- Cook beef and onion in a large skillet over medium heat until meat is no longer pink; drain and set aside., Place crust on an ungreased 12-in. pizza pan. Spread with pizza sauce. PIZZA WITH CARAMELIZED ONIONS AND CRISPY BACON

- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
- In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
- On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
- Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
THREE-CHEESE BACON PIZZA

- Put a pizza stone or inverted baking sheet on the lowest oven rack and preheat to 475 degrees F for at least 15 minutes. Meanwhile, roll out the dough into a 9-inch round on a lightly floured surface. Lightly dust a pizza peel or another inverted baking sheet with flour; lay the round of dough on top and set aside. Cook the bacon in a large skillet over medium heat, stirring, until crisp, about 6 minutes. Remove with a slotted spoon and drain on paper towels. Combine the tomato sauce, olive oil, garlic and oregano in a medium bowl; season with salt and pepper. Slide the dough directly onto the hot stone or baking sheet and bake until lightly golden and puffy, about 7 minutes. Remove from the oven and let cool slightly, then carefully slice the crust in half horizontally with a serrated knife to make 2 thin crusts. Turn the crusts cut-side up. Spread with the sauce mixture, then top evenly with the mozzarella, cheddar and bacon. Slide the pizzas back onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, about 8 more minutes. Sprinkle with the parmesan.
BACON CHEESEBURGER PIZZA
The secret to this delicious pizza is to pre-bake your crust firstly and brown your beef well, then top as stated in directions and bake just to heat through and until the cheese has melted. This is a hearty pizza that can be made using store-bought refrigerated pizza dough or homemade, just make certain to pre-bake the crust before topping. This can also be made using a store-bought Boboli pizza crust. The success of this recipe will also depend on your pizza sauce, I use my recipe#65641 it is a hearty full-flavored pizza sauce that works well for this recipe and of coarse any pizza! You can add in some green bell peppers and jalapeno peppers to the ground beef mixture also if desired. The ingredient amounts are enough for one 12-inch pizza, you can double the complete recipe to make two if desired.

- Pre-bake the pizza crust in a 400 degrees oven until golden brown and baked.
- Place the pizza crust on a pizza pan or baking sheet (if you already baked your crust on a pizza pan then leave on the pan).

- Heat oven to 220C/fan 200C/gas 7. Mix the flour, salt and baking powder in a bowl, then rub in the butter until it disappears. Mix the eggs and milk together, then stir into the dry ingredients to make a soft dough. - Thirty minutes before you plan to make the pizza, position a rack at the lowest level in the oven and put a pizza stone on it. Preheat the oven to 500 degrees F.
- Cook the bacon in a large skillet over medium heat, turning as needed, until almost crisp, about 10 minutes. Transfer the bacon to a paper towel-lined plate. Let cool, then crumble and set aside. Reserving the bacon drippings in the skillet.
- Meanwhile, place the broccoli in a mesh strainer or fine colander and run cold water on it to thaw. Set it over a bowl to strain out excess water. Put it in a medium bowl, pour 2 tablespoons of bacon drippings over it, sprinkle with some salt and pepper and toss to coat; set aside.
- Dust the work surface with a little flour. Put the parchment paper on a pizza peel or the back of a baking sheet. Halve the pizza dough and cover one half with a towel. Drape the other half over your fist and gently tug and turn it, letting the weight of the edges help stretch it thinner, until you have a round about 1/4-inch thick and 12 inches across. Place the dough on the parchment and scatter with 1 cup of the Cheddar, then half the broccoli, leaving a 1-inch border. Slide the parchment onto the hot pizza stone and bake for 5 minutes.
- Crack 1 egg into each of three small bowls. After the pizza has baked for 5 minutes, rotate it and slide the eggs onto it, spacing evenly. Scatter 1/2 cup of the remaining cheese and half the bacon on top. Bake until the pizza is browned and crisp on the bottom, the egg whites are set and the yolks are still runny, about 5 minutes. Transfer the pizza to a cutting board and let sit for 2 minutes to allow the eggs to set. Repeat with the other half of the dough and the remaining ingredients. Slice and serve with crushed red pepper flakes or hot sauce.
