The perfect crispy melty brie grilled cheese sandwich with melty crispy bacon and sweet caramelised onions. This is fall comfort food at its best.

2 large onions (sliced)
1 tablespoons olive oil
1/2 teaspoon salt
2 tablespoons brown sugar
2 tablespoons red wine vinegar
250 g bacon (cooked until crisp)
120 g brie cheese (sliced)
8 slices bread of your choice

Steps:

  • To make the caramelised onions, heat a large frying pan over medium heat then sauté the onions in the olive oil with the salt until soft and golden. Add the sugar and vinegar and allow to caramelise. Set aside.
  • To make the sandwich, butter the bread on both sides then top with the onions, brie cheese and bacon.
  • Grill in a hot pan/sandwich press until golden brown and heated through.
  • Serve immediately.

1 Tbsp extra virgin olive oil
1 tsp balsamic vinegar
1 Tbsp white sugar
1 large white onion, sliced
4 slices bacon, cooked until crispy
2 Tbsp butter, softened
1/4 cup Parmesan cheese
4 slices Swiss cheese
8 slices whole wheat bread

Steps:

  • In a skillet, add the olive oil, balsamic vinegar and sugar. Add the sliced onions and heat them on low, stirring often, for 30 minutes to caramelize them.
  • Bake the bacon until crispy, about 25 minutes.
  • While the onions are caramelizing and the bacon is cooking, stir together the softened butter and Parmesan cheese. Spread the Parmesan butter on the insides of the bread. Butter the outsides of the bread for grilling.
  • Once the onions have caramelized, place them onto a plate and gently pat them dry. (You don't want them to be too runny and make the bread soggy before grilling.)
  • Add a slice of Swiss cheese, some of the caramelized onions and a slice of bacon (broken in half) onto the buttered breads. Grill on a skillet or electric griddle. Flip carefully to prevent onions from sliding out!
  • Enjoy!

2 tablespoons canola oil
5 tablespoons unsalted butter, softened
2 large onions, sliced
2 teaspoons sherry vinegar
1 teaspoon sugar
12 slices rustic Italian bread (each about 1/2-inch thick)
8 ounces Gruyere, thinly sliced

Steps:

  • Heat the canola oil and 1 tablespoon butter in a large saute pan over medium heat. When the butter is melted, add the onions and cook, stirring occasionally, until dark brown and caramelized, about 25 minutes. Add the vinegar, sugar and 2 tablespoons water, scrapping up any dark bits that have accumulated on the bottom of the pan. Continue to cook until all the liquid has evaporated. Transfer the onions to a bowl and reserve.
  • Butter 1 side of each bread slice. Lay 6 slices butter-side down on a work surface. Top each with 2 slices of Gruyere, a dollop of the onions and 2 more slices of Gruyere. Top with another slice of bread, butter-side up.
  • Heat a cast-iron griddle over medium heat. Add the sandwiches and cook until the cheese begins to melt and the bread is golden brown, 2 to 4 minutes. Flip and continue to cook until golden brown and the cheese is melted through, 2 to 4 minutes. Cut in half and serve immediately.

3 tablespoons unsalted butter, at room temperature
1 small yellow onion, thinly sliced
1 teaspoon fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1 tablespoon plus 1 teaspoon Dijon mustard
1/4 cup shredded sharp Cheddar
1/4 cup shredded Gruyere cheese
1/4 cup diced Robiola cheese
1 tablespoon prosecco
2 teaspoons fresh parsley, chopped
1 clove garlic, minced
Four 1-inch-thick slices brioche

Steps:

  • Heat 1 tablespoon butter in a medium skillet over medium heat. Add the onions and sprinkle with the thyme, 1/2 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until the onions are browned and tender, about 20 minutes. Turn off the heat and stir in 1 tablespoon of the Dijon mustard and 1 tablespoon water to coat the onions. Transfer to a bowl and set aside.
  • Heat a griddle over medium heat.
  • Buzz the Cheddar, Gruyere, Robiola, prosecco, parsley, garlic and remaining 1 teaspoon Dijon mustard in a food processor until combined but still chunky and spreadable. Evenly spread the cheese mixture over one side of each slice of bread. Top 2 slices with the onion mixture and then sandwich the onions with the other 2 slices, cheese-side in. Spread the remaining butter on the outside of each sandwich and season with salt and pepper. Griddle the sandwiches over medium heat until golden brown on the first side, about 5 minutes. Flip and continue to cook until the cheese is melted and the exteriors are crispy, about 5 minutes more.

