BAKED ACORN SQUASH
This is a very easy and yummy vegetable side dish to make!!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place squash in a shallow baking pan, cut side down.
- Bake in preheated oven for 30 minutes, or until tender.
- Turn cut side up; season with salt and pepper, dot with butter and sprinkle with brown sugar and cinnamon.
- Bake for 20 minutes more.

BAKED ACORN SQUASH
Steps:
- Preheat oven to 350 degrees. Place squash, flesh side down in a baking dish and fill with 1/2-inch of water. Bake for one hour or until tender. Scoop out squash flesh to a bowl. Mash squash with butter, sugar and salt and pepper. Serve with extra butter.
ROASTED ACORN SQUASH HALVES
Acorn squash is simply prepared with butter, salt and pepper but the caramelization from being roasted is the secret ingredient.

Steps:
- Preheat oven to 425 degrees F. Halve the squash and scoop out and discard the seeds and strings.
- Put the squash halves on a baking sheet. Brush with the butter and sprinkle them with the salt and a few grinds of pepper. Roast until they are brown and tender, 50 to 55 minutes.
- Transfer the squash to a serving plate and garnish with fresh thyme sprigs if using. Serve warm or at room temperature.
CHEF JOHN'S BAKED ACORN SQUASH
I like how this tastes, but scoring the squash with a knife before baking really makes for a great presentation. It also allows the simple but delicious glaze to penetrate nice and deep.

- Preheat an oven to 400 degrees F (200 degrees C).
- Score the squash by making 1/4-inch deep slashes into the flesh of the squash. Place in baking dish. Brush with orange juice and sprinkle with salt.
- Bake in the preheated oven until lightly browned, about 30 min.
- Meanwhile, simmer butter, maple syrup, brown sugar, black pepper, and cayenne pepper in a small skillet over medium heat until smooth and the sugar has dissolved, about 3 minutes, stirring occasionally.
- Remove the squash from the oven. Pour out any liquid that may have collected in the squash. Brush the glaze over each squash half. Return to the oven until tender, about 20 more minutes. Spoon any glaze that has collected at the bottom of the squash over the edges of the squash. Season with additional salt, if desired.

Steps:
- Preheat over to 375
- Cut squash in half and scoop out seeds.
- Fill each half with 2 Tablespoons butter, 2 Tablespoons honey and sprinkle with nutmeg.
- Put 1/4 cup water in shallow baking dish. (I use a 9x9 pyrex).
- Put the squash in the dish CUT SIDE DOWN. Yes, some of the filling will slide into the water, but that's okay.
- Bake for 40-45 minutes.
- As an alternative, you can microwave the squash loosely covered for 12-15 minutes until tender.

- Slice the squash in half crosswise and scoop out hte pulp and seeds.
- Trim the bottoms, if necessary so they will stand with the hollow side up.
- Place 2 teaspoons of honey in the hollow of each squash.
- Add 1 tbs. of butter or margarine to each squash.
- Place squash in a large, shallow baking pan and bake, uncovered in oven at 350 degrees for about 2 1/2 hours or until squash is tender.

- Line baking sheet with aluminum foil.
- Halve squash and remove seeds and pulp; rinse.
- Add 1 tablespoon honey, 1/4 teaspoon cinnamon, 1/8 teaspoon allspice, 3/4 teaspoon brown sugar, and a pinch nutmeg to each half.
