I would like to thank BusyMomof3 for this little treasure in Sugar Free Cooking cookbook that she sent me in the recent cookbook swap. TIP - for an extra rich pastry, use 1 egg yolk and half the amount of water in this recipe. VARIATION - Use pears instead of apples in the recipe. FREEZING - These apples freeze well after baking and should be thawed and then re-heated before eating.

3 cups all-purpose flour
1/4 teaspoon salt
1/3 teaspoon ground nutmeg
3/4 cup butter
6 -8 tablespoons ice water
6 apples (medium sized dessert)
6 prunes (pitted)
6 dried apricots
2 1/2 tablespoons raisins
1 egg (beaten to glaze)
cream (to serve)
mint leaf (to serve)

Steps:

  • Preaheat oven to 350F (160C fan forced, 175C conventional).
  • Sift the flour, salt and spices into a large bowl.
  • Cut the butter into dice and rub into the flour until the mixture resembles fine breadcrumbs (I would use a food processor on pulse to do this).
  • Mix in enought water to produce a smooth pliable dough.
  • Divide the dough into six pieces and roll out into a square approximately 8 inches.
  • Peel the apples with a sharp knife and carefully remove the centre cores with a apple corer.
  • Chop the prunes and the apricots and mix these with the raisins.
  • Place oe prepared apple into the centre of each pastry square, and fill the cavities with equal amounts of the dried fruit mixture.
  • Brush the edges of each square with a little water and draw them up and around the sides of the apples, sealing them well with a little water and trimming off the excess pastry to give a neat finish.
  • Roll out the pastry trimmings =, cut into decorative leaves and stick the leaves onto each apples for decoration.
  • Glaze each pastry apple with the beaten egg and place on a lightly greased cookie sheet.
  • Bake the apples in the preheated oven for 20 to 25 minutes or until golden brown.
  • Serve hot with the fresh cream and sprigs of fresh mint.

4 sheets puff pastry (they usually come two to a box)
1 cup sugar
2 tablespoons cinnamon
1 egg

Steps:

  • Thaw your puff pastry.
  • Pre-heat oven to 350 *F.
  • Core and peel apples **DO NOT CUT**.
  • Mix cinnamon and sugar in a bowl.
  • Place each apple on individual puff pastry sheet.
  • Fill center of apple with cinnamon sugar mix.
  • Cover apple on all sides with pastry.
  • Place on greased cookie sheet.
  • In a separate bowl mix wisk egg and brush egg onto pastry.
  • Bake for 30 minutes or until golden brown.
  • Serve hot with vanilla ice cream.

4 tablespoons (1/2 stick) butter, softened
1/2 cup brown sugar
3/4 teaspoon cinnamon

Steps:

  • Preheat the oven to 375 degrees F.
  • Wash and core apples, leaving enough of the core at the base of the apple to contain the filling.
  • Combine the butter, brown sugar, cinnamon and chopped pecans in a small bowl. Roll log shapes of the mixture and press enough into each apple to fill the core.
  • Fill a 2-quart baking dish with about 3/4 cup water, or enough to cover the bottom. Place the apples upright in the dish. Bake until the apples are soft and the filling is browned, 1 hour.

1 tablespoon lemon juice
3 tablespoons dark brown sugar
2 tablespoons granulated sugar
1 tablespoon all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1 store-bought refrigerator pie crust (half of a 14.1-ounce box)
1 egg, beaten

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the top 1/2 inch from the 4 apples. Using a melon baller or spoon, dig out the insides of the apples and reserve, leaving 1/4 inch flesh next to the skin. Remove the cores and seeds and discard.
  • Coarsely chop the scooped fruit and add it to a medium bowl; you should have at least 1 1/2 cups. If not, peel, core and dice the additional apple and add it to the bowl. Sprinkle the lemon juice over top and toss to coat. Add the brown sugar, granulated sugar, flour, cinnamon, nutmeg and salt to the bowl and mix. Divide the filling among the hollowed-out apples.
  • Roll out the pie crust and using a pastry wheel, cut it into 1/4-inch-thick strips. Brush a light coating of egg wash along the top edge of each apple. Weave the strips into a lattice atop each apple, using the egg wash to adhere (see Cook's Note). Lightly brush the top of each lattice with the egg wash.
  • Place the apples in an 8-by-8-inch baking dish. Add 1 inch of water to the bottom of the dish. Cover with foil and bake for 20 minutes. Remove the foil and bake until the crusts are golden brown and the filling is bubbling, an additional 25 minutes. Place the apples on a cooling rack to cool to room temperature before serving.

