HUNTER STEW
Feel free to use chicken pieces instead. Whatever meat is used it is a warm and comforting dish that is different and tasty. Posted by request from Game Meats forum. Duck would be great here too or any kind of poultry. Adjust other ingredients too such as chicken bouillon and turkey bacon instead of beef and pork. Steps:
- Season meat with salt and pepper and lightly dust with flour.
- In a deep fry pan fry bacon until just done but not crispy.
- Remove bacon from grease and brown meat pieces in grease.
- Cut cooked bacon into bite sized pieces and add to pan along with remaining ingredients.
- Bring to boil. Reduce heat and simmer 1 1/2 hours or until meat is tender.

BELGIAN-STYLE SEITAN STEW WITH DARK BEER
This recipe was found in Robin Robertson's Vegan Planet. My hubby is a brewer, so I naturally gravitated toward this recipe. I think this recipe would be equally as good with sliced portabello mushrooms. It's all about the sauce, which is thick and delicious. The carmelized onions are what makes this so tasty, in my opinion. The note says to serve it over noodles and to wash it down with more of the beer that you use in the stew. I served it over mashed potatoes and a side of steamed broccoli and used (and drank) oatmeal stout. Yum.

Steps:
- Heat 1 Tbsp of the oil in a large skillet over medium-high heat. Add the seitan and cook until browned on all sides, about 10 minutes, Set aside.
- Heat remaining 2 Tbsp olive oil in a large saucepan over medium heat. Add the onion, cover, and cook until softened, about 5 minutes.
- Stir in the brown sugar and cook, uncovered, and stirring frequently, until the onion is caramelized, about 10 minutes. Add the flour, and cook, stirring for 1 or 2 minutes to remove the raw taste.
- Stir in the beer, molases, mustard, vinegar, thyme and bay leaf. Add the stock, and simmer, stirring occasionally, until thickened, 10 to 15 minutes.
- Add the seitan and simmer until the flavors are blended, about 10 minutes.
- Remove the bay leaf and adjust the seasonings with salt and pepper.
- Serve hot and enjoy.

- Heat half of the oil in a large soup pot. Add the onion and garlic and sauté over medium heat until the onion is golden.
- Add 3 cups of water along with the potatoes, carrots, bouillon cube, all-purpose seasoning, and paprika. Bring to a slow boil, then lower the heat, cover and simmer gently for 15 to 20 minutes, or until the potato and carrots are nearly tender.
- Meanwhile, heat the remaining oil along with the soy sauce in a large skillet. Add the seitan pieces and sauté over medium-high heat, stirring frequently, until most sides are nicely browned and crisp, about 10 minutes.
