Avocado toast becomes croutons in this high-fiber, low-calorie breakfast salad. Get your vitamin C from the citrus vinaigrette and the orange wedge on the side.

4 slices whole-grain or whole wheat bread
2 tablespoons sliced skin-on almonds
1 tablespoon white wine vinegar
Juice and zest of 1/2 orange plus other half reserved
1 tablespoon extra-virgin olive oil
Kosher salt
1 large avocado, halved, pitted, scooped and quartered
5 ounces baby arugula (about 8 cups)
1/3 cup crumbled feta cheese
5 radishes, very thinly sliced

Steps:

  • Preheat the oven to 350 degrees F. Arrange the bread and almonds on a baking sheet, and bake, flipping the bread once, until it is toasted and crunchy and the almonds are golden, about 10 minutes. Set aside to cool.
  • Meanwhile, put the vinegar, orange juice and zest, oil and 1/4 teaspoon salt in a jar or other container with a lid. Secure the lid, and shake until combined. (The vinaigrette can be made a day ahead; shake well before serving.)
  • Put an avocado quarter on each slice of toast, and mash and spread the avocado with a fork to cover. Quarter each piece of toast, and arrange the pieces on 4 plates with the points facing out to make a square.
  • Toss the arugula, toasted almonds, feta, radishes and vinaigrette in a medium bowl. Taste and adjust seasoning with salt if necessary. Put a mound of salad on top of each avocado toast square. Quarter the remaining orange half, and garnish each salad with a piece.

Steps:

  • Carefully place 3 eggs in a large pan of boiling water using a spoon. Cook in the boiling water for about 6 minutes (for medium sized eggs).
  • Chop 1 tomato and place the pieces in a bowl.
  • Chop a clove of garlic finely and roughly chop a handful of basil. Add them to the tomatoes.
  • Rinse the eggs under cold running water for a few minutes until they are cool enough to handle.
  • Peel and dice the eggs and add them to the bowl with the other ingredients. Mix well.
  • Drizzle olive oil over the salad and season to taste with salt and pepper.
  • Serve on hot buttered toast, garnished with sunflower sprouts.

1 small avocado
1 hard boiled egg
5 grape tomatoes, halved
1 tsp lemon juice
1 tsp bragg vinaigrette dressing & marinade
salt and pepper
1 sprig(s) small chives

Steps:

  • 1. Boil the egg (along with as many eggs you desire for the frig. or other uses)
  • 2. Cut the avocado open , remove seed, cut the filling into cubes and remove with a spoon into a small bowl.
  • 3. Shell the hard boiled egg and cut into chunks. Add this to the avocado and mix very gently.
  • 4. Sprinkle a couple of times with lemon juice. (if using fresh lemon juice - use 1 lemon wedge)
  • 5. Sprinkle about 2 shakes of Bragg Dressing over all. Mix gently.
  • 6. Throw the tomato halves into the bowl. Sprinkle with salt and pepper. Cut the chive stem with scissors over for garnish.

2 large avocados
1 tbsp lemon juice or white wine vinegar
1 tiny garlic clove (grated)
1/2 tsp salt
Ground black pepper (to taste)
3 tbsp red onion (minced)
2 tbsp dill or parsley (finely chopped (optional))

Steps:

  • To make hard boiled eggs on the stove: Add eggs to a pot and cover with cold water. Bring to a boil, cover, turn off heat and let stand for 10-12 minutes. Transfer into an ice bath for 10 minutes and peel. Or make Instant Pot eggs or air fryer eggs.
  • Into a medium bowl, scoop avocado from a shell with a tablespoon in portions. Add lemon juice, garlic, salt, pepper and then mash with a fork but leave it chunky.
  • Chop eggs to your preference, coarsely or finely, and add them along with red onion and dill to the bowl with mashed avocado. Gently stir with a spoon until combined.
  • Serve immediately on whole grain toast, with whole foods crackers, in a lettuce wrap or on bed of arugula.
