ROASTED ARTICHOKE SALAD
Steps:
- Preheat the oven to 350 degrees F.
- Place the artichoke hearts in a bowl with 1/4 cup olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss until the artichoke hearts are coated. Dump the artichoke hearts onto a sheet pan and spread out into 1 layer; roast in the oven for 20 minutes.
- Meanwhile, make the vinaigrette. Place the minced shallot, lemon juice, mustard, 1 tablespoon vinegar, 1 teaspoon salt, and 1/2 teaspoon pepper in the bowl of a food processor fitted with the steel blade. Process for 5 seconds. Add the basil leaves and process into a green puree. With the processor running, slowly pour 1/2 cup olive oil into the bowl through the feed tube until the ingredients are finely pureed. Set aside.
- Place the roasted artichoke hearts in a bowl and toss with enough vinaigrette to moisten. Add the capers, red peppers, red onion, parsley, 4 tablespoons vinegar and red pepper flakes, if using, and toss gently. Sprinkle generously with salt and pepper and let stand for 30 minutes for the flavors to blend. Serve at room temperature.

This makes a great side dish for Thanksgiving, Christmas or any dinner. My niece served this at a family gathering and was kind enough to share the recipe.

- Preheat oven to 400°. In a small skillet, saute artichokes and garlic in 2 tablespoons butter until tender. Transfer to a greased 1-qt. baking dish., In a small saucepan, melt remaining butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat. Stir a small amount of hot mixture into egg; return all to pan, stirring constantly. Stir in 1/4 cup cheese until melted., Pour over artichokes; sprinkle with remaining cheese. Combine crumbs and paprika; sprinkle over top. Bake, uncovered, 20-25 minutes or until heated through.

- Using a sharp paring knife, trim the outermost layer of leaves from each artichoke. Trim stems, and cut off top half of each artichoke. As you trim them, place them in a medium bowl; add lemon juice, and toss to coat.
- Transfer artichokes to a medium nonreactive saucepan. Add enough cold water to cover artichokes by 1 inch. Using a small heat-proof plate, weigh down the artichokes to keep them submerged. Bring to a simmer over high heat. Reduce heat to low, and simmer artichokes until fork-tender, about 15 minutes. Transfer to a colander to drain.
- Cut artichokes in half lengthwise. In a large skillet, heat olive oil over medium heat. Add artichokes in a single layer, and cook until hot, about 3 minutes. Add garlic and parsley. Cook, stirring occasionally, for 1 minute longer. Season with salt and pepper. Serve immediately.

ROASTED BABY ARTICHOKES
Steps:
- Preheat the oven to 400 degrees F.
- Prepare artichokes. Remove the tough outer leaves of the artichokes and trim the stems. Use a vegetable peeler to remove the tough outer green layer from the stem. Cut off the top third of the head to remove the tough ends of the leaves, then split it down the middle. Rub with lemon as you work so they don't turn brown.
- Mix together the olive oil, balsamic vinegar, salt, pepper and garlic. Lay the artichoke halves cut-side up in a roasting dish and drizzle with the olive oil mixture. Roast in the oven until the artichokes are tender, about 20 minutes.
- To serve, top with the cheese and garnish with the parsley.

- Preheat the oven to 375F.
- Clean the artichokes by peeling the stems, chopping off the top third, and peeling off the outer, tough leaves.
- Keep the prepared artichokes in a bowl of water with a little lemon added to prevent discoloration while you finish cleaning the rest.
- In a small gratin dish large enough to hold them all, add the artichokes, the garlic, olive oil and white wine.
- Add a little water if needed to bring the level up to almost cover the artichokes, cover, and then bake them in the preheated oven until they are tender.
- Usually this will take between 20 to 30 minutes.
- Remove the artichokes from the oven, and increase the temperature to 425F.
- Pour off any excess liquid from the cooked chokes, and set aside.
- Mix together the ingredients listed for the topping, and sprinkle this over the artichokes in the casserole dish.
- Drizzle on a little additional olive oil, and bake the archokes just until the topping becomes golden brown.
- Serve immediately, or at room temperature.

