1 medium head cauliflower, broken into florets
1 medium onion, chopped
1 can (14-1/2 ounces) chicken broth
1 chicken bouillon cube
2 tablespoons butter
2 tablespoons all-purpose flour
3 cups whole milk
2 cups shredded cheddar cheese
1 tablespoon dried parsley flakes
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon each cayenne pepper, curry powder and white pepper
Minced fresh parsley, optional

Steps:

  • In a large saucepan, combine cauliflower, onion, broth and bouillon. Cover and cook over medium heat until vegetables are tender., Meanwhile, in a medium saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Reduce heat; stir in cheese until melted. Add seasonings. Pour into cauliflower mixture. Simmer slowly for 30 minutes (do not boil). If desired, sprinkle with parsley.

I told my wife that I said her Recipe #76000 also made great cauliflower soup, and she ordered me to send this recipe, which is her variation of her mom's recipe. This is good, but I think the Broccoli Soup variation is better... just a matter of taste, I guess.

1 head cauliflower, cut into small pieces
2 (14 1/2 ounce) cans reduced-sodium chicken broth
1/2 cup chopped onion
1/2 cup butter
1/2 cup flour, about
1/4 teaspoon fresh ground black pepper, more to taste
2 cups milk
1 -2 tablespoon instant chicken bouillon granules
3 -4 cups shredded sharp cheddar cheese (12-16 oz)

Steps:

  • In a large saucepan.
  • simmer cauliflower in chicken broth until slightly softened, and set aside, leaving in broth.
  • Saute onions in melted butter until soft.
  • Season with pepper, add flour, and continue to cook over medium heat for about 5 minutes, stirring constantly.
  • Add flour mixture to cauliflower and chicken broth, and stir carefully so that cauliflower doesn't break up.
  • Add milk and bouillon granules.
  • Increase heat, and cook until thickened and starting to boil.
  • Reduce, heat, and add cheese by handfuls, mixing between each addition, stirring until melted and combined.
  • Do not allow to boil after adding cheese.

Cauliflower Soup and Garlic and Cheese Sourdough

Coarse salt and coarse black pepper
1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 small heads cauliflower, or 1 large, cut into small bunches of florets
3 ribs celery and leafy tops from the heart of stalk, finely chopped
1 medium onion, chopped
2 tablespoons chopped fresh thyme leaves
2 tablespoons all-purpose flour
1 quart chicken broth
1 cup half-and-half or whole milk
Hot sauce, optional
3 tablespoons chopped fresh parsley leaves or chives, for garnish
1/2 cup grated Parmesan, for passing at the table
3 sandwich size sourdough English muffins (recommended: Thomas' brand) split
3 tablespoons butter
1 garlic clove, minced
Grated cheddar and Parmesan
Paprika

Steps:

  • In a large pot, heat up the olive oil and 2 tablespoons of the butter, over medium heat. Season with salt and pepper. Add the cauliflower florets and stir with a wooden spoon. Add celery, onion and thyme and cook for 3 minutes. Push the vegetables to 1 side of the pot. Melt 1 more tablespoon of butter on empty side of pot and add flour to the butter. Cook for 1 minute, stirring the flour in the butter. Mix in chicken broth and half-and-half. Bring up to a simmer and cook for 15 minutes. Puree soup using an emersion blender, food processor or blender and return to pot. I like to leave it a little chunky. Check seasoning and add a dash of hot sauce, if desired.
  • Garnish soup with hot pepper sauce, chopped parsley or chives and serve with grated cheese to sprinkle on top.
  • Preheat broiler.
  • Toast English muffin halves and then place on a cookie sheet. In a small saucepan, melt the butter with the garlic over low heat. Brush toasted muffins with garlic butter and top with lots of grated cheddar and Parmesan cheeses. Sprinkle a little paprika over toasts, then place under broiler until cheeses are melted and browned. Serve cheesy toasts with soup for dipping.

