CHEDDAR BACON PUFFS
Steps:
- Gather the ingredients.
- Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- Preheat the oven to 400 F.
- In a medium saucepan, combine the water, milk or light cream, salt, and butter. Put over high heat and cook, stirring, until butter is melted. Bring to a boil.
- With a wooden spoon , stir in the flour all at once. Continue stirring until the dough leaves the sides of the pan and forms a ball.
- Transfer the hot dough to a large mixing bowl or the bowl of a stand mixer with paddle attachment. Let the dough rest for 2 minutes.
- Beat the hot dough on low speed for 1 minute. Quickly beat in the first egg, beating until thoroughly blended into the dough. Continue beating in the remaining eggs, one at a time, beating well after each addition.
- Beat in the shredded cheese, bacon, cayenne, and freshly ground black pepper. Continue beating until the dough is smooth and well blended.
- Using a tablespoon measure or small cookie scoop, drop the dough onto the parchment lined baking sheets. With moistened fingers, smooth any peaks on top of the mounds of dough. If peaks are left, they tend to over-brown or burn.
- Bake the puffs for about 20 to 22 minutes, until nicely puffed and golden brown.
- Serve and enjoy!

- In a large bowl, combine the cheese, bacon and soup mix. Crumble beef over mixture and mix well. Shape into eight patties., Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with lettuce and tomato if desired.

- Preheat your oven to 375 degrees F (190 degrees C) and line a baking sheet with parchment paper.
- Cook the bacon in a large frying pan or non-stick skillet over medium heat until crisp, about 5-6 minutes. Flip the bacon about halfway through the cooking time. Transfer the cooked bacon to a paper towel-lined plate and set aside.
- On a very lightly floured working surface, roll out the puff pastry sheets. *Gently open the sheets, and use a dab of water to seal any cracks.
- Use a sharp knife to cut the pastry sheets into 4-6 squares. I am using the larger squares, so I only cut 4 sections per sheet.
- Lay a slice of bacon over the center of each square diagonally then top with a sprinkle of the grated cheddar cheese.
- Bring in two opposite corners, laying the first down then folding the other corner over the first. *You can use a dab of water to help seal the folded puff pastry corners. Pinching the corners together will also help to prevent the ends from separating during baking.
- Coat the entire exposed surface of the puff pastry with the egg wash and then transfer them to your prepared baking sheet. Be sure to leave spacing between the pastries as they will expand.
- Bake at 375 degrees F (190 degrees C) for 15-20 minutes or until the pastries are golden and the cheese is fully melted.
- Remove from the oven and allow to cool on the baking sheet for about 5 minutes before serving.

EASY CHEDDAR AND BACON SNACK TOASTS
These can be made days in advance, covered and frozen, just remove from the freezer, thaw and pop in the oven, these make a wonderful weekend snack or they are wonderful to serve at a get together! If possible purchase the extra thin sandwich bread for this, thinly sliced pumpernickle party rounds work well also. Double or triple the recipe and keep some ready in the freezer for snacks!

- In a bowl mix together grated cheddar cheese, bacon, horseradish, garlic powder, salt, pepper and cayenne (if using) until very well blended.
- Spread about 2 tablespoons of the mixture evenly to the edges of the bread slices.
- Arrange the slices on a baking sheet in one layer.
- Place in the freezer for about 20 minutes or until firm but still able to slice.
- Cut each bread into 4 squares, then place onto a baking sheet.
