APPLE BACON DUTCH PANCAKE
Apple Bacon Dutch Pancake (Pannenkoeken) in a thin and round crepe-like pancake filled with apple and bacon.

- Step 1 In a liquid measure or a medium bowl, add the flour, salt and sugar. Mix well with a fork. In a separate cup, add the milk and egg and beat well. Add the wet to the dry, stir to incorporate it all, and set aside for 30 minutes. Step 2 Meanwhile, make the fillings: In a small, nonstick sauté pan (the same one that you'll use for the pancakes), melt the butter and add the apples. Cook until the apples are soft and slightly brown, about 10 minutes. Set aside. Step 3 In the same pan, add the strips of bacon, and cook until crispy. Drain the fat and set aside to drain on a paper towel. Step 4 Preheat the oven to 200F. Step 5 Once the fillings are made and the batter has set, make the pancakes. Step 6 Coat the pan with melted butter, a bit of oil or cooking spray over medium heat (this is important- we're cooking lower and slower so they don't burn). Pour 1/4 cup of batter into the center of the pan and swirl to spread evenly. Add the fillings in a thin layer, and drizzle about another 3 TB of batter over the fillings. Once the top starts to set a little and the bottom layer is brown, carefully give it a flip. Cook another 2 minutes on the second side to let the batter set. Step 7 Place in a single layer in a baking rack, and let stay warm in the oven until all the pancakes are made.

This makes a tasty dessert for a dinner party. You can use a pizza cutter to slice it into wedges and serve it with some vanilla ice cream.

- Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
- Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
- Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
- Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

- Preheat oven to 375°. In an 8-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels to drain, reserving drippings., Add apple to drippings; cook and stir over medium-high heat until crisp-tender, 2-3 minutes. Remove from heat. Pancakes (pannekoeken) are a Dutch tradition. There are pancake houses all over the Netherlands. As a kid I loved to go to the pancake house. Typically they make the pancakes very large and serve them for any meal. The pancake is generally served with powdered sugar or heavy Dutch syrup (stroop), and the menu typically offers quite a variety including ham and pineapple, ham and cheese, apple and raisins, assorted fruit, mushrooms, or my favorite - bacon and apple. This recipe was posted on About.com by Karin Engelbrecht, their guide to Dutch Food.

- Mix flour, baking powder, salt and a little of the milk to a smooth paste. Slowly add the remaining milk, while whisking. Add the egg, beating the mixture well. For a lighter texture, leave to rest for a few hours or overnight.
- Melt the butter and oil in a large frying pan and wait until it sizzles. Pour in enough of the mixture to cover the entire surface of the pan (spread the mixture evenly by tilting the pan). Bake until bubbles appear on the surface and turn over. Pancakes should be pale golden on both sides. Set aside and keep warm.
- Fry bacon in the pan until crisp. Remove to a paper towel to drain. Now add the sliced apples to the bacon fat and caramelize. Drain on paper towels. Serve pancakes open-faced on the plate, top with apples and bacon and drizzle some syrup on top.

This is a puff pancake. I've also heard it called "German pancake" or "Dutch Baby".It is a slightly sweet eggy breakfast. It's quick, showy and unusual. Perfect for company brunch.It's an oral recipe so I'm not even for sure this is the proper spelling but it's a favorite at our house.

- Heat oven to 400°F.
- Beat eggs, flour, milk, sugar and salt in small mixing bowl on medium speed for 1 minute.
- Prepare apples and fold into mixture.
