Fall harvest muffins full of fruit, vegetables, oats and nuts are perfect to serve any time of the day.

1 1/2 cups all-purpose flour
1 cup sugar
1/2 cup uncooked quick cooking or old-fashioned oats
1 tablespoon ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
2 medium (2 cups) apples, peeled, cored, cut into 1/4-inch pieces
3 medium (1 1/2 cups) carrots, grated
3/4 cups dried cherries, coarsely chopped
1/2 cup chopped walnuts or pecans
3 large Land O Lakes® Eggs
1/2 cup Land O Lakes® Butter melted
1/2 cup unsweetened applesauce
2 teaspoons vanilla

Steps:

  • Heat oven to 350°F. Place paper baking cups into 18 muffin pan cups or grease muffin pan cups; set aside.
  • Combine flour, sugar, oats, cinnamon, baking soda and salt in bowl. Add apples, carrots, dried cherries and nuts; stir until well mixed.
  • Whisk eggs in bowl. Stir in melted butter, applesauce and vanilla. Add egg mixture to flour mixture; stir until just moistened.
  • Spoon batter evenly into prepared muffin pan cups. Bake 18-25 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes; remove from pan. Serve warm or at room temperature.

¾ cup brown sugar
¾ cup white sugar
3 cups all-purpose flour
½ teaspoon baking soda
1 tablespoon baking powder
½ teaspoon salt
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon ground ginger
1 cup butter, melted
2 eggs, beaten
1 ¼ cups milk
1 cup chopped cranberries
1 cup chopped, peeled apple
½ cup chopped dried figs
¾ cup chopped toasted hazelnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin pans or line with paper muffin liners.
  • In a large bowl, stir together the brown sugar, white sugar, flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. Make a well in the center, and add the melted butter, milk and eggs, mix until smooth. Stir in the cranberries, apple, figs, and hazelnuts. Spoon the batter into the prepared muffin pans. Cups should be at least 3/4 full.
  • Bake for 15 to 20 minutes in the preheated oven or until a toothpick inserted into a muffin comes out clean.

1 cup vegetable oil, plus extra for the pan (see Cook's Note)
3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

Yummy muffins pack a nutritious punch in the morning, great for a healthy grab-n-go breakfast. You can alter this recipe any way you like and with what you have on hand, very versatile. I started with Recipe # 8845 from Kathy-Lynn and tweaked it so much it turned into something else. Recipe includes a brown sugar & nut topping. I used almonds and walnuts, but any kind of nut would be good with this.

1 cup whole wheat flour
1 1/4 cups oatmeal (whole grain)
1/4 cup brown sugar
2 1/2 teaspoons baking powder

1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon ginger (fresh or powdered)
2 cups bananas, ripe & mashed (about 4 medium)
2/3 cup applesauce
1/3 cup carrot, shredded
1 large egg
2 tablespoons butter (melted)
1/2 cup slivered almonds
1/2 cup walnut pieces
2 tablespoons butter (melted)
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup raisins (optional)

Steps:

  • Preheat oven to 375.
  • Line muffin pan with cups, if desired.
  • Squirt each cup with non-stick cooking spray.
  • Combine first 8 ingredients in a large mixing bowl. Stir until well blended.
  • In a separate smaller bowl combine next 5 ingredients (bananas - butter), stir until well blended.
  • In another separate small bowl, combine next 6 ingredients (almonds - nutmeg) for muffin topping.
  • Add banana mixture to the flour mixture along with the raisins, if you desire.
  • STIR JUST UNTIL MOISTENED. Do not over stir.
  • Fill muffin cups 2/3 way full.
  • Press enough of the brown sugar-nut topping into each muffin to cover the top, and to your taste. About 2 Tbsp per muffin.
  • Bake at 375 for about 20 minutes, until the muffin springs back when lightly touched.
  • Makes 16 small muffins, or 8 giant-sized muffins.

