BACON AND EGG SPAGHETTI

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain, reserving 1 cup of the cooking water.
- Meanwhile, heat the olive oil in a separate large pot over medium-high heat. Add the bacon and cook until crisp, 7 to 9 minutes.
- Add the pasta, 1/2 cup reserved cooking water and the parmesan to the pot with the bacon. Cook, stirring and adding more cooking water as needed, until coated; season with salt and pepper.
- Meanwhile, heat the remaining 2 teaspoons olive oil in a large nonstick skillet over medium heat. Add the eggs and cook until the whites are set but the yolks are still runny, about 4 minutes; season with salt and pepper. Top the pasta with the eggs and chives.
BACON CARBONARA PASTA

- Cook the pasta in a large pot to one minute less than the directions on the box and keep 1/2 cup of pasta water to the side to drain pasta (do not rinse pasta).
- In a large skillet add the bacon and cook it until crisp then turn off the heat and remove the bacon with a slotted spoon then add the pasta and toss it in the bacon fat.
- Add the eggs, salt, pepper and Parmesan cheese to a large bowl and whisk well before adding slowly while tossing the hot pasta quickly to prevent it from scrambling.
- Add in 1/4 cup of the pasta water and peas, tossing again to create a saucy consistency to the pasta then topping with bacon before serving.

BACON AND EGG NOODLES
My grandma used to make this all the time. It was an easy meal and has only 3 ingredients. Of course grandma, made her own noodles. I use the thin soup noodles because they absorb so much of the flavor but feel free to use any noodles of choice. Thin spaghetti works well too.

- 1. Cook bacon until crisp in a large skillet, non stick preferred. Crumble and set aside. Drain and save bacon grease in a small bowl. Set skillet aside for now.
- 2. Boil noodles according to package directions. Drain well and add to the skillet. Add the crumbled bacon. Add 2 tablespoons of reserved bacon grease and 2 tablespoons of olive oil (or just use all bacon grease). Turn heat to medium - medium/high and stir fry until well combined and noodle are all coated with the oils.
- 3. Crack eggs into a bowl and whisk well. Add a little salt and pepper. Pour egg mixtures over hot noodles and continue to stir fry until all looks cooked through. Stir continuously or you will end up with an omelet under the noodles. Salt and pepper to taste and serve. Enjoy!

I love bacon, noodles and cheese, they are even better together! I came up with this because I wanted something different...it is a rich casserole so if you get heartburn easily...don't eat it! Lol. :)

- Heat oven to 375 degrees.
- Fry the bacon until it's crispy, drain on paper towels and crumble.
- Cook egg noodles as directed on package, drain and toss with the 2 tablespoons butter.
- In a 2 quart casserole layer as follows: 1/4 of the noodles, 1/4 of the sour cream, 1/4 of the cheddar cheese, 1/4 of the bacon and 1/4 of the onion.
- Repeat these layers 3 more times.
- Bake the casserole in preheated oven, uncovered for 30 minutes.

- Preheat oven to 350°. In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 1/3 cup drippings. In the drippings, saute onion until tender. Stir in the flour, salt and pepper until blended. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. - In a large pot, add the olive oil and bacon and cook until starting to crisp. Drain and set the bacon back in the pot, reserving the bacon fat.
- In a large pan, add the butter, bacon fat and onions and saute until soft. Add the cabbage and cook until tender and slightly golden (cabbage will reduce substantially in volume). Add a drizzle of olive oil and season with salt and pepper.
- Cook noodles according to the package directions. Once cooked, drain (reserving some of the pasta water).
- Transfer the cabbage mixture to the pot with the bacon pieces, then add the noodles to the cabbage pot.
- Mix in the sour cream and toss to combine. Add some of the pasta water to moisten pasta, if required.

- Snip bacon into small pieces with a scissors and cook in a large skillet over medium heat until crisp, stirring often, about 10 minutes. Cook and stir onion with bacon until translucent, about 5 more minutes; set bacon and onion aside, leaving drippings in the skillet.
- Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.
- Transfer bacon and onion mixture with drippings into the pot used to cook the noodles and cook and stir cabbage until coated with drippings. Cover pot and cook until cabbage is tender, 10 to 12 minutes, stirring occasionally. Gently stir in noodles and season to taste with salt and black pepper.

BACON AND EGG SPAGHETTI
I found this recipe in an old Italian cookbook. It's really easy to make and best of all it will be absolutely DEMOLISHED at the table. Especially by the kids. Enjoy!

Steps:
- Bring some salted water to the boil in a large pot for cooking the spaghetti.
- In a medium bowl lightly break and stir eggs with a fork and fold in about 1-1/4 cups of cheese.
- Slice the bacon rashers into small cubes or thin strips if you prefer.
- Use the edge of a knife to crush the garlic cloves without breaking them up too much. (You want the garlic cloves to remain reasonably whole)
- In a large skillet over a medium high heat pour the olive oil and add the garlic.
- While the garlic's cooking use a wooden spoon to press down on the cloves to release the flavour.
- After a minute or two add the chopped bacon and cook for about 5 minutes. (Don't let the bacon get crispy).
- When the bacon's cooked remove garlic cloves and turn down to a low heat.
- Cook spaghetti to packet instructions (al dente) and drain.
- In the same pot (used to cook the spaghetti) add a little olive oil and return the cooked spaghetti.
- Mix in the bacon and hot oil, egg and Parmesan mixture and chopped parsley tossing lightly with tongs. (The eggs, bacon and cheese should stick to the pasta) .
- Pour onto a warm dish and garnish with a little leftover parmesan and parsley.
- Serve with piping hot garlic or herb bread-- YUM!
