OVEN BBQ CHICKEN

Steps:
- Preheat the oven to 400 degrees F.
- Heat the oil in a medium saucepan over medium heat. Add the garlic, onion, paprika, chili powder and smoked paprika and cook, stirring occasionally, until the onions soften, about 8 minutes. Add the ketchup, vinegar, butter, Worcestershire and 1 cup water. Bring to a simmer and cook, stirring occasionally, until slightly thickened and the flavors have blended, about 10 minutes.
- Pat the chicken dry and season all over with salt and pepper. Arrange the chicken skin-side down on a rimmed baking sheet. Pour the barbecue sauce over the chicken and cover with foil. Bake about 25 minutes. Remove the foil and continue to bake until the chicken is beginning to brown in spots, about 15 minutes. Turn the chicken skin-side up and bake until golden and browned in spots, about 15 minutes more. Toss to coat with the sauce on the baking sheet and serve.

- Add all other ingredients in water which is boiling.
- Pour over chicken.
- Close foil and bake at 350 degrees for 1 1/2 hours.
- Use sauce for gravy.

LAZY BACHELOR'S CHICKEN
I'm a lazy bachelor cook, but I prefer to actually cook my meals rather than go to restaurants or order something in. What I love in a recipe is 'ease of preparation and cooking' This recipe came from a girlfriend and I've always impressed guests when I serve it! It's very easy and tastes great!

Steps:
- In a bowl, mix can of mushroom soup, onion soup mix, can of sliced mushrooms& stems (including the liquid contained in the mushroom& stems can), one can (10 oz.) of milk and the rice.
- Mix all the ingredients together well.
- In a greased casserole dish, pour half of the mixture into the dish.
- Place the chicken breasts on top of the mixture then pour the remaining mixture over the breasts.
- Cover the casserole and place in a pre-heated 375 degree oven.
- Bake for 1 hour, then uncover casserole and bake for an additional 15 minutes.
- Serve with your favorite steamed veggies.

- Heat olive oil in a small saucepan over medium until hot. Cook garlic, turning occasionally, until golden brown all over, 4–5 minutes. Add tomato paste and cook, stirring constantly and scraping bottom of pot, until paste darkens, 3–4 minutes. Add maple syrup, soy sauce, Worcestershire sauce, vinegar, and Sriracha. Bring to a boil, then reduce heat to medium-low and simmer to let flavors meld, about 1 minute. Remove from heat. Transfer about half of barbecue sauce to a heatproof bowl; reserve for serving.
- Prepare a grill for medium-high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off); oil grates. Season chicken generously with salt. Grill chicken over direct heat, turning every minute, until browned on all sides, 5–6 minutes. Move chicken over indirect heat and continue to grill, keeping grill covered as much as possible and turning every 5 minutes or so, until an instant-read thermometer inserted into thickest part registers 140°–145°, 18–25 minutes depending on size. Begin basting with barbecue sauce, turning chicken occasionally, until an instant-read thermometer inserted into thickest part registers 160° for breast and 165° for dark meat, about 10 minutes longer.
- Do Ahead: Barbecue sauce can be made 2 weeks ahead. Transfer to an airtight container and chill.