1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon ground cinnamon
2 teaspoons ground ginger
1 1/4 cups whole milk
2 extra-large eggs
1/2 pound unsalted butter, melted and cooled
1 1/2 cups coarsely chopped fresh cranberries
1/2 cup medium-diced Calimyrna figs
3/4 cup coarsely chopped hazelnuts, toasted and skinned
3/4 cup brown sugar, packed
3/4 cup granulated sugar

Steps:

  • Preheat the oven to 375 degrees F.
  • Line 18 muffin cups with paper liners. Sift together the flour, baking powder, baking soda, salt, cinnamon, and ginger in a large bowl. Make a well in the center of the mixture and add the milk, eggs, and melted butter. Stir quickly just to combine. Add the cranberries, figs, hazelnuts, and both sugars and stir just to distribute the fruits, nuts, and sugar evenly throughout the batter.
  • Spoon the batter into the paper liners, filling each one to the top. Bake for 20 to 25 minutes, until browned on the top and a toothpick inserted in the center of the muffins comes out clean.

  • Preheat oven to 400.
  • Line 24 muffin cups with paper liners.
  • In small bowl, combine butter, 2 Tbls cinnamon, 1/2 c of the sugar and 2 Tbls of the flour.
  • Mix until crumbles form, set aside.
  • In large bowl, combine remaining flour, wheat germ, sugar, salt, baking soda, cinnamon, nutmeg, cloves and allspice In separate bowl, combine pumpkin, oil and eggs.
  • Whisk to blend.
  • Add wheat germ mixture and stir until blended.
  • Stir in apples and raisins.
  • Spoon batter into prepared muffin cups.
  • Sprinkle butter mixture over each muffin.
  • Bake 20-25 minutes or until tops are golden brown and toothpick inserted in center comes out clean.

2 cups whole wheat flour
2 cups sugar
4 teaspoons cinnamon
1/2 teaspoon clove
4 teaspoons baking soda

1 cup grated carrot
1 cup coconut
1 cup chopped walnuts
4 cups shredded peeled apples (about 5 medium)
1 cup raisins
1 1/2 cups oil
1/2 cup milk
4 teaspoons vanilla
3 eggs, beaten

Steps:

  • Combine all dry ingredients, fruits, nuts, raisins, and carrots in a large bowl.
  • Mix together oil, milk, vanilla and eggs.
  • Stir the wet ingredients into the dry ingredients just until the dry are moistened.

This recipe is an adaptation from a recipe posted by Teresa Jacobson. I have tweaked and adjusted to create a more robust flavor with a nod to apple pie.

2 c bisquick
2 Tbsp cinnamon (more or less to taste)
1 tsp ginger (more or less to taste)
1 tsp nutmeg (more or less to taste)
1 Tbsp apple pie spice (optional) (more or less to taste)
1/2 c vanilla yogurt
1 tsp apple flavoring
1/2 c ginger ale
1/2 c apple pieces/almond slivers mixed
ICING
2 Tbsp real butter
1/2 tsp apple flavoring
1/2 tsp almond extract
1 c powdered sugar (more or less for consistency)
2 Tbsp half and half (more or less for consistency)

Steps:

  • 1. Preheat oven to 450° F. Spray muffin or mini muffin pans liberally with a butter flavored spray.
  • 2. In a large bowl, combine Bisquick, cinnamon, nutmeg and ginger. Add yogurt and stir just until blended. Add ginger ale and stir until well mixed.
  • 3. Fold in mixture of apple pieces and slivered almonds (optional).
  • 4. Scoop heaping spoonfuls into prepared muffin pans (regular or mini). As this is a stiff dough, you can fill a bit fuller than you would normally fill a muffin pan,
  • 5. Bake at 450° for 10 minutes.
  • 6. While muffins are baking, prepare the icing.
  • 7. Cut 2 tablespoons of room temperature butter into 1 cup of powdered (confectioner's) sugar.
  • 8. Add almond and apple flavoring. Blend well. Add half and half and stir until smooth. (You may need to adjust powdered sugar and/or half and half) Microwave for 10 seconds to create perfect drizzle.
  • 9. Remove muffins from oven. Place on serving tray while still very warm and drizzle with the apple almond icing.
  • 10. Serve while still warm. These are great paired with homemade apple butter. YUMMY!
