3/4 cup brown sugar
1/3 cup shortening (or coconut oil)
1/3 cup butter
2 cups flour
1 pinch salt
2 1/4 cups grated coconut
1/4 cup raisins, chopped
1/4 cup dried cherries, chopped
1 tablespoon grated nutmeg
1 tablespoon almond extract
1 1/3 cups evaporated milk
3 tablespoons water
1 tablespoon butter (for pan)
2 tablespoons turbinado sugar

Steps:

  • Preheat the oven to 350*F and lightly grease a bread pan. The original recipe calls for 2 bread pans, but the bread doesn't rise at all so it bakes nicely in one pan.
  • In a mixer cream together the brown sugar, shortening and butter.
  • Add flour, salt, grated coconut, raisins, cherries, nutmeg and mix well.
  • Stir in almond extract, evaporated milk, and water, until a firm dough is formed. (You may need to add additional water.).
  • Split the dough evenly between the two pans, and use a knife to cut a diagonal criss-cross pattern on the top of each loaf. Sprinkle 1 tbsp turbinado sugar over the top of each loaf.
  • Bake for about 1 hour, until a skewer inserted into the center of the loaves comes out clean (Or a digital thermometer reads 190*F.) Cool completely in the pans before removing.

1 cup milk
⅓ cup white sugar
⅓ cup butter
1 tablespoon active dry yeast
4 cups all-purpose flour
½ teaspoon salt
2 eggs
2 tablespoons vegetable oil

Steps:

  • In a small saucepan over medium heat, combine the milk, sugar and butter. Heat until slightly warm to the touch then remove from heat and stir in the yeast. Let stand until foamy, about 10 minutes.
  • In a large bowl, stir together the flour and salt. Mix in the eggs, oil and the yeast mixture. Mix until dough pulls away from the sides of the bowl. Turn dough out onto a floured surface and continue to knead until the dough is smooth and elastic, about 10 minutes. Grease a large bowl with 1 tablespoon of oil. Place the dough into the bowl and turn once to coat. Cover and let stand in a warm place until double in size, about 1 hour.
  • Use remaining oil to grease a cookie sheet or 9x13 inch pan. For plain rolls, punch down dough and divide into 12 equal pieces. Roll the pieces into balls and place them into the greased pan side by side. Let dough rise for 20 to 25 minutes, or until almost double. Preheat oven to 375 degrees F (190 degrees C).
  • Bake for 20 to 25 minutes in the preheated oven, until rolls are golden brown.

1 dry coconut
1 cup water
6 cups flour
6 teaspoons baking powder
2 cups sugar
1 stick butter
1 cup raisins
1/2 cup chopped cherries
3/4 cup mixed peel
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon coconut essence (or mixed essence)
2 tablespoons water
2 tablespoons sugar

Steps:

  • Remove coconut meat from the shell.
  • Chip up meat into smaller pieces for blending.
  • Add chopped coconut to water and blend till fine
  • Empty mixture into a large bowl
  • Mix sugar and water together till sugar dissolves
  • Set aside
  • Heat oven to 350 degrees
  • Add flour, baking powder, butter, and sugar to coconut husk and mix
  • Add raisins, mixed peel, cinnamon, nutmeg, and essence.
  • Mix till combined
  • Pour mixture into 2 greased loaf pans
  • Place in preheated oven and bake until golden. (about 45 minutes)
  • Mix sugar and water together till sugar dissolves
  • Brush baked bread with glaze
