2 cups pancake mix
1 tablespoon brown sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 1/2 cups apple cider
1/2 teaspoon vanilla

Steps:

  • heat griddle and prepare with cooking spray.
  • In a bowl, combine pancake mix, brown sugar, cinnamon and nutmeg.
  • Whisk in apple cider and vanilla. Batter will be slightly lumpy.
  • Pour ¼ cup batter per pancake on griddle. Cook 1-2 minutes until golden brown.

I created this one Sunday morning when I was craving that Autumn flavor. These sensuous pancakes have all the beautiful flavors of autumn but only use what you probably already have in your pantry!

2 cups complete pancake mix
1 ¼ cups apple cider
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon brown sugar
½ teaspoon vanilla extract
¼ cup chopped walnuts
butter flavored cooking spray

Steps:

  • Place pancake mix into a medium bowl, and stir in apple cider. Apple cider may be adjusted to achieve the desired thickness. Stir in cinnamon, nutmeg, brown sugar and vanilla. Mix in walnuts if using.
  • Heat a large skillet over medium heat, and spray with cooking spray. Use about 1/4 cup of batter per pancake. Cook 3 to 4 pancakes at a time. Turn over when bubbles appear in the center, and cook until golden on the other side. Serve immediately with pats of butter and maple syrup.

A wonderfully delicious breakfast! With sweet bits of apple and a tangy apple cider syrup topping, these are not your momma's pancakes! The syrup is a little time-consuming to make, but well worth it!

2 cups pancake mix (such as Hungry Jack® Buttermilk)
1 ½ cups water
2 small apples - peeled, cored, and diced
2 cups white sugar
1 quart apple cider

Steps:

  • Combine pancake mix and water in a large bowl; mix well. Stir in diced apples. Place batter in the refrigerator to rest, about 15 minutes.
  • Heat sugar in a large saucepan over medium heat, stirring constantly, until it melts into a thick amber-colored liquid, about 5 minutes. Reduce heat to low. Add apple cider slowly to the saucepan, stirring constantly, until mixture is the consistency of syrup, about 5 minutes. Remove from heat and cover.
  • Heat a lightly greased skillet over medium-high heat. Drop a scant 1/4 cup of batter into the skillet and cook until bubbles form and the edges are dry, 1 to 2 minutes. Flip and cook until golden brown on the other side, 1 to 2 minutes. Repeat with remaining batter. Serve with cider syrup.

1/2 cup quick-cooking oatmeal
1 1/2 cups boiling water
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1 large egg, beaten
1 cup milk
1 large apple, peeled,cored,and coarsely chopped
1/4 cup chopped walnuts
3 tablespoons melted butter

Steps:

  • Add the oatmeal to a small bowl; pour boiling water over the oatmeal and let set for 5 minutes; do not drain.
  • In a big mixing bowl, add the flour, baking powder, salt, sugar, and cinnamon; stir to combine.
  • Add in the oatmeal, egg, milk, apple, nuts, and melted butter; stir to mix.
  • Heat a large non-stick griddle or skillet over medium-high heat.
  • Lightly brush with vegetable oil.
  • Pour 1/4 cup batter onto griddle for each pancake.

1 cup flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 egg, beaten
2 tablespoons butter, melted and cooled
2 tablespoons apple butter
1/3 cup milk
1/3 cup apple cider
1 apple, peeled and chopped
1 tablespoon butter
1 dash cinnamon
1 pinch salt
1/4 cup apple cider
1/4 cup maple syrup

Steps:

  • PANCAKES:.
  • Preheat a griddle to 375 degrees, or a skillet on the stove top over medium-high heat. In a large bowl combine flour, sugar, baking powder, baking soda, and salt then make a well into the center. Add egg, butter, apple butter, milk, and apple cider into the center then whisk everything to combine until there are no lumps.
  • Spray the griddle with nonstick spray then pour pancake batter with 1/4 cup measuring cup. Cook until bubbles appear on the surface then flip and cook until golden brown on the other side.
  • SYRUP:.
  • Meanwhile, in a small saucepan over medium heat, melt butter then add apple, cinnamon, and salt, and saute until apple is barely tender, 4-5 minutes. Add apple cider and maple syrup then turn heat up to bring mixture to a boil. Once boiling, turn heat back down to medium then simmer until slightly thickened, about 5 minutes. Let cool slightly then drizzle over pancakes.
