BRAZILIAN-STYLE BEEF RIBS
Whenever I go to Brazil I must eat at a Brazilian churrascaria and have some beef ribs. The meat is so tender and flavorful, it's hard to believe it's only seasoned with salt. Here's my version of Brazilian-Style Beef Ribs, enjoy!

Steps:
- Preheat oven to 275 degrees F (135 degrees C).
- Place the rack of beef ribs in front of you on a work surface with the shiny white membrane facing up. Slip the blade of a sharp knife under the membrane at one end, and slice the membrane off the meat in a single piece, if possible. Discard the chewy membrane. Rub the ribs thoroughly with sea salt, front and back. Place the ribs onto a cooking rack in a roasting pan.
- Bake in the preheated oven until very tender, about 6 hours. Lightly baste the beef with water (use beef broth if you prefer) after the first 1 1/2 hours, being careful not to dislodge the salt. Baste again every 45 minutes to 1 hour; after 6 hours of total cooking time, remove from oven and allow to rest 10 to 15 minutes before slicing up into servings.

BRAZILIAN CHURRASCO (MIXED GRILL)
Churrasco is the national barbecue of Brazil, where spit-roasting has been raised to the level of art. Think whole meal cooked on a rotisserie and don't think of a barbecue season without it. Simply defined, churrasco is a Brazilian mix grill with the meats cooked on a rotisserie. Some people believe that the word churrasco comes from Spanish, socarras, meaning to burn or singe. You know, the socarrat, that burnt crusty part on the bottom of a paella pan that everybody wants. So from socarrat to churrasco? Well, it's an easy leap if you drink enough caipirinhas. It starts with a cut of beef you probably haven't heard of. It's called picanha in Brazilian and top capped sirloin in the U.S., and it's actually the top piece of sirloin with this thick cap of fat. Next is a chicken that has been marinated in salt, pepper, and garlic with a squeeze of fresh lime juice. Mini bell peppers, sausages, and onion on skewers finish off the mixed grill. Steps:
- Step 1: Make the marinade for the chicken: In a small mixing bowl, combine the garlic, cilantro or parsley, if using, lime juice, olive oil, and salt and pepper and whisk to mix. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for 1 to 2 hours, turning the bag occasionally so the thighs marinate evenly. ShareTweetPin367 Shares Step 2: In the meantime, trim the sirloin cap of any silverskin. Slice it crosswise against the grain into 2-inch-wide pieces. Season generously on all sides with salt and pepper, then form into a "C" shape with the fat cap on the outside. Skewer the pieces of meat through the bottom and top sides to maintain the "C" shape. ShareTweetPin367 Shares Step 3: Skewer the kielbasa and the vegetables on separate skewers. Brush the onions on all sides with olive oil and season with salt and pepper. ShareTweetPin367 Shares Step 4: Remove the chicken thighs from the marinade (discard the marinade) and pat dry with paper towels. Skewer the chicken thighs. ShareTweetPin367 Shares Step 5: If you have a Brazilian-style rotisserie, like a Carson, set it up according to the manufacturer's instructions. Build a wood or charcoal fire and preheat to medium-high (400 degrees). Insert the skewers in the sockets, beef and kielbasa on the top row, chicken, onions, and peppers on the bottom row. Spit-roast until each is cooked to taste: about 35 to 40 minutes for the chicken and onions, 45 minutes for the beef, and 30 minutes for the peppers and kielbasa. Rotate the skewers every 10 minutes or so (or as needed) so each ingredient spends some time close to the coals. You may need longer or shorter cooking times, depending on the heat of your fire. Cook the chicken through (to an internal temperature of 165 degrees). Serve the beef crusty on the outside and medium-rare (130 to 135 degrees) inside. ShareTweetPin367 Shares Step 6: Serve the meats with the salsa. ShareTweetPin367 Shares

