Provided by Southern Living Test Kitchen

Categories     Casserole

Time 1h10m

Yield Serves 10

Number Of Ingredients 14

16 ounces uncooked large elbow macaroni, large shells, or cavatappi pasta
6 tablespoons salted butter
⅓ cup grated yellow onion
2 teaspoons dry mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon freshly grated nutmeg
⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

Steps:

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.
  • Melt butter in a large saucepan over medium. Add next 6 ingredients; cook, stirring, 30 seconds. Add flour, and cook, stirring, until golden, 2 minutes. Gradually whisk in milk and cream. Bring to a boil, whisking occasionally. Reduce heat to medium-low; simmer, whisking, until slightly thickened, 5 minutes. Stir in Worcestershire sauce. Remove from heat; stir in 3/4 cup each of shredded Cheddar cheeses until melted. (Reserve remaining 1/4 cup each of shredded cheeses.) Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

THE BEST BAKED MAC AND CHEESE

The Best Baked Mac and Cheese image

A blend of three cheeses delivers a punch of flavor in this creamy mac and cheese. Toasted breadcrumbs give a crunchy texture contrast.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 8 to 10 servings

Number Of Ingredients 11

Kosher salt and freshly ground black pepper
1 pound elbow macaroni
Half a loaf day-old French bread
1 stick (8 tablespoons) unsalted butter
1/4 cup all-purpose flour
2 teaspoons mustard powder
1/4 teaspoon cayenne
3 cups milk
8 ounces fontina cheese, grated (about 2 cups)
8 ounces Gruyere, grated (about 2 cups)
1 pound sharp yellow Cheddar, grated (about 4 cups)

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just slightly softened, about 6 minutes. Reserve 1 cup pasta cooking water, then drain the pasta and rinse under cold water.
  • Meanwhile, remove the crusts from the bread and cut into 1-inch cubes. Pulse in the food processor until the bread breaks into bean-sized pieces.
  • Melt 3 tablespoons of the butter in a large skillet over medium heat. Add the breadcrumbs and cook, stirring, until toasted, 5 to 10 minutes. Remove from the heat and season with salt and pepper.
  • Melt 4 tablespoons of the butter in a large saucepan over medium heat. Whisk in the flour, mustard powder and cayenne. Cook, whisking constantly, until smooth and slightly golden, about 2 minutes. Whisk in the milk and cook, whisking occasionally, until the sauce begins to boil and thicken, about 7 minutes, then remove from heat. Stir in the fontina, Gruyere and all but 1 1/2 cups of the Cheddar until fully melted. Stir in the pasta, adding the reserved pasta water as needed to make a creamy sauce. Season with salt and pepper.
  • Melt the remaining 1 tablespoon butter in a small bowl in the microwave. Brush a 9-by-13-inch glass or ceramic baking dish with the melted butter. Spread the pasta mixture in the prepared dish. Sprinkle the remaining Cheddar evenly over the pasta, then scatter the toasted breadcrumbs on top. Bake until heated through and just bubbling, about 25 minutes. Let rest for 10 minutes before serving.

MARVELOUS MACARONI AND CHEESE

Marvelous Macaroni and Cheese image

This is the most awesome Macaroni & Cheese that we have ever eaten. It is a family favorite and we have it once a week. All four of my kids request it often, and my husband thinks it's incredible. Hope you enjoy this comfort food.

Categories     Cheese

Time 40m

Yield 6 serving(s)

Number Of Ingredients 7

1 lb macaroni (I prefer large elbows or medium shells)
6 tablespoons all-purpose flour
6 tablespoons butter or 6 tablespoons margarine (I prefer butter)
2 cups milk (I use skim)
8 ounces extra-sharp cheddar cheese, shredded
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 450 degrees.
  • Cook macaroni according to package instructions.
  • Drain, rinse and set aside.
  • In same pot over low heat, melt the butter.
  • Add flour, salt and pepper and whisk into melted butter until smooth.
  • Simmer and stir until mixture thickens into a paste and is golden.
  • Slowly add milk and whisk into butter mixture until smooth.
  • Bring to boil and then simmer until thickened.
  • There is no way to tell you how thick, except to say it should be thicker than gravy but not as thick as pudding.
  • If you have made basic white sauce, you will know when it is thick enough.
  • Remove pot from heat.
  • Add cheddar cheese and stir until cheese starts to melt.
  • Add macaroni and stir until coated.
  • Pour into a 9 x 12 baking dish or 2 quart casserole.
  • As an extra indulgence, you can sprinkle 4 oz more cheese on top.
  • I only do this if I happen to buy a 12 oz bag or block instead of 8 oz.
  • Bake about 20- 30 minutes, when you see top getting a bit crispy and brown.

AWESOME MAC & CHEESE

Awesome Mac & Cheese image

Okay, this is NOT diet friendly, and not really wallet friendly, but trust me on this one... If you make this once, you WILL NEVER EVER go back to other Mac and Cheese recipes... This is requested from me where ever I go and I make it for all family gatherings and my husband family is a huge family and the first time I showed up with this they told me that this had better be good, as they were very picky about their Mac and Cheese... needless to say, I have made it for the last 3 years for every holiday (since when did Arbor Day become such a big holiday)... This freezes very well and also halves very easily. Note - I buy a lot of this cheese in the pre-shredded bags, like the 5 Italian Cheese mixture, makes it so much easier. Also, for an easier time grating the soft cheeses, throw them in freezer for about 20 mins... that really helps!

Time 1h35m

Yield 24 serving(s)

Number Of Ingredients 17

2 lbs elbow macaroni
12 eggs
1 cup cubed Velveeta cheese
1/2 lb butter, melted
6 cups half-and-half, divided
4 cups grated sharp yellow cheddar cheese, divided
2 cups grated extra-sharp white cheddar cheese
1 1/2 cups grated mozzarella cheese
1 cup grated asiago cheese
1 cup grated parmesan cheese (not the canned stuff, the fresh stuff)
1 cup grated parmigiano-reggiano cheese
1 cup grated gruyere
1 cup grated monterey jack cheese
1 cup grated muenster cheese
1 cup grated havarti cheese
salt
black pepper (if you are making for company, white pepper is nice)

Steps:

  • Preheat the oven to 325 degrees F. Bring a large saucepan of salted water to a boil. Add the macaroni and cook until slightly al dente, about 10 minutes. Drain and set aside to keep warm.
  • Whisk the eggs in a large bowl until frothy. When I say LARGE bowl, I mean LARGE!
  • Add the Velveeta, butter and 2 cups of the half-and-half to the large bowl of eggs.
  • Add the warm macaroni tossing until the cheese has melted and the mixture is smooth.
  • NOW - Get your big strong Man, son, or neighbor to help here! This can get really hard to stir --
  • Add the remaining half-and-half, 3 cups of the sharp yellow Cheddar, the remaining grated cheeses, and salt and pepper, tossing until completely combined in the large bowl.
  • Grease your pans with either a cooking spray or a little butter (hey, what is more butter at this point?).
  • Pour the mixture into 9 by 13-inch casserole or baking dishes (approximately 3 (3-quart) baking dishes) and bake for 30 minutes. (I buy the disposable pans at the store, way easier).
  • Sprinkle with the remaining 1 cup of sharp yellow cheese and bake until golden brown on top, about 30 minutes more. Watch it pretty close after about 15 minutes.
  • Serve hot.
