Sorry chicken, avocado is the star in this low-carb and protein-packed dish. It helps make a creamy dairy-free pesto that's filled with heart-healthy fats.

4 tablespoons extra-virgin olive oil, plus more for brushing the grill grates
Zest of 1 lemon plus 2 tablespoons juice
2 1/4 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
Kosher salt and freshly ground black pepper
1/4 cup pine nuts
1 cup loosely packed fresh basil leaves
1 cup loosely packed fresh parsley leaves
1 clove garlic, crushed and peeled
1 large ripe avocado

Steps:

  • Prepare an outdoor grill or a grill pan for medium heat.
  • Whisk together 1 tablespoon of the oil and the lemon zest in a large bowl. Add the chicken to the oil and toss to coat. Sprinkle with salt and pepper. Divide the chicken and thread onto metal or bamboo skewers.
  • Toast the pine nuts in a small skillet over medium heat, tossing frequently, until light golden, 3 to 4 minutes. Let cool.
  • Combine the pine nuts, basil, parsley, garlic, 1/2 teaspoon salt and several grinds of pepper in a food processor. Process to make a coarse paste. Add the avocado, lemon juice and remaining 3 tablespoons oil and process until mostly smooth.
  • Grill the chicken, turning often, until just cooked through, 5 to 7 minutes. Serve the chicken dolloped with the pesto and any extra pesto on the side.

4 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon chili flakes
1 crust pizza crust
2 packets fresh mozzarella cheese
2 cups chicken breast, cooked, cut into slices
½ cup onion, diced
3 avocados
7 grape tomatoes
oil spray

Steps:

  • In a small/medium jar, mix olive oil, minced garlic, salt, black pepper, oregano, and chili flakes together.
  • Shake it well, and save it in refrigerator for later.
  • NOTE: Refrigerate left over garlic sauce. It lasts for up to one week
  • Pre-heat the oven at 425ºF (220ºC).
  • Oil spray the flat baking pan, roll out the pre-made pizza crust, if it's needed, use a rolling pan to make the crust equally flat on the pan.
  • Spread garlic sauce on pizza crust, place down sliced fresh mozzarella, sliced chicken breasts (cooked) and sprinkle diced onions.
  • Bake it in the oven for 25-30 minutes until the cheese melts and the crust become golden brown.
  • Take the pizza out and place down sliced avocados, and some grape tomatoes.
  • Enjoy!

1/2 cup Ragú® Pasta Sauce, creamy mozzarella sauce
1/2 cup shredded whole milk mozzarella
1/2 cup shredded provolone cheese
1/4 cup goat cheese, crumbled
1/4 cup pine nuts
10 red grapes, halved
1/4 cup arugula, finely chopped
1 tablespoon dried rosemary leaves
1 tablespoon dried oregano
1/2 teaspoon dried cilantro

Steps:

  • Preheat oven to 475 degrees.
  • Grease a large baking sheet. On the baking sheet, flatten out dough ball starting from the center, taking care not to flatten the edges. Make the center of the crust as thin as possible. Crust will be 12-14 inches in diameter.
  • In a small bowl, combine Ragu sauce, arugula, oregano, and cilantro. Mix well.
  • Ladle sauce mixture onto the dough, and spread evenly. Top with mozzarella and provolone. Evenly spread grapes, rosemary, goat cheese, and pine nuts.
  • Bake for 11-14 minutes, until crust and cheese begin to brown, but not burn. Let cool for 2 minutes, then slice and serve.

1/4 cup black beans, pureed
1/4 cup tomatoes, Sliced
1/4 cup bell pepper, Sliced
1/4 cup corn, canned
1/4 cup spinach leaves
1 teaspoon oregano
1/4 cup mango, sliced (pineapple works too)
1/2 cup salsa
1/4 cup Mexican blend cheese, shredded
1/4 cup cottage cheese

Steps:

  • Preheat oven to 350.
  • Slice tomatoes, bell peppers, and pineapples/mangoes.
  • Stack and bake tortillas at 350 for a few minutes or until crispy.
  • Using a food processor, puree black beans and spread on the tortilla, place spinach leaves on top of the beans and add pineapple/mango, sliced vegetables, corn and salsa.
  • Sprinkle cheese and oregano all over and put back in oven and bake for 10-12 minutes, or until cheese is melted and pizza heats up all over. Top with cool salsa and cottage cheese.

1 (12 ounce) jar Ragú® Pasta Sauce
1/2 cup fennel, fresh sliced
4 slices bacon, cooked
2 garlic cloves, mince
1/2 lb shrimp, raw 31-40 count, peeled and deveined
1/2 lb sea scallops
1/2 lb squid, cleaned
1/2 lb skinless flaky white fish such as bass halibut, hake or 1/2 lb cod, cut
1 teaspoon lemon zest
1/4 cup cilantro, washed, diced
1/4 teaspoon red pepper flakes
2 cups garlic butter breadcrumbs
1/4 cup olive oil, extra virgin

Steps:

  • Dice fennel 1/8", dice bacon 1", cut scallops ¾", slice squid ¼" and fis ½" pieces.
  • Spread 1 cup of Ragú® Pizza Quick Traditional Sauce evenly over the pizza crust.
  • Spread the fennel and garlic evenly over the sauce.
  • Attractively arrange all the seafood and bacon on top of the sauce.
  • Sprinkle the lemon zest, cilantro and red pepper flakes over the pie.
  • Top with the breadcrumbs and drizzle with the EVOO.
  • Bake in a 425° oven for 6 - 12 mins, begin checking at 4 minutes Don't overcook the seafood.
  • Remove from oven and let sit for 5 minutes before cutting.
  • *You can make your own crust, just pre-bake before proceeding.

Great pizza that is easy to make and tastes great! Every time I have made this someone asks me for the recipe - it is unbelievable!

1 large ready-made pizza crust
16 ounces salsa
2 cups shredded mexican cheese
2 -3 boneless skinless chicken breasts
chili powder
salt
pepper
1 onion, diced
1 green bell pepper, diced
sour cream

Steps:

  • Cut chicken into cubes and season with chili powder, salt and pepper. Saute chicken until done.
  • Saute onion and green pepper until soft, 10-15 minutes.
  • Bake pizza crust 10-15 minutes, or according to package directions. Remove from oven and spread salsa over crust. Add onion and green pepper over salsa. Place chicken over pizza and top with Mexican cheese.
  • Bake at 350 until cheese melts, about 10-15 minutes.
  • Top with sour cream and enjoy!