When I made these for the family at Christmas time, I had a hard time convincing everyone that I actually made them and didn't buy them from a pastry shop (and I'm known for my desserts)! Please try them...they are EXCELLENT!

18 sheets phyllo dough (1 box contains 20)
3/4 lb butter, melted
1 1/2 cups ground walnuts
7 medium granny smith apples, peeled,cored and chopped
1/3 cup lemon juice
3/4 cup dried cranberries
5/8 cup brown sugar
5/8 cup maple syrup
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon mace

Steps:

  • Mix apples with lemon juice to prevent browning.
  • Mix in remaining ingredients below apples.
  • Follow directions on phyllo package to keep sheets from drying out.
  • Cut phyllo sheets in half lengthwise (not crosswise).
  • Working quickly, place one cut sheet of phyllo on damp towel (short end towards you) and brush sparingly with melted butter.
  • Sprinkle with 2 teaspoons walnut crumbs.
  • Place another half sheet over the first, brush with melted butter.
  • Place 1/2 cup of filling on short end of phyllo approximately 2 inches from edge.
  • Add some of the juice from the filling as you make each bundle (don't worry if it leaks a little as you roll).
  • Fold end over filling, roll once then fold in both sides by one half inch.
  • Roll to other end.
  • Press side seams and place on a baking sheet which has been sprayed with Pam.
  • Cover with damp towel.
  • Repeat with remaining phyllo dough and filling.
  • One large baking sheet should hold 9 bundles.
  • Once tray is full, brush each bundle with melted butter and bake in preheated 400 degree oven for about 24 minutes.
  • Make second tray while first one is baking.
  • As soon as bundles are done, remove from oven and tilt baking sheet.
  • Brush the run-off juice over each bundle while still warm.

4 apples, medium, peeled and cored (Macintosh)
1 cup oats, rolled, old fashioned
1 cup brown sugar, loosely packed
1 teaspoon cinnamon, ground

8 ounces phyllo pastry sheets, thawed (half of a box, found in the frozen desserts section of your grocery store)

Steps:

  • Preheat oven to 350°F.
  • In a medium mixing bowl, combine oats, brown sugar, cinnamon, nutmeg and cloves. Stir in 1/4 cup butter, tossing with a fork until crumbly texture achieved.
  • Place one phyllo leaf on a dry kitchen towel and lightly brush with butter, using remaining 1/4 cup of melted butter. Place a second leaf on top of first phyllo leaf and brush with butter. Repeat until four leaves have been used.
  • Place peeled and cored (whole) apple in center of layered phyllo. Gently pick up sides of phyllo and gather evenly around apple. Do not enclose apple. 6 eating apples (grown-up helpers: please score around the circumference of each with a small, sharp knife)
handful of sultanas
2 tbsp light muscovado sugar
1 tsp cinnamon
matchbox-size piece of butter
2 tsp demerara sugar

Steps:

  • Ask a grown-up to turn the oven on to 200C/180C fan/ gas 6. Sit each apple on the worktop and push the apple corer into the centre of each one (or ask a grown-up to do this for you).
  • Mix the sultanas, muscovado sugar and cinnamon together in a bowl.
  • Stand up the apples, side by side, in a baking dish. Using your fingers, push a little bit of the sultana mixture into each apple, using up all the mixture between them.
  • Add a blob of butter to the top of each and sprinkle over the demerara sugar. Ask a grown-up to put the dish in the oven for 20 mins or until the apples are cooked through.

Steps:

  • Preheat oven to 375°F (190°C ).
  • In a small saucepan, cook the apple, brown sugar, cinnamon, and nutmeg over a medium-low heat until softened.
  • Cut three thin strips on a chilled sheet of puff pastry.
  • Cut two of the strips into four and make a small lattice pattern with them. Repeat to make three more lattices.
  • Cut the tops of the apples and scoop out the insides carefully with a melon baller.
  • Mix some of the toffee sauce in and fill with the toffee apple mixture.
  • Place the lattices on top of each apple and drape the remaining strips around the lattice, cutting off any overhang.
  • Place apples in an ovenproof dish, brush the pastry with egg wash and sprinkle over some more brown sugar and cinnamon.
  • Bake for 20 minutes.
  • Serve with ice cream and more toffee sauce.
