Healthy, fast, easy, versatile meal with a kick--great as an entree or side dish. You can substitute chicken broth for vegetable broth, if desired. Garnish with black olives and cilantro.

1 tablespoon olive oil
1 onion, chopped
1 cup quinoa, rinsed
2 cups vegetable broth
1 (15 ounce) can black beans, rinsed and drained
1 large tomato, chopped
1 yellow bell pepper, chopped
1 avocado, diced
½ cup firmly packed chopped fresh cilantro
1 lime, juiced
2 tablespoons olive oil
2 tablespoons Greek yogurt
1 chipotle chile pepper in adobo sauce, sauce reserved
1 tablespoon honey
1 teaspoon ground cumin
salt and ground black pepper to taste

Steps:

  • Heat 1 tablespoon olive oil in a pot over medium-high heat. Saute onion in hot oil until softened, about 5 minutes. Stir quinoa into onion; saute until toasted and fragrant, about 2 minutes.
  • Pour broth into quinoa mixture; bring to a boil, reduce heat to low, cover the pot with a lid, and simmer until liquid is completely absorbed, about 20 minutes.
  • Stir black beans, tomato, bell pepper, and avocado together in a bowl.
  • Blend cilantro, lime juice, 2 tablespoons olive oil, Greek yogurt, chipotle pepper, 1 tablespoon reserved adobo sauce, honey, cumin, salt, and black pepper together in a blender until dressing is smooth.
  • Pour dressing over black bean mixture; add quinoa and toss to coat.

3 tablespoons fresh lime juice (1 large lime)
1/2 teaspoon salt, plus
1/8 teaspoon salt
4 small tomatoes, cut in 3/4-inch pieces (2 1/2 cups)
2 medium ripe avocados, cut into 3/4-inch dice (1 1/2 cups)
3 scallions, thinly sliced (white and green parts)
1 large garlic clove, minced
1 tablespoon extra virgin olive oil
1/4 teaspoon ground cumin
1 head boston lettuce, torn into large pieces (8 cups)
1 medium cucumber, peeled, quartered lengthwise, seeded and thinly sliced diagonally (1 cup)
2 tablespoons coarsely chopped fresh cilantro

Steps:

  • In a medium glass or ceramic bowl, whisk together 2 tablespoons lime juice and 1/2 teaspoon salt.
  • Add tomatoes, avocados, scallions and garlic.
  • Using rubber spatula, gently fold to combine.
  • Season to taste with pepper.
  • In large bowl, whisk together olive oil, cumin, remaining tablespoon lime juice and 1/8 teaspoon salt.
  • Add lettuce and toss.
  • Season to taste with pepper.
  • Divide lettuce among plates.
  • Top each with mound of avocado mixture.
  • Top with cucumber slices.
  • sprinkle with cilantro and serve.

2 small garlic cloves, minced
1 medium jalapeno pepper, minced
1 teaspoon cumin seed, toasted in small dry skillet over medium heat until fragrant and golden, about 4 minutes
1 teaspoon grated orange zest
1/4 cup olive oil
table salt
fresh ground pepper
2 heads romaine lettuce, torn into small pieces
1 cup fresh cilantro leaves
1/2 medium red onion, sliced thin
1 avocado, sliced 1/4-inch thick
2 large oranges, segmented

Steps:

  • Whisk lime juice, garlic, jalapeño, cumin, and orange zest in medium bowl; whisk in oil. Season to taste with salt and pepper.
  • Pour all but 2 tablespoons dressing over lettuce and cilantro; toss to coat.
  • Toss onion and avocado in remaining dressing.
  • Divide dressed greens among individual plates; arrange a portion of onion, avocado, and orange segments on greens.

1/4 cup maple syrup
1/2 teaspoon ground chipotle pepper
1/4 teaspoon cayenne pepper, optional
2 medium ripe avocados, peeled and sliced
1/2 medium cucumber, peeled and chopped
1 tablespoon minced fresh chives
2 large tomatoes, cut into 1/2-inch slices

Steps:

  • In a small bowl, whisk lime juice, maple syrup, chipotle pepper and, if desired, cayenne until blended. In another bowl, combine avocados, cucumber and chives. Drizzle with dressing; toss gently to coat. Serve over tomatoes.

  • Rinse the quinoa in a small mesh strainer. Set aside. Cook the quinoa according to the package.
  • While the quinoa is cooking combine red pepper, orange pepper, green onions, black beans, fresh cilantro and cherry tomatoes together and mix well. Set aside.
  • In a small bowl combine the hummus, water, lime, cayenne red pepper, cumin and a dash of salt and pepper. Whisk until the dressing is combined. Taste and adjust seasonings.
  • Once the quinoa is cool add to the salad along with the chopped avocado. Pour half of the dressing on the salad and gently stir. Taste and add more dressing to taste.

  • Bring chicken broth to a boil in a medium saucepan. Add the quinoa and season with the 1 teaspoon of kosher salt, bring back to a boil then reduce to a simmer and cook for 20 minutes or until the broth has absorbed and the quinoa is tender with the "tails" of the quinoa appearing. Add more broth or water as needed. Spread the cooked quinoa on a baking sheet to cool. When cool, add to a large serving bowl.
  • Meanwhile, heat the grill to high and grill the corn, turning occasionally, until the corn is tender and charred in spots, about 5-10 minutes. Cut the corn from the cob and add to a large bowl with the red bell pepper, cherry tomatoes, drained black beans, chopped red onion and avocado chunks and sprinkle with the chopped cilantro.
  • In a small bowl, mix the vegetable oil, lime juice, chipotle peppers and adobo sauce, rice wine vinegar, honey cumin and remaining 1 teaspoon kosher salt. Whisk together and taste for seasonings and spiciness of the chipotle peppers. It should taste pretty spicy as it will dilute once added to the quinoa.
  • Drizzle over the quinoa and vegetables and gently fold to combine, taking care with the avocados so they don't break apart.
