Baked Beans with a Kick image

Sweet and Spicy, these Baked Beans are full of flavor and covered with bacon. Friends have called these the best baked beans they have ever had!

Number Of Ingredients 9

1 pound thick cut bacon (or pepper bacon )
1 large sweet onion (diced)
1 bell pepper (diced (your favorite color))
3 jalapeno peppers with or without seeds (diced - optional)
2 cans pork and beans (28oz (I used Van Camps) - keep cans upright so you can pour liquid off)
¾ cup sweet BBQ sauce (I used Sweet Baby Ray's )
½ cup brown sugar
½ tsp. liquid smoke
1 tsp. black pepper (coursely ground )

Steps:

  • Adjust oven rack to just below the middle of the oven and preheat to 350 F.
  • Dice onion, bell pepper and jalapenos. If you include the seeds of the jalapenos, beans will have more spice.
  • Cut bacon into pieces about ½" - 1" long. Stirring enough to make sure the bacon does not burn, fry over medium-high heat in a cast iron skillet or other heavy frying pan until the bacon is about half way cooked. Do not discard bacon fat. Use a slotted spoon to remove bacon chunks and pile on paper towels to drain.
  • Add the diced onion, bell pepper and jalapenos to the bacon grease in the frying pan. Continue to fry over medium-high heat stirring frequently for 2-3 minutes until the veggies have softened.
  • Meanwhile open the cans of beans and drain up to 1" of liquid off the top of each can. Pour the remainder of the beans and liquid into a large mixing bowl.
  • Add the barbecue sauce, brown sugar, liquid smoke and black pepper. Add the veggies when they are done.
  • Gently fold the mixture together with a rubber spatula until it is thoroughly mixed. Pour it into a 9"x13" casserole dish or equivalent pan. Scatter the bacon over the top.
  • Bake 1-2 hours until the sauce is the thickness of syrup (cooking time is up to your personal taste). After baking let stand for 10 minutes before serving.

Since these beans are cooked uncovered, everything gets caramelized and the beans are not mush. Since every oven is different, check your beans at an hour and a half.

4 slices bacon, chopped
1 sweet onion, chopped
28 ounces baked beans (1 large can)
1/4 cup barbecue sauce
1/4 cup brown sugar
1 tablespoon apple cider vinegar
1 tablespoon Dijon mustard
1/4 cup brewed coffee

Steps:

  • 1. Preheat the oven to 350 degrees.
  • 2. Cook the chopped bacon in a pot over medium heat until browned (about 10 minutes).
  • 3. Remove the bacon with a slotted spoon, reserving the bacon grease in the pan. Drain the bacon on paper towels.
  • 4. Add the chopped onions to the pot with the bacon grease and cook for 15 minutes over medium-low heat, or until caramelized.
  • 5. Remove the pot from the heat. Add the bacon back to the pot as well as the remaining ingredients.
  • 6. Stir it all together.
  • 7. Pour the beans into a greased 8" baking dish and bake at 350 degrees for 2 hours.
  • 8. Remove the beans from the oven and let sit for 5 minutes before serving.

2 cups white beans, soaked for 2 hours
3 tablespoons ketchup
2 tablespoons brown sugar
2 teaspoons smoked paprika
2 teaspoons vegetarian chicken soup base
1/2 teaspoon red pepper flakes
2 cloves garlic, chopped
1 bay leaf
1 carrot, chopped
1 celery stalk, chopped
1 onion, chopped
One 14-ounce can diced tomatoes

Steps:

  • Grease the slow cooker with nonstick spray. Place the beans, ketchup, brown sugar, smoke paprika, soup base, red pepper flakes, garlic, bay leaf, carrots, celery, onions and tomatoes into the slow cooker along with 1/2 cup water. Stir and cook on high for 3 to 4 hours. Add 3 tablespoons water halfway through cooking, if needed.

3/4 lb hot Italian sausage, casings removed
2 (14 ounce) cans pork and beans
19 ounces black beans or 19 ounces kidney beans
1 large onion, diced, about 1 1/2 cups
1/2 cup ketchup
1 teaspoon prepared mustard
1/4 cup chili sauce
1/4 cup brown sugar
water, to add

Steps:

  • Fry sausage, crumbling and breaking it apart as it cooks.
  • Drain off any fat and let cool.
  • Chop sausage into small bits by hand or in a food processor.
  • In a small bowl stir together the sauce ingredients until well combined.
  • Place all ingredients into a casserole dish and stir to combine.
  • Cover and bake at 325° for 2 hours, checking after 1 hour for moisture. (Depending on the amount of sauce in the pork and beans you've used and how finely you've chopped the sausage you may need to add some water.).
  • Uncover and bake for an additional 1/2 hour.
  • Stir and enjoy!

1-1/2 cups KRAFT Original Barbecue Sauce
3/4 cup chopped onions
1/4 cup molasses

1/2 lb bacon (cut into 1/2-inch squares)
1/2 medium onion, diced
1/2 green bell pepper, diced
1 -2 jalapeno, diced (seeding is optional depending on desired heat)
1 (55 ounce) can bush's original baked beans or 1 (55 ounce) can bush's maple baked beans
8 ounces canned crushed pineapple, drained
1 cup dark brown sugar, firmly packed
1 cup ketchup
1/2 tablespoon ground dry mustard

Steps:

  • Crisp bacon in a skillet, remove, leaving grease in skillet.
  • Saute' bell pepper, jalapeno,and onion until tender.
  • Combine all ingredients. If mixture looks drier than desired, add additional ketchup.
  • Pour into a 12x9 aluminum baking pan, or deep 9x9.(We like to use disposables).
  • Smoke @ 225*-250* for 2 1/2 hours uncovered.
  • Remove to oven and bake 1 hour @ 350*, or until beans reach a temp of 160*.
  • Note: Between the peppers and the mustard, these beans are on the warm side. If desired, adjust the heat up or down with peppers, and mustard.

1/2 cup diced bell pepper