ROASTED CAULIFLOWER AND GARLIC SOUP



Roasted Cauliflower and Garlic Soup image

1 head cauliflower, cut into 2-inch pieces (about 8 cups)
30 cloves garlic, peeled
1/4 cup plus 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound russet potatoes, peeled and cut into 1/2-inch chunks
2 stalks celery, chopped
1 yellow onion, chopped
1 tablespoon fresh thyme leaves
1 cup dry white wine
One 6-ounce piece Parmesan rind
6 cups low-sodium chicken broth
Freshly grated Parmesan, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cauliflower, garlic and 1/4 cup of olive oil to a rimmed baking sheet. Sprinkle generously with salt and pepper and toss to coat. Roast until the cauliflower is fork tender and lightly charred in places, about 25 minutes.
  • In the meantime, heat a Dutch oven over medium-high heat. Add the remaining 2 tablespoons of olive oil, potatoes, celery, onion and thyme. Sprinkle with a generous pinch of salt and pepper. Cook, stirring often, until the vegetables have slightly softened, about 5 minutes. Add the white wine to deglaze the pan, scraping up any brown bits that have developed at the bottom of the pan. Add the chicken broth, Parmesan rind and roasted cauliflower and garlic. Bring to a boil, then turn the heat down to low and cover. Simmer for 25 minutes, stirring occasionally to prevent the cheese rind from sticking to the bottom of the pan. Remove the cheese rind and discard.
  • In batches, carefully transfer the mixture to a high powered blender. Blend until completely smooth (see Cook's Note).
  • Once all the soup is blended, add it back into the Dutch oven. Season with salt and pepper to taste. Ladle into bowls and garnish with a pinch of pepper and a sprinkle of Parmesan.

1 cup milk
1 1/2 cups grated white cheddar cheese
1 tablespoon dry sherry
Freshly grated nutmeg
Cheese straws, for serving

Steps:

  • Melt the butter in a Dutch oven over medium-high heat. Add the onion and garlic; cook, stirring, until they start softening, about 4 minutes. Add the cauliflower, bay leaf, rosemary, 1 teaspoon salt and a few grinds of pepper. Cook, stirring, until the cauliflower starts browning, 5 minutes. Stir in the flour until absorbed, about 1 minute. Add the chicken broth and milk; bring to a boil. Reduce the heat; simmer until the cauliflower is tender, 30 minutes. Remove the bay leaf.
  • Working in batches, transfer the soup to a blender and puree until smooth (or puree in the pot with an immersion blender). Return the soup to the pot over medium heat. Stir in the cheese until melted; add up to 1 cup water if the soup is too thick.
  • Add the sherry; season with salt and pepper. Sprinkle with nutmeg and serve with cheese straws.

1 head cauliflower, cut into florets
½ cup vegetable broth
1 tablespoon salted butter
1 tablespoon all-purpose flour
⅓ cup heavy cream
1 teaspoon white sugar
¾ teaspoon salt
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
⅛ teaspoon onion powder
¼ cup grated Parmesan cheese

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 15 to 20 minutes. Drain and let cool enough to handle, 5 to 10 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly butter a casserole dish.
  • Transfer florets into the bowl of a food processor. Add broth and puree on high speed until smooth, but with some very small pieces remaining for just a bit of texture.
  • Melt butter in a saucepan over medium heat until a pinch of flour sprinkled into the oil will just begin to bubble. Whisk in flour to form a thick paste the consistency of cake frosting. Continue cooking, whisking constantly, until flour has turned golden and begins to smell like toast, 3 to 5 minutes.
  • Stir in pureed cauliflower, cream, sugar, salt, white pepper, garlic powder, and onion powder. Set over medium heat and cook, stirring often, until thick, 5 to 10 minutes. Transfer to the prepared dish and sprinkle with Parmesan cheese.

1 head cauliflower (large)
2 tablespoons butter
6 tablespoons flour
1 pinch hot red pepper flakes
2 cups milk
1 -2 cup cheese, grated (I like cheddar or marble)
1/2 teaspoon garlic powder (optional)
salt and pepper (optional)

Steps:

  • Cut cauliflower into bite size pieces and steam until just tender.
  • While it is steaming, melt the butter and add the red pepper flakes and garlic powder (if using).
  • Add the flour and mix until smooth and thickened.
  • Mix in the milk a bit at a time stirring each time until smooth.
  • Cook, stirring constantly, over a medium heat until thick and creamy (this takes awhile).
  • Add 1 cup cheese cheese and stir until melted.
  • Remove sauce from heat and salt and pepper the sauce to taste.
  • Spread the cauliflower in a 9 x 13 pan (or casserole dish).
  • Pour the cheese sauce evenly over the cauliflower and then sprinkle with 1 cup cheese (if desired).
  • Bake at 350 F until cheese is melted.

