3 cups thinly sliced potatoes
2 cups frozen green beans
½ teaspoon dried thyme
¼ teaspoon ground black pepper
1 teaspoon vegetarian Worcestershire sauce
1 cup vegetable broth, divided
1 teaspoon cornstarch
¼ cup chopped fresh parsley

Steps:

  • In a large skillet over medium-high heat combine potatoes, green beans, thyme, pepper, Worcestershire sauce and 3/4 cup of broth. Bring to a boil; reduce heat to medium-low, cover and simmer 15 to 20 minutes or until vegetables are tender.
  • In a small bowl blend remaining broth and cornstarch. Stir in parsley; add to potato mixture. Cook, stirring, until bubbly and thickened.

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a rimmed baking sheet with cooking spray.
  • Cut potatoes in half if they are golf-ball-sized or larger. Lay potatoes and green beans in a single layer on the prepared baking sheet and spray with cooking spray. Sprinkle salt, garlic powder, pepper, and parsley on top.

1 lb green beans (, approx 450 g)
4 small size red or gold potatoes (, approx 12-15 oz)
3 tbsp Extra virgin olive oil
1 tbsp White wine vinegar
Fresh parsley (, finely chopped)
1 garlic clove (, chopped (optional))
Salt to taste
Pepper to taste

Steps:

  • Wash and peel potatoes. If using medium size potatoes cut them in half. If using large size potato cut it in quarters. Although I still recommend using small size potatoes.
  • In a large pot with cold salted water add potatoes and bring them to boil. Cook for 5-10 minutes.In the meantime,
  • Wash and trim green beans.
  • To make the process easier and faster work green beans in batches.Line up each batch on one side and trim off the ends with a sharp knife.Flip the beans around, line up the tips again, and trim off the other side.At this point you can cut trimmed beans in smaller size or leave as is.Repeat the process with remaining green beans.
  • Once potatoes have been boiling for a few minutes, add green beans.
  • Cook everything together for another 5-15 minutes. Check occasionally on both veggies (see Note 1).
  • Once both are cooked, remove potatoes and quickly pass green beans under cold water to prevent discoloration (optional).
  • Cut up potatoes into chunks.
  • In a small bowl mix together extra virgin olive oil and white wine vinegar.
  • In a large bowl add potatoes and green beans, add dressing, fresh parsley and give a gentle stir.
  • Top with freshly ground pepper to taste.
  • Since potatoes and green beans were boiled in salted water you might not need extra salt.

4 medium red potatoes, scrubbed and quartered
4 garlic cloves, peeled and quartered
1 lb frozen baby green beans
1 tablespoon olive oil
2 tablespoons fat-free chicken broth
salt and pepper
1 tablespoon fresh basil, chopped or 1 teaspoon dried basil, crushed

Steps:

  • Place the scrubbed and quartered potatoes in a saucepan along with the garlic cloves; cover with cold water.
  • Bring to a boil over medium-high heat.
  • When the potatoes come to a boil, reduce the heat and simmer until tender, about 15 minutes; drain immediately.
  • Place the frozen beans in a 2-quart microwave safe dish, cover and microwave for 2 to 3 minutes.
  • Stir the beans and microwave an addiitonal 1 to 2 minutes or until crisp tender.
  • Return potatoes and garlic to saucepan, drizzle with olive oil and chicken broth.
  • Toss to coat evenly, season with salt and pepper, add beans and basil; toss again.

  • Cook the unpeeled potatoes and green beans separately in salted water 'til slightly fork-tender. I use the microwave. Or you can steam them. The green beans cook faster than the potatoes will.

  • To the potatoes, add the butter and sea salt and gently toss together.

  • Place beans in a large pot or Dutch oven. Pour in enough water to just barely cover the beans. Add oil, paprika and salt; gently stir to combine. Bring to a boil. 1.25 lbs red creamer potatoes ($1.35)
3/4 lbs fresh green beans ($1.40)
2 Tbsp olive oil ($0.32)
2 cloves garlic ($0.16)
3/4 tsp salt ($0.03)
1/2 tsp dried oregano ($0.05)
Freshly cracked pepper to taste ($0.05)

Steps:

  • Slice the potatoes into quarters lengthwise, then cut across into 1/4 inch slices. Place the sliced potatoes in a pot and cover with water. Bring the pot to a boil over high heat, then let simmer until the potatoes are tender (about 5 minutes). Check the potatoes with a fork often, making sure not to over boil them. They should be easily pierced with a fork, but not so soft that they fall apart. Drain the potatoes in a colander.
  • While the potatoes are boiling, snap the stems off of the green beans, then break them into 1-2 inch sections. Rinse with cool water to remove any dirt or debris.
  • Mince the garlic and add it to a large skillet along with the olive oil. Sauté the garlic over medium heat for about one minute, then add the drained potatoes. Continue to sauté the potatoes, stirring only once every 3-5 minutes, until about half of them are golden brown (5-10 minutes).
  • Add the green beans to the skillet and continue to sauté until they are slightly softened and have some browned spots (about another 5 minutes). Season the skillet with salt, oregano, and some freshly cracked pepper. Sauté for one minute more, then serve.

1 (1 oz) packet dry Italian salad dressing and seasoning mix

  • Preheat oven to 400 degrees F. Spray a large baking dish with cooking spray.

Steps:

  • In a large Dutch oven, turn the heat to medium, and add the diced bacon. Cook the bacon, stirring frequently, until it's starting to crisp up and is nearly cooked through, about 5-7 minutes.
  • Using a slotted spoon, remove the bacon from the pan and set aside on a paper towel to drain.
