BACON-WRAPPED LITTLE BOYS
In these politically correct times, this recipe should, I suppose, come with a warning to the mothers of little boys: that it may cause offence. In Australia, cocktail frankfurts have - from time immemorial - been called "little boys". In this simple, super-quick recipe, the little boys are wrapped in bacon, and then microwaved. Then do with them what you will! Use them as the basic ingredient in an upmarket hot-dog, with whatever additional ingredients - salads, cheeses, salsas, sauces - take your fancy, or serve them unadorned as coctail frankfurts - as an appetiser. This version of this rather old-fashioned recipe - popular in the seventies and eighties - is made in the microwave. For the best results, use skinless frankfurts. For Australians, use Don's skinless frankfurts. To the best of my knowledge, there is no equivalent recipe for Bacon-Wrapped Little Girls! This recipe has been adapted from one in Australian chef Margaret Fulton's book 'Microwave Cooking'.

Steps:
- Wrap 1/2 rasher of the bacon around each frankurt, and secure it with a toothpick.
- Place the bacon-wrapped little boys in the microwave, cover with a paper towel and cook for 3-4 minutes, or for the appropriate time, depending on the heat level of your microwave. As always with microwaved food, cook a little at a time, and move the little boys around in the course of the cooking from the outer to middle areas etc.
- Remove the toothpicks, garnish the bacon-wrapped little boys with sprigs of parsley and serve them in hot-dog rolls, as appetisers or with a potato salad.

BACON-WRAPPED SMOKIES
Steps:
- Preheat the oven to 350 degrees F.
- In a large bowl, combine the brown sugar, paprika and cayenne pepper and mix well. Set aside.
- Slice the bacon strips into thirds. Wrap each frank with a piece of bacon, secure with a toothpick and place on a baking sheet. Repeat with the remaining franks and bacon. Thoroughly coat each bacon-wrapped frank in the brown sugar mixture and place back on the baking sheet.
- Bake until the bacon is crispy, 12 to 15 minutes. The rub has a lot of sugar in it, so make sure to turn halfway through the cooking process so the bottoms do not burn.
BACON WRAPPED WEINERS
A cousin of mine loves cooking and shares all her favorites with me. This one came several years ago, I served these to a group and the requests have never ended. These are addictive and delicious.

Steps:
- Line large baking sheet with foil (we don't always do this, but it's easier for cleanup).
- Cut bacon into thirds, resulting in several 3" strips.
- wrap each weiner with bacon, line them loosely in the pan as you go.
- Cover with brown sugar, it'll seem like a lot of sugar, but it cooks down
- Bake 375 for 45 minutes. Broil at the end until top is crisped.
- Hurry and get your share before everyone eats them all!
APPLE JOLLY BOYS
This is a very old recipe people made when the chickens quit laying. It is kinda pancake cross doughnut fried bread. It is sweet made with cornmeal and buckwheat as well as white flour here, but I've seen it with rye flour. I really liked these little pancakes.

Steps:
- Chop apple pie filling fine; add egg, sugar and molasses.
- Add baking powder.
- Add cinnamon.
- Add flour, buckwheat flour, and cornmeal.
- Add water.
- Batter will be very thick.
- Fry on medium, buttering griddle heavily because these pancakes burn easily. Spread out when putting on griddle; they puff a lot.
- Flip over.
- Serve with butter; they don't need syrup.

Steps:
- Heat the oven to 350 degrees F.
- Mix all of the ingredients, except the bacon, together.
- Shape the mixture into 6 small loaves.
- Crisscross 2 of the half slices of bacon across each loaf, tucking the ends under each loaf.
- Place the loaves on a rack in a shallow baking pan and bake uncovered for 50 minutes.
- Let stand for 5 to 10 minutes before serving.
- For OAMC flash freeze on a cookie sheet until firm. Transfer to freezer bag, label and freeze. To serve: place on baking pan and reheat in oven or microwave until warmed through.
