SPINACH AND BACON QUICHE

A friend of mine made this, and I just had to have the recipe. And it is the best tasting quiche I have had in years. Never any complaints when I make it. Great for a fall/winter dinner with a cup of soup.

¾ pound sliced bacon
1 (9 inch) single refrigerated pie crust
6 eggs, beaten
1 ½ cups heavy cream
salt and ground black pepper to taste
2 dashes Worcestershire sauce
5 dashes hot pepper sauce, or to taste
1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
1 ½ cups shredded Cheddar cheese
½ cup chopped green onion
¼ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Chop when cool.
  • Fit the pie crust into a 9-inch pie dish, and set aside.
  • In a bowl, whisk together the eggs, cream, salt, black pepper, Worcestershire sauce, and hot pepper sauce. Spread the spinach into the bottom of the pie crust; top with bacon, Cheddar cheese, and green onion. Pour the egg mixture over the filling, and sprinkle the quiche with Parmesan cheese.
  • Bake in the preheated oven until the top is lightly puffed and browned, and a knife inserted into the center of the quiche comes out clean, 35 to 45 minutes.

I like to have this sometimes on Sunday for brunch when I want something a little eggy/cheesy. Usually I serve it with a light crisp green salad with some sort of vinaigrette. Other times, usually in summer, I will cut up some fresh fruit, like cantaloupe and pieces of watermelon and strawberries and serve with. It makes a nice light meal. This particular recipe is from Barbara Jones.

1 9 inch unbaked deep dish pie shell
2 tablespoons butter, softened
1 (10 ounce) package frozen chopped spinach, thawed
8 ounces bacon, cooked and crumbled
1 cup whipping cream
4 eggs, beaten
1/3 cup shredded swiss cheese
1/2 teaspoon salt
1 pinch nutmeg

Steps:

  • Rub softened butter on the inside surface of pie shell.
  • Drain spinach; squeeze out as much liquid as you can.
  • Place spinach in pie shell and top with crumbled bacon.
  • Whisk together cream, eggs, cheese, salt, and nutmeg.
  • Pour mixture into pie shell.
  • Bake quiche at 425 F for 10 minutes, then reduce heat to 325 F and bake for an additional 35-40 minutes or until quiche is set.

This is the quiche recipe that I created for RSC #11. It starts off with a homemade crust and then is filled with a delighful combination of eggs, bacon, spinach, asiago and cheddar cheeses, shallots or green onions and sun dried tomatoes.

1 1/2 cups all-purpose flour
1/2 cup shortening (I like to used the butter flavored shortening)
1/2 teaspoon salt
1/2 cup cold water
4 eggs
1 1/2 cups milk
1/2 cup shredded asiago cheese
3/4 cup shredded cheddar cheese, divided
8 slices bacon, cooked and chopped
1/4 cup shallots or 1/4 cup green onion, chopped
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/4 cup sun-dried tomato, chopped

Steps:

  • For the crust: Mix flour, shortening and salt together with a fork until crumbly. Add water a little at a time until the dough holds together. Mix lightly with fork. Be careful not to over mix the dough or it will come out tough instead of flaky.
  • Place ball of dough onto a lightly floured surface and roll out to fit a 9" pie pan. Loosely roll the dough onto your rolling pin and place dough in pie pan. Push dough into the pie pan and trim off any excess dough. Finish edges with a fork or by crimping the edges with your fingers.
  • For the filling: In a large bowl whisk together eggs and milk. Mix in the asiago cheese and 1/2 cup of the cheddar cheese. Add bacon, shallots, sun dried tomatoes, salt, and cayenne pepper. Squeeze out the excess liquid from the spinach and add to the egg mixture. Mix everything together until it is well blended.
  • Pour into prepared pie crust shell. Sprinkle with the remaining 1/4 cup of shredded cheddar cheese. Bake at 400 degrees F for 40 minutes or until a knife inserted about 2 inches from the edge comes out clean.

HEARTY BACON-SPINACH QUICHE



Hearty Bacon-Spinach Quiche image

This does not call for heavy cream like many other quiche recipes I've found. The original recipe is from www.marthastewart.com, which I've altered. I use 6 eggs, not 4 eggs as the recipe calls for. The cheeses I used instead of 1 cup cheddar: Norvegia (Norwegian mild white cheese), mozarella and parmesan. It also calls for 2 tablespoons chopped onion, but I substitute dried chives, powdered onion, and powdered garlic. We had it for dinner , but it would make a great brunch.

1 pillsbury refrigerated pie crust, softened as directed on box
2 tablespoons vegetable oil
1/2 teaspoon finely chopped garlic
1 medium onion, chopped (1/2 cup)
1/2 cup cooked crumbled bacon or 1/2 cup real bacon, pieces
1 cup chopped cooked chicken
1 (9 ounce) package frozen spinach, thawed, squeezed to drain and chopped
1 (8 ounce) container sour cream
1/4 teaspoon salt (to taste)
1/4 teaspoon garlic powder
1/8 teaspoon pepper (to taste)
2 cups shredded sharp cheddar cheese
1 1/2 cups shredded asiago cheese
3 large eggs
1/2 cup whipping cream

Steps:

  • Heat oven to 375°; unroll pie crust and press firmly against bottom and side of a 9-inch regular or 9 ½ inch deep glass pie plate; flute edges as desired.
  • Prick bottom of crust several times with fork; bake 10 minutes; cool.
  • Meanwhile, in a large skillet, heat oil over medium heat; add in garlic and onion; cook 2-3 minutes, stirring occasionally, until onion is tender.
  • Decrease heat, stir in bacon, chicken, and spinach; toss to combine.
  • Remove from heat; transfer mixture to a bowl.
  • To the mixture in bowl--stir in sour cream, salt, garlic powder, and pepper until well blended; stir in cheeses.
  • In a small bowl, beat eggs and whipping cream with a fork or wire whisk until well blended; gently fold into spinach mixture until well blended; pour filling over pie crust.
  • Bake 15 minutes; cover crust edge with foil; bake 20-25 minutes or until center is set and edge of crust is golden brown; let stand 15 minutes before serving.

A no fail recipe - one that gets rave reviews whenever someone tries it. So easy yet so yummy! Great hot or cold - ideal for school/work lunches. Freezes well. I quadruple the recipe and cook these in bulk to make life easy. These quantities make either 2 family quiches/pies or about 16 small individual ones (I use muffins tins for these). enjoy!

4 sheets frozen puff pastry
250 g lean bacon, diced
2 onions, diced
2 cups frozen spinach, thawed
1 cup frozen corn kernels
20 g butter
6 eggs
2 tablespoons mayonnaise
1 cup milk
salt
pepper
1 teaspoon whole grain mustard (optional)
1 cup tasty cheese, grated
1 tomatoes, sliced (garnish)

Steps:

  • In a frypan, melt butter and sauté onion and bacon until onion is translucent.
  • Heat spinach and drain on paper towel. Add drained spinach and corn to bacon and onion mix and cook on low for a further 5 minutes.
  • Take off heat and mix in mayonnaise and mustard . Season with salt and pepper to taste. Allow to cool to room temperature.
  • Beat eggs and milk and add to other ingredients. Add 1/2 of the cheese. Stir to combine.
  • Defrost pastry. Grease 2 quiche/pie tins and line with pastry. Divide egg mix evenly between the 2 tins.
  • Top with sliced tomato and remaining grated cheese.
  • Cook in a preheated oven (200°C/400°F) for 25-30 minutes or until golden and set.
