- Heat the oil in a large soup pot over medium-high heat. Add the carrots and onion and cook, stirring occasionally, until they begin to soften, about 6 minutes. Add the garlic and cook for 1 minute more. Add the squash, allspice, cayenne, and 1 tsp. salt and stir to combine. Add the broth, tomatoes with their juice, and thyme. Bring to a boil, reduce the heat to medium, cover, and simmer for 10 minutes. Add the kale and the chickpeas and cook uncovered until the squash is tender and the kale has wilted, about 10 minutes more. Discard the thyme springs before serving. Season to taste with more salt and cayenne.

EASY SAUSAGE POTATO SOUP RECIPE

- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sausage. Cook, breaking up the sausage with a wooden spoon until crispy; about 10 minutes.
- Add the onions and cook, stirring every few minutes until they begin to soften; 5 to 6 minutes. Stir in the garlic, oregano, crushed red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of fresh ground black pepper. Cook, while stirring the garlic and spices around the pan, for about 1 minute.
- Add the bay leaf, thyme, and potatoes. Pour in the stock. Increase the heat to medium-high and cook until the broth just reaches a simmer, but before it begins to boil. Reduce the heat to medium-low, partially cover the pot with a lid, and simmer until the potatoes are cooked through; about 15 minutes. While the soup cooks, stir every once and a while. If the soup begins to simmer more aggressively, turn down the heat a bit.
- Uncover the soup and remove the bay leaf and thyme sprigs. Stir in the cream, kale, and parmesan cheese. Add a small pinch of nutmeg, and then taste the soup for seasoning. Adjust with more salt and pepper, as needed.
- Reduce the heat to low, cover with the lid and cook until the kale is wilted and soft; about 5 minutes more.

- Chop the onion, carrot, celery and garlic in a food processor. Heat the oil over a medium heat in a large saucepan. Add the vegetables and potatoes, season well, then reduce the heat and cover the pan. Gently cook for about 5 mins until starting to soften, then add the stock, turn up the heat and bring to the boil. Simmer for 5 mins more, or until all the vegetables are tender.
- While the soup is cooking, grill or fry the bacon until crisp, then cut into strips. Shred the cabbage, discarding the core.
- Whizz the soup in the food processor until smooth, then return to the pan and add the cabbage. Simmer for a few mins until the cabbage is just tender, then season to taste and serve scattered with the bacon.

BACON, POTATO AND CABBAGE SOUP

Steps:
- Cut the bacon into small pieces.
- Peel and cut the potatoes into 1/2 cubes
- Heat a large soup pot over medium heat. Cook the bacon until it is quite crisp. Remove the cooked bacon from the pot. Strain the bacon grease and reserve.
- Wipe out the pot and return to the stove. Add 3 TBS of the reserved bacon grease.
- Add the onions and cook until the onions just start to brown.
- Add the potatoes and stir, cooking until the potatoes are coated with bacon grease
- Add the chicken stock and water. Bring to a boil and let simmer. Add most of the bacon reserving enough to sprinkle on top at serving.
- Thinly slice the cabbage
- After the potatoes have cooked add the cabbage and cook until the cabbage softens
- Serve with the reserved bacon on top or with sour cream if desired

- Cook bacon until crisp in 3-quart saucepan, remove and drain well on paper towels. Discard bacon grease and wipe pan thoroughly with paper towel.
- Meanwhile, prepare vegetables. Add olive oil to saucepan and add onion, carrot, and celery as they are cut up. Saute until onion is soft but not brown, about 3-4 minutes.

- Cook sausage and bacon, cut up bacon, then set aside.
- Dice onion and sauté in 1-2 Tbsp. of bacon and sausage grease.
- Peel and dice potatoes.
- Place potatoes, sausage, onions, paprika, bay leaves and salt and pepper in slow cooker or pot on stove. Pour in stock.
- *If using a slow cooker, cook on medium for 6-8 hours, or high for 4-5 hours. If cooking on stovetop, cook until potatoes are tender ~ 30 minutes. I use the slow cooker to develop flavors.
- Around 15-20 minutes prior to serving. melt butter in frying pan.
- Add flour and whisk until mixture is completely combined.
- Cook 1 minute.
- Gradually add in evaporated milk, stirring constantly until completely smooth.
- Allow mixture to continue to cook until it reaches a simmer, and thickens. (It will be quite thick.)
- Add rue to soup, and stir in.
- Then stir in sour cream and cheese.
- Once all ingredients are combined, use a potato masher and mash ingredients to desired consistency. (This is optional and mainly affects the potatoes, but also assists to thicken the soup.) Allow to sit for 15-20 minutes while cooking bacon.
- Cook bacon until crisp, then stir into soup.
- Garnish with cheese and enjoy.

CREAMY SAUSAGE & POTATO SOUP

- Add oil to your soup pot on medium-high heat. Once oil is hot, add diced bacon, onion, and sausages. Sauté, stirring frequently, until onion is tender and bacon is fully cooked. You should see some browning on your sausages.
- Add chicken stock and potatoes (peeled and diced into 1 inch cubes) to the soup pot. Season with the salt, pepper, garlic powder, and dried thyme (or dried chives). Bring to boiling and cook for approximately 5 - 8 minutes or until potatoes are easily pierced with a fork. Be careful to not overcook your potatoes or you'll end up decreasing the amount of chicken stock you have.
- Once cooked, remove 1 to 2 cups of the diced potatoes from chicken stock. (Going with 2 cups will give you a thicker finished soup. It's okay if a little onion or bacon gets mixed in but don't pull out any of the sausage.) Blend with 1/2 cup canned coconut milk until smooth. The consistency will be close to thick mashed potatoes. Add back to your soup and stir until well combined. Now your soup is creamy! Taste and add more salt if desired.

- In a large heavy bottomed stock pot, cook the bacon until just crispy.
- Add in the onion, celery, carrots, and garlic. Cook until the vegetables are soft. About 5 to 7 minutes.
- Stir in the flour into the vegetable mixture. Then very slowly add the chicken stock. It works best to add a few tablespoons at a time, whisking throughout in between. This should take about two minutes at the most.
- Bring the mixture to a boil and add in the potatoes. Turn down the heat to a simmer, stirring regularly, and cook until the potatoes are fork tender. About 20 to 30 minutes. Make sure the heat is very low. If it is too high, too much of the liquid will evaporate.
