2 small red potatoes, thinly sliced
3/4 cup shredded cheddar cheese

1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Divide chicken strips between two pieces of heavy-duty foil (about 12 in. square). In a small bowl, combine the remaining ingredients; spoon over chicken. Fold foil around mixture and seal tightly., Place packets on a baking sheet. Bake at 375° for 25-30 minutes or until chicken is no longer pink and potatoes are tender. Open foil carefully to allow steam to escape.

Steps:

  • Mix all the ingredients in a very large bowl until the meat is well-coated in a uniform sauce.
  • Place a 12-inch piece of aluminum foil on your work surface; top with a 12-inch piece of parchment paper. Spoon a quarter of the chicken mixture into the middle of the parchment paper.
  • Fold the long sides so they meet in the middle of the packet, then crimp these long edges together to make a tight seal, using the foil to catch and hold the waggly parchment paper in the seam. Roll both of the ends of the packet to seal as well. continue to make 3 more packets.
  • Set the packets on a large baking sheet and freeze for at least 24 hours. Remove the sheet and stack the packets flat in the freezer.
  • To bake, position the rack in the center of the oven and heat the oven to 425°F.
  • Place 1 or more of the packets straight from the freezer on a large lipped baking sheet. Bake for about 30 minutes, or until hot and steamy inside. Cool for 10 minutes before opening and serving.

1 ½ pounds baby potatoes (thinly sliced)
2 teaspoons olive oil
1 tablespoon seasoning salt
¼ teaspoon pepper
4 boneless chicken breasts (skinless)
¼ cup bacon bits
⅔ cup cheddar cheese (shredded)
1 cup barbecue sauce (divided)
green onions or chives
4 tablespoons sour cream (optional)

Steps:

  • Preheat grill to medium high heat.
  • Prepare foil packets. Lay out 4 large pieces of heavy duty foil then top each with a large piece of parchment paper (or spray with non stick spray).
  • Place equal amounts of sliced potatoes and onions in the middle of each packet. Drizzle with oil and sprinkle with seasoning salt and pepper.
  • Place a chicken breast on top of potatoes. Brush each side of each chicken breast with barbecue sauce.
  • Wrap up each foil packet by bringing two sides together and rolling it up. Then roll up each open end to seal the packet.
  • Place on hot grill and cook (potatoes down) for about 25 minutes or until potatoes are tender and chicken is cooked through (chicken should be 165°F).
  • Cut open packet, brush chicken with more barbecue sauce if desired and top with cheddar cheese and bacon bits. Place back on grill (do not reseal) to melt about 5 minutes.
  • Garnish with sour cream and chives.

  • Place ONE sheet of phyllo (short edge toward me) on work surface; brush with 2 tsp garlic butter; place one more phyllo sheet on top of this one, THEN place breast piece on lower third of phyllo sheets, sprinkle with S & P, then spread with 3 T. filling.
  • Fold phyllo end and sides in, then roll up; IMMEDIATELY cover with plastic; repeat with remaining chicken.

2 large (16 ounces total; 1 pound) chicken breasts, (sliced horizontally to get 4 even 4-ounce pieces)
2 cups baby potatoes, (halved or quartered)
1 green bell pepper, (thinly sliced)
1 yellow onion, (cut into rings)
1 large carrot, (cut into matchsticks)
1 tablespoon minced garlic
1/4 cup olive oil
1/2 tablespoon EACH: dried basil, dried oregano, dried parsley, garlic powder
1/2 teaspoon EACH onion powder, dried thyme
1/2 teaspoon red pepper flakes, (optional)
Salt and pepper, (to taste)
Optional: fresh lemon, fresh Italian flat-leaf parsley, freshly grated Parmesan cheese

Steps:

