patty and cooking it. The mixture should taste really good! If it doesn't it is probably missing salt. Add more. Add more anyway.
- Preheat the oven to 350 degrees F.
- Shape the meat into desired size. Some people like 'em big some people like 'em small. I prefer meatballs slightly larger than a golf ball. Coat a large saute pan with olive oil and bring to a medium-high heat. Brown the meatballs on all sides. Place them on a cookie sheet and bake them in the preheated oven for about 15 minutes or until the meatballs are cooked all the way through. If using right away, add them to your big pot of marinara sauce. If not using right away, they can be frozen for later use. Serve with pasta and sauce or just eat them straight out of the pot! YUM!
- Coat a large saucepot with olive oil and add the pancetta. Bring the pot to a medium-high heat and cook the pancetta for 4 to 5 minutes. Add the onions, season generously with salt and stir to coat with olive oil. Cook the onions for 6 to 7 minutes stirring frequently. The onions should become very soft and aromatic but have no color. Add the garlic and cook for another 2 to 3 minutes stirring frequently.
- Pass the tomatoes through the food mill. Be sure to pass all of the pulp through the holes leaving only the stems and the seeds, and be sure to scrape the pulp off of the bottom of the food mill. That's all of the big money stuff! Add the tomatoes to the pot and rinse out 1 of the empty tomato cans with water and add that water to the pot (about 2 to 3 cups). Season generously with salt and TASTE IT!!!! Tomatoes take a lot of salt. Season in baby steps and taste every step of the way. Cook the sauce for 2 to 3 hours, stirring occasionally and tasting frequently.
- Use the sauce right away on pasta or for any other tomato sauce need. This sauce can also be cooled and stored in the refrigerator for a few days and freezes really well.
- Yield: 2 quarts
BEEF MEATBALLS

- Preheat the oven to 450˚ F. Line 2 baking sheets with foil and coat with cooking spray.
- Combine the beef, breadcrumbs, milk, eggs, onion, garlic, parsley, 2 teaspoons salt and 1/2 teaspoon pepper in a large bowl; mix with your hands until combined. Form into 1 1/2-inch meatballs (about 30). Arrange the meatballs on the prepared baking sheets.
- Bake the meatballs until browned and cooked through, 12 to 15 minutes.
BAKED MEATBALLS

- Pour olive oil on a paper towel and rub over a baking sheet with raised sides.
- Toss milk and bread in a LARGE bowl.
- Add the pressed garlic, grated onion and stir well.
- Add the cheese, parsley, red pepper flakes, allspice, salt and pepper.
- Beat the eggs, add to the bread mixture and stir until all ingredients are well incorporated.
- Add the ground beef and mix very gently with your finger tips, just until all ingredients are blended (over handling the meat will make the meatballs tough), just toss, turn and fluff it.
- Gently roll the meat mixture into 2 inch balls.
- Place the meatballs on the prepared roasting pan, making sure they are well spaced and refrigerate for one hour to let the flavors meld.
- Pre-heat the oven to 400.
- Bake the meatballs for 17 minutes.
- To freeze the cooked meatballs: Place them on a baking sheet, making sure they are not touching each other and place in the freezer for two hours. Place frozen meatballs in a freezer safe bag and back into the freezer.

MEATBALL MACARONI BAKE
The meatballs are surprisingly moist and flavorful for using only beef. I normally don't measure the seasonings so you may have to adjust, I also don't measure the breadcrumbs, 1/2 cup is about right but sometimes I adjust. I play around with this recipe and it always comes out good. Use a really good quality, chunky tomato sauce if you are using a jarred one.

- Heat oven to 350.
- For the meatballs, mix first 7 ingredients in a large bowl thoroughly with your hands. Form into balls, I usually make rather large ones but the size is up to you, although the bigger ones come out more moist.
- Boil a large pot of well salted water and add pasta when boiling, cook to just almost al dente, then drain.
- Heat olive oil in a large, deep skillet over medium heat, add onion and garlic and cook untill soft. Do not stir too much, just give it a shake every couple minutes.
- Add meatballs to pan and turn up heat to med high and brown on all sides.
- Add spaghetti sauce to pan to cover meatballs. Add a little pasta water to thin out, if needed. turn heat back to medium or medium-low and simmer untill meatballs are mostly cooked through.
- Add pasta to a large casserole or baking dish, pour meatballs and sauce over pasta and mix slightly to make sure everything is mixed and coated with sauce. Keeping the meatballs down more on the bottom makes them come out more moist.
- Spinkle cheeses evenly over the top and bake for about 15 minutes, or untill cheese is melted and meatballs are done.
EASY BAKED PARMESAN MEATBALLS