JERUSALEM ARTICHOKE GRATIN
Jerusalem artichokes also known as Sunchokes, are awkward-looking tubers even bumpier than fresh ginger. The flavor is much like a regular artichoke, though they are not related they are sweeter and a little starchier. They taste a little smokey and retain a crispness when cooked, if not overcooked. They cook very quickly, so be careful not to turn them to mush. The recipe calls for peeling them, though I just scrub them as the tender brown skin is edible. They make a good appetizer, are good raw in salads. NOTE; Since I posted and made this recipe "Uncle Bill" Bill Anatooskin has also made the recipe. He made it for a group of about 20 people,He said they DEVOURED every morsel and looked for more. Many had never eaten Jerusalem Artichokes. He e-mailed me the changes that he made, I made some changes to when making the recipe. So I combined the changes. We hope that you enjoy the artichokes.

- Scrub the sunchokes and slice into 1/4 thick slices.
- In a 13-inch-x-9-inch a baking dish, add melted butter.
- Arrange the sliced chokes in casserole so that they overlap slightly.
- Sprinkle with salt, black pepper and garlic powder.
- If Using: Mix together onions & green onions; sprinkle over chokes.
- Sprinkle with Parmeasn chesse.

- Peel off and discard a few outer petals of the artichokes until you reach the pale, tender center. Trim the top and stem end, then quarter each artichoke. There should be no discernible choke, but if there is, remove it with a paring knife. Put the artichokes in a bowl of cold water to which the lemon juice has been added.
- In a wide, heavy, nonaluminum skillet, heat a 1/2 inch of olive oil over medium heat. Drain and blot the artichokes and, when the oil is nearly smoking, carefully add them to the skillet. Season well with salt and pepper, stirring to coat with oil. Let the artichokes brown slightly, stirring occasionally, for 5 to 7 minutes, until they are tender when probed with a paring knife.
- Add the red pepper, garlic and parsley. Stir well and let sizzle for a minute or so. Transfer the artichokes to a platter, sprinkle with coarse salt and serve with lemon wedges, or sprinkle sparingly with red wine vinegar. Eat hot, or at room temperature.

- Trim the artichokes: Fill a bowl with a couple of quarts of cold water, and squeeze in the juice of one-half of a lemon . Trim the artichokes one at a time, first snapping off the thick outside leaves, until you reach the tender, pale inner leaves. Trim the tip of the stem, but leave most of it attached to the base of the artichoke. With a sharp paring knife or vegetable peeler, shave off the dark skin of the stem, exposing the tender core. Peel around the base of the artichoke too, removing the dark-green spots where the tough leaves were attached. Cut across the leaf tips, removing the top third of the artichoke. Slice the entire artichoke in half lengthwise, splitting the bulb and stem and drop the pieces into the acidulated water.
- Bring a medium pot of water to a simmer. While the water is heating, season it well with a few tablespoons of salt. Juice the remaining half of the lemon. Set aside 1 tablespoon of the juice, and pour the remaining juice into the pot of water.
- Drain the artichokes, and place them in the simmering water. Simmer the artichokes until tender, 6 to 9 minutes. Drain well. Heat the broiler.
- Make a garlic aioli: Using an immersion blender, combine the egg yolks, a pinch each of salt and white pepper, the water, the remaining tablespoon lemon juice and minced garlic cloves in a 2-cup measuring cup or in the tall beaker used for immersion blenders. Stand the immersion blender in the measuring cup, then slowly pour in the oils so they settle on top of the other ingredients. With the blender held against the bottom of the glass, pulse until the mixture begins to emulsify, which will happen almost immediately. Continue to pulse, turning the blender a bit, but keeping it pressed against the bottom of the container. Keep pulsing until most of the mayonnaise is emulsified, less than 1 minute, then slowly plunge the blender a bit to mix thoroughly. Taste the aioli and adjust the seasoning and flavoring with additional salt, pepper and lemon juice as desired. This makes about 1 cup aioli.

- Begin heating a large pot of salted water on high. Set out the artichokes and have a large bowl of water with 3 tbsp of lemon juice added. Trim off the stems and the top third of each artichoke. Peel off the tough, outer leaves until you reach the light green and tender inner leaves. Cut the artichoke in half or in quarters, depending on the size. Then add the artichoke to the lemon water.