  • Preheat the grill to high or the oven to 425 degrees F.
  • Slice the chicken breasts horizontally to get 4 pieces. Pound the pieces to even thickness. Make sure each piece is 4 ounces.
  • Prep the veggies: half or quarter baby red potatoes (you want pretty small pieces so they'll cook in the same time as everything else). Thinly slice the green bell pepper, cut the onion into rings, and cut the carrots into 1/8th inch thick matchsticks.
  • In a very large bowl, add the chicken, potatoes, bell pepper, onion rings, carrots, and minced garlic. Pour the olive oil over everything and then all of the seasonings: the dried basil, dried oregano, dried parsley, garlic powder, onion powder, dried thyme, and red pepper flakes if desired. Add salt and pepper to taste (I add about 1/2 teaspoon of salt and 1/4 of pepper, but do it to your preference).
  • Toss all of the ingredients together to ensure everything is well coated in the seasonings and olive oil.
  • Set out 4 large sheets of foil. Divide the mixture evenly among the foil making sure each foil pack gets 1 chicken piece.
  • Seal the foil and grill on high heat for 15-25 minutes (large variance based on different grills/heat; my grill had these finished at 20 minutes) or in the oven for 30-45 minutes (again; large variance based on your oven temperature and how ingredients are prepared) or until the chicken is completely cooked through (registers 165 degrees F). My oven cooked these perfectly at 37 minutes and a friend tested this recipe and they were done at exactly 40 minutes.
  • If grilling, I like to open the foil packs just a tiny bit at the top and if oven baking, you can open the foil packs at the end and broil for 1-2 minutes. (Totally optional.)
  • Remove the foil packets from grill or oven and open carefully allowing for the steam to escape. If desired top with fresh parsley, a squeeze of fresh lemon, and freshly grated Parmesan cheese. Season additionally with salt and pepper if desired and enjoy immediately.

3 chicken breasts (cut lengthwise into 4 pieces each)
1 1-pound 8 -ounce bag petite red potatoes (cut lengthwise into 4 pieces each)
1/2 yellow onion ( finely chopped)
6 tablespoons melted butter
1 tablespoon minced garlic
1 teaspoon smoked paprika
1/2 teaspoon chipotle chili powder
2 teaspoons salt
1 teaspoon ground black pepper
2 teaspoons garlic powder
6 strips bacon ( cooked and chopped)
3 cups Colby Jack cheese (shredded)
1/4 cup chives (chopped)

Steps:

  • Preheat the oven to 400°F. Rip 4 long pieces of foil, and fold each piece in half to make it stronger and prevent leaks. Set aside.
  • Place the cut petite red potatoes in a large pot and cover with cold water. Bring water to a boil over medium-high heat and allow to cook for 6 minutes. Drain potatoes, return to pot, and let cool.
  • Add chicken pieces, chopped onions, melted butter, minced garlic, smoked paprika, chipotle chili powder, salt, ground black pepper, and garlic powder. Toss to coat all pieces of chicken and potatoes.
  • Place about 1½ cups of potatoes in each foil packet (you'll want to divide the potatoes equally between the 4 foil packs), top with 3 chicken pieces. Bring up the two lengthwise pieces of foil and fold over to seal. Roll the two edges of foil together. Place the foil packets on a baking sheet.
  • Bake in the oven at 400°F for 30-35 minutes, or until the potatoes are tender and the chicken juices run clear.
  • Remove from the oven and open each chicken packet. Drain the liquid from each packet and place the packet back down on the baking sheet, still open.
  • Divide the Colby Jack cheese evenly between each packet and sprinkle directly on top of the chicken. Add cooked and chopped bacon to the tops of the cheese and place back in the oven for 2-3 minutes, or until cheese is melted.

2 cups chopped cooked chicken
1 (6 -8 ounce) package cream cheese, softened
1 tablespoon chives, chopped
2 tablespoons milk

1/2 cup seasoned croutons, crushed to crumbs
2 (8 ounce) packages refrigerated crescent dinner rolls
1/4 cup melted margarine

Steps:

  • Mix chicken, cream cheese, chives, milk, and salt in a medium bowl (mixing with hands works best) to make filling, and store in a 1 qt freezer bag.
  • Put crouton crumbs in another 1 qt bag, attach it to bag of chicken filling, and freeze.
  • Refrigerate crescent rolls.
  • To prepare for serving, thaw chicken mixture.
  • Preheat oven to 350°F.
  • Unroll crescent rolls.
  • Each tube will contain 4 rectangles of dough with a diagonal perforation.
  • Press dough along each perforation so the rectangle halves will not separate.
  • Place about 1/4 cup of the chicken mixture into the center of each rectangle.
  • Fold dough over the filling, and pinch the edges to seal tightly.
  • Dip each packet in melted margarine, and coat with crouton crumbs.
  • Place packets on a baking sheet.
  • Bake for 20 minutes or until golden brown.

1/4-1/2 cup chopped green onion
1 tablespoon fresh cilantro, chopped (optional)
