BAKED APPLES RECIPE (TWO WAYS)
You can use this recipe to make stuffed baked apples with my delicious cinnamon and brown sugar mixture and nuts of your choice, or you can make baked sliced apples, tossed with the same delicious brown sugar mixture. Either way, serve your baked apples warm. This recipe is vegan and gluten free, but if you like, you can serve the cooked apples with a good scoop of your favorite ice cream!

- Heat the oven. Preheat the oven to 375 degrees F and adjust a rack in the center
- Make the cinnamon and brown sugar mixture. In a small bowl, combine the sugar, nuts, raisins or dried fruit of your choice. Add the cinnamon and cardamom. Mix well.

HASSELBACK CINNAMON SUGAR BAKED APPLES
I grew up in the Pacific Northwest where it seemed like just about everyone had apple trees in their backyard. We had so many apples that we had to find different ways to use them up. This dish was always our go-to since it's an easy way to transform an apple into something fun and particularly tasty with a scoop of ice cream on the side. The fan-like slicing technique known as Hasselback famously creates lots of surface area perfect for trapping sweet cinnamon sugar that caramelizes deliciously during baking. You can easily double this recipe to serve 4; just use a medium baking dish and adjust the cooking time as needed.

- Place a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking dish with parchment paper.
- Place an apple half rounded-side up on a cutting board. Starting at the outermost edge, slice down most of the way (but not all the way) through each half at 1/8-inch intervals, creating fan-like slices all the way across the apple. You can place wooden chopsticks on each side of the apple to act as guardrails to make sure your knife doesn't cut all the way through.
- Arrange the sliced apple halves flat side-down in the prepared baking dish. Use a pastry brush to baste the bottoms, tops and between the slices of the apples with the melted butter. In a small bowl, combine the sugar and cinnamon and sprinkle all over the apples and into the slits. Bake on the center rack until the apples are tender and lightly browned, 20 to 25 minutes. Serve warm with vanilla ice cream.
BAKED APPLES (WITH CHOPPED HAZELNUTS)
Good old-fashioned baked apples. A great winter dessert and also gluten free. This recipe makes 6 baked apples. You can substitute different fruit and nut combinations, eg sultanas and sliced almonds. These are extremely hot when removed from the oven I usually allow them to sit for about 10 minutes. Any extra apples can be stored in the fridge and reheated in the microwave.

- Preheat oven to 180°C ( 350°F ).
- Core the apples, using an apple corer. If you dont have a corer, use a sharp knife leaving a wider opening at the top than at the bottom. There is no need to remove the apple skins.
- In a mixing bowl, combine the sugar, butter, hazelnuts, raisins, cinnamon and zest.
- Stuff the apples firmly with the fruit mixture. Pack the apples as much as possible and then pile any leftover mix into mounds on top of the apples.
- Place the apples into a baking dish, casserole or cake tin. Use a dish that fits them as snugly as possible-this will stop them from falling over. I usually use a pyrex pie/tart baking dish.
- Spoon 1 teaspoon of honey/syrup over each apple. I usually just guess the amount for each apple and use a pouring top bottle of honey. Pour the water into the bottom of the dish.
- Bake for 30-40 minutes, or until the apples are soft.
- Serve drizzled with any syrup remaining in the bottom of the dish.
- Serve with cream, ice-cream or custard if desired.

- Preheat oven to 350 degrees. In a bowl combine raisins, walnuts, cinnamon, brown sugar, lemon juice and zest. Stuff apples with mixture and place in small baking dish. Add 1/2 cup cider or water and bake for 30 minutes or until tender.

- Take cores out of apples.
- Chop figs and hazelnuts.
- Add grated lemon rind, sugar and cinnamon.
- Add 1 tbs juice from the lemon.
- Press fig mixture into apples.

GORGONZOLA BAKED APPLES WITH BALSAMIC SYRUP

- In a small bowl, combine the first seven ingredients. Stuff apples with mixture and place in a greased 11x7-in. baking dish. Bake, uncovered, at 325° for 40-45 minutes or until apples are tender., Meanwhile, in a small saucepan, bring vinegar to a boil; cook until liquid is reduced to 1/3 cup. Drizzle over apples.
