EASY SAUSAGE POTATO SOUP RECIPE

Easy Sausage Potato Soup Recipe image

You will love this easy sausage and potato soup recipe with Italian sausage, potatoes, garlic, and kale. The soup is comforting and ultra-flavorful. For the best potato soup, use Yukon Gold potatoes. They have thin skins, so it is not necessary to peel them. They also become buttery and soft when cooked. The red pepper flakes add heat to the soup. If you are using hot (spicy) Italian sausage to make the soup, you may want to eliminate the red pepper flakes.

Provided by Adam and Joanne Gallagher

Categories     Soup

Time 50m

Yield Makes about 8 cups of soup or 4 to 6 servings

Number Of Ingredients 15

1 tablespoon olive oil
1/2 pound fresh Italian sausage links, casings removed
2 cups chopped onion (8 ounces or 1 medium onion)
1 tablespoon minced garlic (3 cloves)
1/4 teaspoon dried oregano
1/4 to 1/2 teaspoon crushed red pepper flakes, depending on spice preference
Salt and fresh ground black pepper
1 bay leaf
2 sprigs thyme
1 1/2 pounds potatoes, cubed (2 to 3 large)
5 cups chicken stock or broth, see our chicken stock recipe
1/4 cup to 1/2 cup heavy cream or half and half
4 cups chopped kale leaves with ribs removed or use baby kale
1/2 cup shredded parmesan cheese, optional (2 ounces)
Pinch freshly grated nutmeg

Steps:

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sausage. Cook, breaking up the sausage with a wooden spoon until crispy; about 10 minutes.
  • Add the onions and cook, stirring every few minutes until they begin to soften; 5 to 6 minutes. Stir in the garlic, oregano, crushed red pepper flakes, 1/2 teaspoon of salt, and 1/4 teaspoon of fresh ground black pepper. Cook, while stirring the garlic and spices around the pan, for about 1 minute.
  • Add the bay leaf, thyme, and potatoes. Pour in the stock. Increase the heat to medium-high and cook until the broth just reaches a simmer, but before it begins to boil. Reduce the heat to medium-low, partially cover the pot with a lid, and simmer until the potatoes are cooked through; about 15 minutes. While the soup cooks, stir every once and a while. If the soup begins to simmer more aggressively, turn down the heat a bit.
  • Uncover the soup and remove the bay leaf and thyme sprigs. Stir in the cream, kale, and parmesan cheese. Add a small pinch of nutmeg, and then taste the soup for seasoning. Adjust with more salt and pepper, as needed.
  • Reduce the heat to low, cover with the lid and cook until the kale is wilted and soft; about 5 minutes more.

KARTOFFELSUPPE NACH BAYRISCHER ART (BAVARIAN POTATO SOUP)

Kartoffelsuppe nach Bayrischer Art (Bavarian Potato Soup) image

Packed with vegetables and sausages, this classic Bavarian-style potato soup is more of a main dish than a starter. In Germany the sausage of choice would be Regensburg sausage, a short and stubby parboiled pork sausage. It can be substituted with other boiling sausages made of pork.

5-8 slices cooked Bacon
1/2-1 lb Sausage
5-6 medium Potatoes
1/2-1 Onion
8 c. Chicken or Vegetable Stock
1/2 tsp. Paprika
2 Bay Leaves
Salt (1-2 tsp. and Pepper to taste)
1 c. Sour Cream
2 c. Shredded Cheese (your choice, I like cheddar/jack blend)
8 Tbsp. Butter
1/3 c. All-Purpose Flour
2-12 oz cans 2% Evaporated Milk