2 boneless skinless chicken breasts
1 tablespoon extra virgin olive oil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon white pepper
1/4 teaspoon paul prudhomme magic poultry seasoning
4 slices thick bacon (deli style thick -diced into small pieces)
1 medium vidalia onion (diced)
1 tablespoon bacon drippings
1/4 cup light brown sugar
2 slices boar's head colby-monterey jack cheese (or other Deli brand, sliced thin)

Steps:

  • Preheat oven to 350.
  • Heat Oil in pan. Sprinkle spices on both sides of each chicken breast. Add chicken breasts to hot oil and turn to medium high heat. Brown on both sides until golden (approx 4-5 minutes).
  • Add 1 tablespoon bacon drippings, diced onion and brown sugar. Stir well then turn heat down to medium and cover. Cook for 20 minutes stirring occasionally. Turn chicken over and cook an additional 15-20 minutes or until chicken is completely done (when juices run clear).
  • Move chicken to a baking dish and pour caramelized onions and brown sugar sauce over chicken. Drain excess grease. Cover and put off to the side. Using same pan you just cooked the chicken in fry diced bacon until crisp. Sprinkle over chicken. Top with cheese (1 slice per chicken breast) and place in oven. Bake until cheese is completely melted (approx 1-2 minute depending on how thick you get your cheese. I get mine sliced very thin). Remove from pan and place on plate making sure to place any fallen bacon pieces back on chicken before serving.

8 slices ciabatta, italian or 8 slices challah
4 slices cheddar cheese
4 slices monterey jack pepper cheese or 4 slices other spicy cheese
1 large red onion, thinly sliced
3 tablespoons softened butter, divided
2 -4 tablespoons barbecue sauce

Steps:

  • Melt 1 tbsp of butter in a skillet over medium heat. Add the sliced red onion and stir occasionally until color changes to slightly brown and taste is sweet, about 10-15 minutes. Remove onions from skillet and set aside.
  • Spread 1 tablespoon of the remaining butter onto one side of each slice of bread.
  • Divide barbecue sauce evenly among 4 of the slices and spread evenly opposite the butter side. Lay cheddar cheese on top of sauce. Divide caramelized onion among the sandwiches, then top with pepper jack. Finish assembly by placing remaining bread slices on top. The butter sides of the bread should both be on the outside of the sandwiches.
  • Place 2 sandwiches in the skillet and cook sandwiches two at a time, flipping when bread is golden brown on one side and cheese begins to melt. If cheese is not melting quickly enough, place a lid over the pan or use a heavy skillet to place on top and press the sandwiches down.

This is a delicious sandwich that will satisfy your bacon and cheese craving, with caramelized onion for extra flavor. This recipe is a little time consuming and you have to keep your eye on the onion and bacon, but it's well worth it.

4 slices bacon
1/2 cup sliced onion
1 -2 slice cheese (any flavor)
2 slices white bread, toasted
2 tablespoons butter
1 tablespoon mayonnaise (optional)

Steps:

  • Place bacon on a baking sheet lined with foil. Place in cold oven and set oven to 400°F
  • While the bacon is cooking, heat a skillet or small saucepan to medium heat. Add butter. Once the butter starts to melt, add the onion. Cook onion, stirring frequently, about 15-20 minutes or until a caramel color develops and onions are very soft. Add more butter as needed.
  • After 15 minutes, check on the bacon. If it is cooked to your liking, remove the baking sheet from the oven and place bacon on a plate lined with paper towels. Set aside.
  • 1-2 minutes before the onions have finished cooking, place cheese slices on top of the onions and allow to melt.
  • If using, spread mayonnaise on each slice of bread. Place bacon on one slice of bread, then top with the onion and cheese. Top with other slice of bread to form a sandwich.