Steps:
- STOVETOP PICADINHO1) Season beef chunks with salt, pepper, and cumin. Heat a medium nonstick pot or Dutch oven over medium-high heat. Add 2 tablespoons of oil and cook beef for 5-6 minutes, or until browned on both sides. Transfer beef with its pan juices to a bowl.2) In the same pan, reduce heat to medium, add 1 tablespoon of oil and then cook the onion for about 5-6 minutes or until softened. Add the garlic and cook for 1 minute or until fragrant, stirring occasionally. Add beef with juices back to the pan.3) Stir in tomato paste, broth, carrots, and butternut squash. Let come to a boil over medium-high heat. Then reduce heat to medium-low, cover tightly, and cook for 50-60 minutes or until beef is tender. Stir in vinegar. If desired, you may thicken the sauce by dissolving 1-2 tablespoons of cornstarch in 1/4 cup of water and then slowly adding it to the stew, stirring constantly until the sauce thickens. Serve with chopped cilantro on top.4) For me this is the best beef stew of all! It's full of flavor, tender, and gluten-free. Depending on the veggies that you use, this Brazilian beef recipe can also be low carb. That is why I didn't use potatoes, but you can certainly do so if you'd like to.
- SLOW COOKER PICADINHO1) Season beef chunks with salt, pepper, and cumin. Heat a large nonstick skillet over medium-high heat. Add 2 tablespoons of oil and cook beef for 5-6 minutes or until browned on both sides. Transfer to the slow cooker along with its pan juices.2) In the same skillet, reduce heat to medium, add 1 tablespoon of oil and then cook the onion for about 5-6 minutes, or until softened. Add the garlic and cook for 1 minute or until fragrant, stirring occasionally. Transfer to the slow cooker.3) Add tomato paste, broth, carrots, and butternut squash. Stir, cover, and cook on high for 2-4 hours, or on low for 8-10 hours. Stir in vinegar. If desired, you may thicken the sauce by dissolving 1-2 tablespoons of cornstarch in 1/4 cup of water and then slowly adding it to the stew, stirring constantly until the sauce thickens. Serve with chopped cilantro on top.
- PRESSURE COOKER PICADINHO1) Season beef chunks with salt, pepper, and cumin. Press the saute function. Once heated, add 2 tablespoons of oil and cook beef for 5-6 minutes or until browned on both sides. Transfer to a plate.2) Add 1 tablespoon of oil and then cook the onion for about 5-6 minutes or until softened. Add the garlic and cook for 1 minute or until fragrant, stirring occasionally. Add beef back to the pressure cooker. Cancel saute.3) Stir in tomato paste, broth, carrots, and butternut squash. Lock lid and cook on high pressure for 15 minutes . Natural release pressure (about 20 minutes) and unlock lid. Stir in vinegar. If desired, you may thicken the sauce. To do this press the saute function, dissolve 1-2 tablespoons of cornstarch in 1/4 cup of water, and then slowly add it to the stew, stirring constantly until the sauce thickens. Serve with chopped cilantro on top.

- In a large bowl, combine the flour and salt. Make a hole in the middle and add the water, oil, vinegar and cachaça. Mix well, using your hands, then transfer to a flour dusted surface and knead until the dough is smooth, elastic and no longer sticking to your hands or counter. Cover with a towel and let it rest for 30 minutes.
- In a large skillet, over medium high heat, add the olive oil and then sauté the onion and garlic until translucent, about 2 minutes.
- In a large skillet, heat the olive oil and butter over medium high heat. Add the onions and garlic and sauté until translucent, about 2 minutes.
- Divide the dough in half. On a floured surface, roll out one of the halves as thinly as you can (about a 9 by 12-inch rectangle), without tearing the dough. Using a round cookie cutter (I use a 4-inch), cut about 15 circles of dough and reserve on a baking sheet, over parchment paper. You can also cut them into rectangles, as small or big as you'd like.

- Feijoada. You can’t have a list of Brazilian recipes and not include feijoada, which is considered Brazil’s national dish. It’s a slow-cooked black bean stew bursting with flavor.
- Brazilian Cheese Bread. Known as pao de queijo, this Brazilian cheese bread is gooey and chewy, the perfect addition to any meal. It’s like no other gluten-free treat you’ve tasted before!
- Brazilian Fish Stew. Brazilian fish stew is very similar to curry. Ready in under 30 minutes, it’s a breeze to whip on those busy nights. The tomato coconut sauce is creamy, while the lime keeps this dish refreshing.
- Brazilian Tapioca. Similar to a pancake or flatbread, Brazilian tapioca is consumed daily with butter, cheese, jam, meat — anything you can think of! Brazilian tapioca is easy to make, and only three ingredients are required.
- Baked Brazilian Pineapple. Brazil is known for incorporating many different types of fruit into its cuisine. Baked Brazilian pineapple is just one way to devour this juicy fruit.
- Brazilian Lemonade. Don’t be alarmed, but Brazilian lemonade is actually made with limes. Many parts of the world make their lemonade with limes, so it’s actually not too weird.
- Brazilian Picadillo. Brazilian picadillo is extremely popular in Brazil. It’s called “ensopado de carninha moida com azeitona,” which means juicy ground beef with olives.
- Brazilian Coconut Ball. Only four ingredients are needed to make these delicious and sinfully sweet Brazilian coconut balls. In Brazil, they’re called “beijinho de coco,” which translates into coconut little kiss.
- Brazilian Rice. While it might seem as though cooking rice needs no explanation, Brazilian rice is made a little differently. Cooking rice is like an art form in some parts of the world.
- Farofa. Farofa is toasted cassava flour that is paired with almost any meal. Sprinkle it on top of rice, beans, or feijoada. It doesn’t have a strong flavor and soaks up the flavor of whatever you cook it with.