  • Dice onion and sauté in 1-2 Tbsp. of bacon and sausage grease.
  • Peel and dice potatoes.
  • Place potatoes, sausage, onions, paprika, bay leaves and salt and pepper in slow cooker or pot on stove. Pour in stock.
  • *If using a slow cooker, cook on medium for 6-8 hours, or high for 4-5 hours. If cooking on stovetop, cook until potatoes are tender ~ 30 minutes. I use the slow cooker to develop flavors.
  • Around 15-20 minutes prior to serving. melt butter in frying pan.
  • Add flour and whisk until mixture is completely combined.
  • Cook 1 minute.
  • Gradually add in evaporated milk, stirring constantly until completely smooth.
  • Allow mixture to continue to cook until it reaches a simmer, and thickens. (It will be quite thick.)
  • Add rue to soup, and stir in.
  • Then stir in sour cream and cheese.
  • Once all ingredients are combined, use a potato masher and mash ingredients to desired consistency. (This is optional and mainly affects the potatoes, but also assists to thicken the soup.) Allow to sit for 15-20 minutes while cooking bacon.
  • Cook bacon until crisp, then stir into soup.
  • Garnish with cheese and enjoy.

CREAMY SAUSAGE & POTATO SOUP

Creamy Sausage & Potato Soup image

There's nothing more comforting than this creamy soup loaded with tender chunks of potato, bacon, and sausage! It's surprisingly easy to make and includes no dairy (but you won't believe that when you taste it).

Provided by Christina

Categories     Entree     Soup

Number Of Ingredients 11

1 1/2 tbsp olive or avocado oil
4 fully cooked sausages (Sliced into half-circles about 1/4 inch thick.)
1/2 large white or yellow onion
3 slices bacon (Diced. I prefer turkey bacon.)
2 lb potatoes (Peeled and diced. I prefer yukon gold potatoes. (It's about 4 cups diced potatoes.))
32 oz chicken stock or broth
1 1/4 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp dried thyme or dried chives
1/2 cup canned unsweetened coconut milk

Steps:

  • Add oil to your soup pot on medium-high heat. Once oil is hot, add diced bacon, onion, and sausages. Sauté, stirring frequently, until onion is tender and bacon is fully cooked. You should see some browning on your sausages.
  • Add chicken stock and potatoes (peeled and diced into 1 inch cubes) to the soup pot. Season with the salt, pepper, garlic powder, and dried thyme (or dried chives). Bring to boiling and cook for approximately 5 - 8 minutes or until potatoes are easily pierced with a fork. Be careful to not overcook your potatoes or you'll end up decreasing the amount of chicken stock you have.
  • Once cooked, remove 1 to 2 cups of the diced potatoes from chicken stock. (Going with 2 cups will give you a thicker finished soup. It's okay if a little onion or bacon gets mixed in but don't pull out any of the sausage.) Blend with 1/2 cup canned coconut milk until smooth. The consistency will be close to thick mashed potatoes. Add back to your soup and stir until well combined. Now your soup is creamy! Taste and add more salt if desired.

CREAMY POTATO SOUP WITH BACON

Creamy Potato Soup with Bacon image

This Creamy Potato Soup with Bacon is the perfect winter soup. Made with simple ingredients, this soup is the definition of comfort food.

Provided by Lisa Longley

Categories     Soup

Time 1h

Number Of Ingredients 13

6 slices thick cut bacon (diced)
1 small yellow onion (diced)
3 stalks of celery (diced)
2 carrots (peeled and diced)
2 cloves garlic (minced)
1/3 cup all purpose flour
2 cups chicken stock
2 pounds russet potatoes (peeled and diced)
2 cups whole milk
salt and pepper (to taste)
shredded cheddar cheese (for topping)
diced scallions (for topping)
bacon pieces (for topping)

Steps:

  • In a large heavy bottomed stock pot, cook the bacon until just crispy.
  • Add in the onion, celery, carrots, and garlic. Cook until the vegetables are soft. About 5 to 7 minutes.
  • Stir in the flour into the vegetable mixture. Then very slowly add the chicken stock. It works best to add a few tablespoons at a time, whisking throughout in between. This should take about two minutes at the most.
  • Bring the mixture to a boil and add in the potatoes. Turn down the heat to a simmer, stirring regularly, and cook until the potatoes are fork tender. About 20 to 30 minutes. Make sure the heat is very low. If it is too high, too much of the liquid will evaporate.
  • Stir in the milk and allow the milk to cook through, about 1 to 2 minutes. Top with cheddar cheese, bacon, and diced scallions. Enjoy!
