Bacon & Gorgonzola Potato Salad image

Dressed in a rich, creamy sauce flavored with Gorgonzola cheese, chives and bacon, this potato salad is sure to be a hit. I like to make it ahead so the flavors have time to blend. -Barbara Spitzer, Lodi, California

Number Of Ingredients 12

1-3/4 pounds potatoes, peeled and cubed
3/4 cup mayonnaise
3/4 cup sour cream
4 green onions, thinly sliced
1 celery rib, finely chopped
2 tablespoons minced chives, divided
1/2 teaspoon salt
1/2 teaspoon coarsely ground pepper
1/4 teaspoon sugar
1 cup crumbled Gorgonzola cheese
1 cup bacon bits, divided
2 plum tomatoes, peeled, seeded and chopped

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain and cool., Meanwhile, in a large bowl, combine the mayonnaise, sour cream, onions, celery, 1 tablespoon chives, salt, pepper and sugar. Stir in cheese and 1/2 cup bacon bits. Fold in tomatoes and potatoes. Cover and refrigerate for at least 1 hour. Just before serving, sprinkle with remaining chives and bacon.

4 ounces bacon or 4 ounces turkey bacon
3 tablespoons gorgonzola
1 teaspoon sea salt
2 teaspoons ground black pepper
4 whole grain buns
2 ounces spinach
1 tomatoes, sliced

Steps:

  • Dice bacon and fry until crisp. Drain.
  • Crumble Gorgonzola cheese and set aside.
  • Divide ground beef into eight thin patties.
  • Top four of the patties with the bacon and Gorgonzola, dividing it evenly.
  • Top with the four remaining patties, close and seal the burgers.
  • Sprinkle with salt and freshly ground pepper.
  • Cook over a hot fire for 2-3 minutes per side.

12 strips bacon, diced (1/2 - 1 lb)
1 loaf frozen bread dough, thawed
2 tablespoons oil, divided
1 cup shredded mozzarella cheese
1 (1 ounce) envelope ranch dressing mix

Steps:

  • Cook bacon until half done; drain on paper towels.
  • Roll out dough to 1/2 inch thick, brush with 1 T oil.
  • Cut into 1 inch pieces, place in large bowl.
  • Add bacon, cheese, dressing mix, and remaining oil.
  • Toss to coat.
  • Arrange pieces in a 9in by 6in oval on a greased baking sheet.
  • Layer as needed.
  • Cover and let rise until doubled (30 minutes).
  • Bake at 350* for 15 minutes, cover with foil and bake 8 minutes more, until golden.

1 (16.3 ounce) can refrigerated biscuit dough (such as Pillsbury Grands!®)
1 (12 ounce) package bacon, chopped
1 yellow onion, chopped
2 (4 ounce) containers crumbled Gorgonzola cheese
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with cooking spray.
  • Separate each biscuit into 4 pieces; roll into balls.
  • Combine bacon and onion in a large skillet over medium-high heat. Cook and stir with wooden spoon until browned, about 5 minutes. Stir in biscuit balls, Gorgonzola cheese, and Parmesan cheese. Pour into the prepared tube pan and spread evenly.
  • Bake in the preheated oven until top is golden and biscuits are cooked through, 20 to 30 minutes. Cool for 10 minutes in the pan; invert onto a serving plate.

5 lbs yukon gold potatoes, peeled, cut into 3/4-inch cubes
2 1/2 cups mayonnaise, divided
3/4 lb bacon, slices
2 cups gorgonzola, crumbled
1 cup green onion, chopped
1/4 cup fresh parsley, chopped

Steps:

  • Cook potatoes in large pot of boiling salted water until just tender, about 5 minutes. Drain potatoes; return to same pot. Place over very low heat just until excess moisture evaporates, about 1 minute. Transfer hot potatoes to large bowl; Cool 10 minutes(minimum). Mix in 2 cups mayonnaise, low fat variety optional.
  • Cook bacon in large heavy skillet over medium-high heat until brown and crisp. Transfer bacon to paper towels to drain. Cool bacon; crumble coarsely.
  • Mix remaining 1/2 cup mayonnaise, cheese, green onions, parsley and half of bacon into potatoes. Season salad to taste with salt and peper (I prefer a mixture of white and cayenne pepper and seasoning salt) Sprinkle with remaining bacon. (Can be made 2 hours ahead. Let stand at cool room temperature.).

It has been noted by one reviewer - that this dish should be used as a side to breakfast or brunch. Update: 07/21/2008. . . . . . . made this again for supper as I like to serve a light meal - we added more fresh mushrooms, we added more green onions, some pimentos and of course more eggs & bacon. :)

1/4 cup finely chopped green onion, both green and white parts (4 medium)
cooking spray

Steps:

  • Preheat oven to 350°F.
  • Spray 11x7" or 12x8" (2 quart) glass baking dish, with cooking spray.
  • In a large bowl, beat egg and milk with wire whisk until smooth.
  • Separate dough into 8 biscuits; cut into quarters.
  • Gently stir biscuit pieces into egg mixture to coat evenly.
  • Fold in bacon, cheese, mushrooms and onions.
  • Spoon mixture into sprayed dish; arrange biscuit pieces in a single layer.
  • Bake for 23-28 minutes or until golden brown.
  • Cut into squares or just apull-apart.
