Bacon Cheddar Biscuits - savory and delicious biscuits filled with bacon, onions and cheddar cheese.

2 cups all-purpose flour
1 ½ teaspoon baking powder
1 teaspoon salt
¼ cup butter (unsalted)
10 slices bacon (fried)
1 egg
½ cup milk
4 tablespoon vegetable oil
½ onion (chopped)
1 ½ cups cheddar cheese (shredded)

Steps:

  • Preheat oven to 350 F degrees.
  • Fry the bacon then the onion. Chop up the bacon in small pieces.
  • In a large bowl mix the flour, baking powder, and salt. Using a pastry cutter or 2 forks, cut in the butter until the butter is mixed in well.
  • In a small bowl mix the milk, egg, and vegetable oil then add the wet ingredients into the flour mixture.
  • Add the bacon, onion, and cheddar to the mixture and mix everything well together.
  • Roll out the dough so that it's about 3/4 of an inch in thickness and using a 2" cookie cutter, cut it into biscuits. Bake for 25 min.
  • This recipe yields 12 biscuits.

1 1/2 lb lean (at least 80%) ground beef
1 can (18 oz) Progresso™ Vegetable Classics French onion soup
1 teaspoon salt
1/4 teaspoon pepper
12 slices cooked gluten-free bacon
6 slices (1 oz each) Cheddar cheese
6 gluten-free hamburger buns, split

Steps:

  • Heat gas or charcoal grill for direct heat. Carefully brush oil on grill rack. In large bowl, mix beef, 2/3 cup of the soup, salt and pepper. Shape mixture into 6 patties, about 1/2 inch thick. Spray both sides of patties with cooking spray.
  • Place patties on grill over medium heat. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F. Add cheese slices during last 1 to 3 minutes of grilling or until cheese is melted. Top each burger with 2 slices bacon. Serve in buns.
  • If desired; heat remaining soup until hot and serve with burgers (or reserve for another use).

1 tsp. Baking Powder
3/4 tsp. Salt
1/4 c. Vegetable Shortening (crisco, Etc)
10 tbsp. Milk (whole Milk Is Best)
4 tbsp. Vegetable Oil
1 whole Egg
10 slices Thick Cut Bacon, Fried And Crumbled
1 c. Finely Diced Onion
1 c. Grated Sharp Cheddar Cheese

Steps:

  • Sift together flour, baking powder, and salt. Using a pastry cutter, cut in shortening until all combined. Combine milk, oil, and egg in a separate bowl. Whisk together.Combine flour mixture, milk mixture, bacon, onions, and cheddar cheese in a large bowl. Stir gently until all combined.Spoon batter into greased muffin tins. Bake for 20 to 22 minutes on 375 degrees until golden Remove from pan and serve warm.

3/4 cup (1 1/2 sticks) cold unsalted butter, cut into small pieces or grated
1 1/2 cups shredded Cheddar cheese
1/4 cup chopped fresh chives
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • In a heavy-bottomed skillet over medium-high heat, cook the bacon until crisp and brown. Transfer to paper towels and drain. Chop and set aside.
  • Whisk the flour, sugar, baking powder, salt, and baking soda in a large mixing bowl.
  • Using a food processor, pastry cutter, or fingertips incorporate the chilled butter into the dry ingredients until the mixture resembles coarse meal. Add the Cheddar cheese, fresh chives, and cooked bacon. Mix to distribute the ingredients evenly.
  • Add the buttermilk and stir just until moistened. Using 1/2 cup dough for each biscuit and using a cup measure or an ice cream scoop, drop the biscuits onto the prepared baking sheet, spacing the mounds about 2-inches apart.
  • Bake until the biscuits are golden brown on top, about 15 to 20 minutes or until a tester comes out clean. Serve the biscuits warm with melted butter.

1 small onion, chopped
3 cups all-purpose flour, plus more for dusting
1/3 cup powdered milk
5 teaspoons baking powder
1 tablespoon sugar
2 teaspoons cream of tartar
2 teaspoons kosher salt
1 stick (8 tablespoons) cold butter, cut into bits, plus 4 tablespoons butter, melted
1/2 cup shortening
1 1/2 cups buttermilk

Steps:

  • Preheat the oven to 450 degrees F.
  • In a small skillet, cook the bacon over medium heat until crisp, 5 to 7 minutes. Remove and drain on paper towels until cool, then chop into small pieces. Add the onion to the skillet with the bacon grease and cook over medium-low heat until light golden, about 5 minutes. Drain on paper towels.
  • Stir together the flour, powdered milk, baking powder, sugar, cream of tartar and salt in a medium bowl. Using a pastry cutter, cut the chilled butter bits and shortening into the dry mixture until blended thoroughly. Stir in the bacon and onion. Fold in the buttermilk until the dough comes together.
  • On a lightly floured surface, turn out the dough and use your hands to press into a circle 1 to 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, about 15 minutes.

3/4 cup cake flour
3/4 teaspoon baking soda

2 tablespoons chopped green onions
1 1/4 cups heavy cream

Steps:

  • Preheat oven to 475°F Sift the self-rising flour, cake flour, baking powder, baking soda, sugar and salt into a large bowl. Using your fingers or a pastry cutter, work the 4 tablespoons cold butter into the flour until the pieces are pea size.
  • Add the bacon, cheddar and green onions to the flour mixture. Pour the heavy cream into the flour mixture and, with your hands or a silicone spatula, stir just until the cream and flour come together to form a dough.
  • Use 2 tablespoons of the melted butter to brush the inside of the Cast-Iron Biscuit Pan (Emeril has his own line, but I think any biscuit pan would work). Carefully spoon mixture into each well being sure to divide the mixture evenly between all wells. This will ensure even baking. Gently smooth each top with the back of a spoon or spatula. Brush the tops with the remaining tablespoon of melted butter.
  • Bake in the oven for 10 or 12 minutes, or until golden brown. Allow to cool briefly before running a thin, sharp, small blade around the edge of the biscuit pan and inverting the pan to release the biscuits.
