BACON-WRAPPED GREEN BEAN BUNDLES
Bacon Wrapped Green Bean Bundles are loaded with a herby, buttery flavor and a hint of sweetness! They can easily be made to suit dairy-free, low carb, paleo, and Whole30 diets. They're also naturally gluten-free!

Steps:
- Preheat oven to 400 degrees F. Line baking sheet with parchment paper or foil for easy cleanup. Separate the bacon slices and lay flat on the baking sheet. Bake for 8 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Cook the green beans for 2 minutes, just until they are bright green and slightly tender. Drain and rinse with cold water for 1 minute immediately or put in ice bath. Pat dry.
- Combine butter, garlic powder, and salt in a small bowl. Pour over green beans, tossing to coat.
- Wrap 8-10 green beans into a bundle with half a piece of bacon, securing with a toothpick. Lay on the baking sheet and repeat until all of the beans are wrapped. Combine brown sugar, pepper, and rosemary. Sprinkle over the bundles.
- Bake for 15-20 minutes until the bacon is crispy and the green beans are tender. Sprinkle with chopped parsley.

GREEN BEAN CASSEROLE WITH BACON
Frozen French-cut green beans can be used in place of fresh to save time. Make sure to thaw them first, drain well, and pat dry with paper towels.

- Heat 1/2 inch of safflower oil in a medium skillet over medium-high. Toss shallot rings with 1 tablespoon flour. Fry the shallots in batches, turning frequently, until golden brown, about 3 minutes. Transfer to paper towels to drain. Season with salt.
- Cook green beans in a large pot of salted boiling water until bright green and just tender, about 5 minutes. Drain and rinse with cold water to cool. Drain well and pat dry with paper towels. Trim beans, slice in half lengthwise, and cut into 2- to 3-inch pieces.
- Preheat oven to 375 degrees. Heat a large straight-sided skillet over medium-high. Add bacon and cook, stirring occasionally, until browned, about 8 minutes. Transfer to a paper towel-lined plate. Drain and discard fat.
- Return skillet to medium-high. Add butter, onion, and mushrooms. Season with salt and pepper. Cook, stirring occasionally and scraping up brown bits on the bottom of skillet as the vegetables release their juices, until tender and just beginning to brown, about 4 minutes. Reduce heat to medium. Add remaining 3 tablespoons flour and cook, stirring, until mixture begins to turn golden, 1 minute. Slowly stir in milk and continue stirring until mixture coats the back of a spoon, about 13 minutes. Remove from heat. Stir in mustard, cayenne, and Worcestershire. Season with salt and pepper. Stir in cooled green beans and 1/2 cup reserved cooked bacon.
- Transfer mixture to a 2 1/2-quart shallow baking dish; cover. Bake until mixture is bubbly and heated through, 15 minutes. Uncover, top with remaining bacon and fried shallots, and serve immediately.

- Preheat the oven and smoker. Preheat the oven to 400 degrees F. Also preheat your smoker to 275 degrees F with your favorite hard wood. I recommend pecan, apple, hickory, or alder for this recipe.
- Bring a pot of water to a boil. Fill a large pot with water and stir in 1 tablespoon of salt. Bring to a boil.
- Prepare your crunchy onion strings. Place your sliced onions in a gallon-sized zip top bag and pour in the gently beaten eggs. Toss to coat onions in the eggs. In a small bowl, combine 1/4 cup of the flour, the panko, and 1 teaspoon salt. Pour into a shallow pan. Transfer the egg coated onions to the panko mixture and toss gently to coat.
- Bake the onions. Cover a baking sheet with a piece of aluminum foil and coat liberally with nonstick spray. Evenly distribute the onions on the foil, making sure they don't overlap too much. Bake in the high temperature oven, stirring gently every 5 minutes for a total of 20 minutes. Remove when the onions are golden brown. Set aside to cool until needed.