This soup looks to be thick and comforting on a chilly night. From Delicious magazine it lists gruyere cheese in the ingredients, but you could also use cheddar cheese or even a mix of both if you like :) The soup can be prepared beforehand & refrigerated before baking.

700 g cauliflower, chopped into small florets
450 ml milk
450 ml light cream
1 bay leaf
50 g unsalted butter
1 large onion, chopped
25 g plain flour
200 ml vegetable stock
350 g gruyere, grated
1/2 teaspoon nutmeg, grated

Steps:

  • Place cauliflower in a pan with milk, cream and bay leaf and simmer over low heat until tender. Strain, reserving the milk mix and discarding only the bay leaf.
  • Wipe pan clean, return to heat and melt butter, add onion and cook over low heat for 5 minutes or until just softened then add the flour and cook for 1 minute, add stock and strained milk mix, stirring to combine.
  • Cook for 1-2 minutes over a low to medium heat or until slightly thickened.
  • Add cauliflower and 300g of cheese and season with salt, pepper and nutmeg.
  • Baking:.
  • Preheat the oven to 220°C.
  • Divide soup between 6 ovenproof serving bowls and sprinkle with remaining cheese.
  • Place bowls in a roasting pan, pour in enough water to come halfway up the sides of bowls and bake for 10-15 minutes or until cheese is bubbling and golden.

Throw a new spin on this comforting classic by blending into a smooth and creamy soup

knob of butter
1 large onion, finely chopped
1 large cauliflower (about 900g/2lb), leaves trimmed and cut into florets
1 potato, peeled and cut into chunks
700ml vegetable stock (from a cube is fine)
400ml milk
100g mature cheddar, diced

Steps:

  • Heat the butter in a large saucepan. Tip in the onion and cook until softened, about 5 mins, stirring often. Add the cauliflower, potato, stock, milk and seasoning. Bring to the boil, then reduce the heat and leave to simmer for about 30 mins until the cauliflower is soft and the potato almost collapsing.
  • Whizz in a food processor or crush with a potato masher until you get a creamy, thick soup. Top up with more milk to thin a little if serving in mugs. You can make ahead up to 2 days in advance, cool, cover and leave in the fridge until needed, or freeze for up to 1 month. When ready to serve, warm through, ladle into mugs or bowls, top with the cheese pieces, then stir through before eating.

1/2 cup shredded carrots
1/4 cup chopped onion
2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
2 cups whole milk
1 can (7 ounces) whole kernel corn, drained
1 to 2 cups fresh or frozen cauliflower florets, cooked just until tender
1 cup shredded cheddar cheese
1/2 cup shredded Provolone or mozzarella cheese

1 tablespoon olive oil
1-1/2 cups thinly sliced leeks (white portion only)
1 medium head cauliflower, broken into florets
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
2 garlic cloves, minced
1 teaspoon Worcestershire sauce
1 carton (32 ounces) vegetable broth
1 can (12 ounces) reduced-fat evaporated milk
1 cup shredded sharp cheddar cheese
Additional shredded sharp cheddar cheese and minced fresh thyme, optional

Steps:

  • In a large saucepan, heat oil over medium heat. Add leeks; cook and stir 3-5 minutes or until tender. Stir in cauliflower, thyme, garlic and Worcestershire sauce. Add broth; bring to a boil. Reduce heat; simmer, covered, 30-35 minutes or until vegetables are very tender., Puree soup using an immersion blender. Or, cool soup slightly and puree in batches in a blender; return to pan. Add evaporated milk and cheese; cook and stir 3-5 minutes or until cheese is melted. If desired, sprinkle each serving with additional cheese and thyme.

1 small onion, chopped
1 medium head cauliflower, broken into florets
1 small potato, peeled and cubed
2 cans (14-1/2 ounces each) vegetable broth
1 tablespoon Dijon mustard
1/2 teaspoon white pepper
2 cups half-and-half cream
1 log (4 ounces) fresh goat cheese, crumbled
2 tablespoons snipped fresh dill
Optional: Minced chives, lemon peel strips, snipped fresh dill and croutons

Steps:

  • In a large saucepan, heat oil over medium-high heat. Add onion; cook and stir until tender. Stir in cauliflower and potato; cook and stir 4-5 minutes., Stir in broth, mustard and white pepper. Bring to a boil. Reduce heat; simmer, covered, 15-20 minutes or until vegetables are tender. Remove from heat; stir in cream and cheese.
