1 large sweet onion, sliced into 1/2-inch rounds
1 cup nonfat buttermilk
1/4 cup cornstarch
1/3 cup all purpose flour
3/4 cup yellow cornmeal
1/4 finely grated Parmesan cheese
1 Tablespoon Miss Brown's House Seasoning (recipe follows)
Olive oil cooking spray
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F. Line two baking sheets with parchment paper. Lightly spray the parchment paper with olive oil cooking spray.
  • Stir together the buttermilk and cornstarch in a shallow bowl.
  • Stir together the flour, cornmeal, Parmesan cheese and House seasoning in a baking dish.
  • Coat the onion slices by placing each slice into the buttermilk mixture allow excess to drip before coating in the seasoned cornmeal. Then place the coated rings in a single layer on the baking sheets. Repeat until all onion rings are coated. Give the onion rings a light spray with non-stick baking spray. Bake until golden brown, about 20-25 minutes flipping once halfway through and serve hot.
  • Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

In this onion ring recipe, the onions are dipped in barbecue sauce and coated with panko bread crumbs. The barbecue sauce bakes right into the rings, and no ketchup is needed!

2 large eggs, (beaten)
4 tablespoons all purpose flour
3 cups panko bread crumbs
2 large sweet onions, (sliced into 1/2-inch rings)

Steps:

  • Preheat oven to 450 degrees. Place two baking sheets in the oven and let those preheat too.
  • In a medium bowl, whisk together barbecue sauce, eggs and flour. Place bread crumbs in a separate bowl.
  • Using tongs (or your fingers) dip onion slice in the barbecue sauce mixture, shake the excess off and then dunk on all sides into the bread crumbs. Lay on a cool baking sheet. Repeat until all onion slices have been dunked.
  • Remove hot baking sheets from the oven and spray lightly with cooking spray. Move coated onions to hot baking sheets. Spray the coated onions lightly with cooking spray.
  • Bake for about 6 minutes, or until golden, then use tongs to turn each onion ring over. Spray the other side of the onions with cooking spray and bake for an additional 5 to 7 minutes. Watch closely to make sure they crumbs are not browning too quickly or burning.
  • Remove from oven and serve immediately.

Steps:

  • Preheat oven to 450 degrees F. Place two baking sheets in the oven and let those preheat too.
  • In a medium bowl, beat the eggs. Then whisk in the barbecue sauce and flour.
  • Place bread crumbs in a separate bowl.
  • Using tongs (or your fingers) dip onion slices in the barbecue sauce mixture, shaking off any excess, then gently dunk on all sides into the bread crumbs, making sure they are fully coated. Transfer to a cool plate or cookie sheet; repeat the process with all the onion slices.

1 teaspoon ground cumin

2 tablespoons olive oil
1 medium sweet onion (Vidalia)
1 1/2 cups corn flakes
1/2 cup plain dried breadcrumbs
1 large egg
1/2 cup buttermilk
1/4 cup flour
salt & pepper, to taste

Steps:

  • Preheat oven to 450; pour oil onto rimmed baking sheet; set aside.
  • Slice onion four times across, to make wide rings; discard the small inside ones (chop & freeze-dry for later use); set aside.
  • Pulse cornflakes and breadcrumbs in blender/processor until very fine crumbs; transfer to medium bowl.
  • In another medium bowl, whisk egg, milk, flour and seasonings.
  • Place oiled baking sheet in oven for TWO MINUTES to heat up.
  • Dip rings into egg mixture (let excess drip off), dredge in cornflake mixture; place on a plate.
  • Arrange onion rings on heated oil-sheet; bake (turning once) until rings are golden brown (about 16 minutes).
  • Season with more salt.
  • SERVING SUGGESTIONS: Eat as is, with your choice of dipping sauce (ketchup, ketchup/yellow mustard, Zip's Sauce, ranch, barbecue, etc).
  • Serve skinny cut rings over the top of your favorite burger. Especially good on mushroom-n-Swiss burgers!

1/4 cup plain breadcrumbs
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
2 medium onions, cut cross ways into 3/16-inch rings
2 tablespoons 1% low-fat milk
1/2 teaspoon salt
pepper

Steps:

  • Preheat oven to 350 degrees.
  • Spray a cookie sheet with lite olive oil or other veggie oil.
  • Mix bread crumbs, oregano & cayenne (mix these ingredients on a sheet of wax paper it will make the next step easier).
  • Dip onion rings into the milk and allow the excess to drip back into the bowl.
  • Dip into the crumb mixture.
  • They won't be fully coated, don't worry they will still have a crunch (especially with Panko crumbs).
  • Place onion rings in a single layer on the cookie sheet.
  • Bake onion rings until the crumbs are golden and the onions are soft (approx 30 minutes).
  • Sprinkle with salt & pepper and then serve.

These baked onion rings are incredible! There is no way that you feel like you are eating healthy and low fat when you eat these. This is a slight adaptation of a Yahoo Health recipe. I dip mine in ketchup but my husband is a purist who prefers his plain. And while the prep time can be a little long, make it a social time. I talk to everyone in the house while I make these, and then sit back and enjoy how great they smell as they cook!

2 -3 egg whites
3/4 cup nonfat breadcrumbs or 3/4 cup lowfat breadcrumbs

Steps:

  • Preheat the oven to 400 degrees.