- Mix the grated onion, 1 crushed garlic clove, mince, breadcrumbs, milk, parmesan and parsley in a large bowl. Season well with salt and pepper. Mash the mixture together with your hands until combined. Mould the mix into small balls (about walnut-sized) with damp hands. There will be about 20 meatballs.
- Heat 2 tbsp olive oil in a deep frying pan and fry the meatballs for 6-8 mins until golden brown all over. Fry in batches if you need to - they don't need to be cooked through, just browned on the outside. Set aside on a plate.
- Heat the remaining 1 tbsp olive oil in the pan and fry the chopped onion for 5 mins until softened. Add the remaining garlic, fry for another minute, then add the chopped tomatoes and simmer for 10 mins until thickened and the tomatoes have broken down. Season well with salt and pepper.
- Meanwhile, cook the pasta for 5 mins less than the pack instructions state, in boiling salted water. Heat the oven to 200C/180C fan/gas 6.
- Stir the meatballs into the tomato sauce, adding a splash of water if too thick, and bring to a simmer. Drain the pasta and tip into an ovenproof dish. Pour over the sauce and meatballs and mix well. Stir in most of the mozzarella, then scatter the remaining over the top. Bake for 15-20 mins until the cheese is golden and bubbling, and the top is slightly crisp.

BBQ MEATBALLS AND BAKED POTATOES

- Meatballs:
- Preheat oven to 350°F. Spray 9 X 13 cake pan with cooking spray. Mix all ingredients together, roll into balls (a little larger than a golf ball). Place in cake pan 4 or 5 across and 6 to 7 down.
- Put meatballs into oven, bake for 30 min. You can also put in your potatoes at this time. (Start making BBQ sauce -- recipe below). After 30 minutes, take out meatballs, turn meatballs over and drain any grease. After pouring BBQ sauce over meatballs, return to oven for approximately 35 min. or until your potatoes are done, depending on what size they are.
- BBQ sauce:
- Mix all ingredients in a med. to large sauce pan. Bring to a boil and then simmer for 5 min. Remove from heat. Pour over meatballs after they have baked for the first 30 min.

- Preheat oven to 375 degrees.
- Dice up the onion, red and green peppers and garlic. Put aside.
- In a large bowl, season ground turkey with the salt and cayenne pepper. Mix with your hands for even distribution.
- Add diced garlic to the meat.
- Add egg and mix with hands again.
- Add the breadcrumbs and mix with hands for the last time.
- Take chunks of the meat and ball them into whatever size you want.
- On a baking sheet lined with foil (non-stick), place the meatballs.
- Drizzle 1 tablespoon of oil on meatballs.
- Bake in oven for 30-45 minutes, until brown.
- Bring water to a boil. Boil Spaghetti for 12 minutes.
- Heat a skillet and add the remaining tablespoon of oil.
- Cook diced onions and peppers till tender.
- Add jar of pasta sauce to simmer for 5-7 minutes. Turn off fire.
- Strain pasta when done. And put aside too cool.
- When meatballs are done baking, add them to the sauce.
- Serve with the spaghetti.

- Preheat oven to 375 Degrees and Grease a 3 Quart Casserole Dish.
- Melt the 1 TBSP Butter over medium heat and add the green bell pepper and onion. Cook until tender, approximately 5 minutes.
- Pour the jar of pasta sauce, the 2 cups of water, the package of frozen meatballs, the 2 1/2 cups of uncooked macaroni, 1 TSP Italian Seasoning directly into the casserole dish. Add the onion and green pepper. Stir all ingredients until combined.
- Bake covered for 45 minutes at 375 Degrees. Remove from oven after the 45 minutes is up and sprinkle the 2 Cups of Mozzarella and 1/4 Cup of Parmesan Cheese over the top. Place back in the oven uncovered and broil on high for around 3 minutes or until the cheese is bubbly.
- This will make 4 Huge Servings or 6 Normal Servings. Freezes Well!
